That doesn't mean that there is no damage, and continued ingestion of gluten almost certainly will cause further damage, if not to the villi, than to other parts of the body, including neurological damage. My son had two cardiac procedures, one at a regular hospital, where the doctor made sure I could holdand nurse my son as soon as he came up from the recovery room. I found some wonderful food-grade square plastic containers at Sam's Club--I think they also sell them at Costco--that hold about 20 cups of flour and stack really well.   16. Tapioca flour and tapioca starch are the same thing, and they are FAR cheaper at Asian grocery stores! 89 Cents a pound at the Asian groceries in Pittsburgh, but about 3 dollars a pound at the regular grocery store.

Seems to me we could take a gluten-free pizza crust recipe and substitute cornmeal for part of it and get good results...I don't know if it'll work, but this is the pizza crust I've been making recently, and it's quite good, though rather sticky--maybe adding cornmeal would help! Taeweave, I am not familiar with the system in Texas, but see if you can talk to someone who already had a child with special needs (look for support groups in your area) and they can tell you what might exist outside the school system. Here in PA, the state picks up the bill for extra help (they call it "wraparound" here) for kids on the autistic spectrum...
