In general I trust the gluten free label, but obviously there are exceptions. I always read labels until I am familiar with a particular brand. The only companies I never read labels for are Great Value, Glutino, Ener-G, and Kinnikinnick. There are also certain "gluten free" items I won't touch, these include Bob's Red Mill and Amy's. Not sticking to the diet if they are diagnosed Celiac would be considered child abuse and she could be put in jail and lose her kids. The doctor may very well report her especially since the kids were thriving while they lived with you. You are right in thinking that it cannot be cured. It is an autoimmune reaction that causes your body to attack your intestinal villi upon consumption of gluten. There is no way to prevent this immune system reaction other than remaining gluten free for life. Once diagnosed properly with Celiac Disease, there is no recovery or remission, it is there to stay... -
Hey Nancy, now we meet over here, huh?... I agree... There are a fair amount of the intellectual type on this message board. A far greater number than many of the other message boards I have taken part in. Perhaps it has to do with Celiac having a correlation with IQ. I'd sooner think though that it has more to do with the effect of IQ on your position...

I second the recommendation on Enterolab testing. If nothing else, it will put your mind at ease as far as other intolerances. Have you eliminated any gluten in lotion, shampoo, soap, hair care products, chap stick, and girlfriend's lipstick (if he's that old)? Just because there isn't wheat listed on the label doesn't mean it's gluten free. You'll need to... -

Oh, yum... I've never even thought of that. What a great idea! Make sure you add spices like ginger, allspice, and cinnamon, otherwise it might not taste like you're imagining it will. I might have to try this tonight.

He said it was very good, similar in taste to Bard's Tale. He thought that it may be slightly lighter than Bard's Tale, but definitely heavier than the New Grist. All in... -
Welcome! As everyone else said, it gets easier over time. Now it's second nature to me. Gluten-filled goodies don't even look good to me anymore. I'd much prefer to eat my fresh baked gluten-free treats. I would definitely recommend getting yourself a few gluten free cookbooks to start out... Don't let a few failed recipes scare you off. I personally recommend...

You should be fine cutting the recipe in half so long as the ingredients are straight up and easy to halve such as 1 cup = 1/2 cup or 2/3 cup = 1/3 cup and you don't have to cut 1 egg in half (that can be tricky).

Being gluten free can make you more sensitive. Her immune system likely had time to recooperate while she was gluten free and now that she ate gluten again, her immune system has kicked into hyperdrive trying to rid itself of the gluten. Her behavoir can absolutely be caused by gluten. If she tested positive, she really needs to remain gluten free for life... -

I've never used egg in my meatloaf either, even pre-gluten-free. I use beef, worchestershire (Lea & Perrins is gluten free in the US), ketchup, spices, and Betty Crocker Potato Buds. The potato buds and the ketchup keep it stuck together. -

I swear by Kinnikinnick's flours... I have gotten sick from Bob's Red Mill products and Pamela's products. I'm pretty careful now. Kinnikinnick products are processed in a gluten free environment.
