  1. PENGUIN'S RANCH CHICKEN STRIPS 2-4 bonless skinless chicken breasts, cut into strips 1 c. mashed potato flakes (I use idahoan premium) (Potato Buds work marvelously well, too) 1/2 c. parmesan cheese* 1-2 eggs, beaten (you can get away with only one egg with 2 breasts) 4 tbsp melted butter (or margerine) HV Ranch mock up: 3 tbsp Buttermilk powder...
  2. I'm really late on this discussion, aren't I? I used to joke that I couldn't go jogging when I was breastfeeding 'cause I'd give myself a black eye (or two).
  3. Rinne, if the girl is 16, can you approach HER and not her parents? GIve her lots of celiac.com info, and most importantly, tell her YOU BELIEVE HER and that you know what she is going through. Does she have a website on Lame Advertisement? Maybe there's a way you can email her? And you can ask her to tell her parents that SHE came across these things...
  4. She's tasting!!! What wonderful news! Thanks for the update.
  5. Nini, I love your avatar! I still say that many food manufacturers are NOT complying with this law. Today I happened to go to a different Giant Eagle grocery store than I usually go to. I have bought tuna salad from the deli counter at my usual store, and they have shown me the ingredients, which are gluten free (they make it themselves at the...
  6. "Stocking A Gluten-Free Pantry Gluten is hidden in many unsuspecting foods such as licorice, soy sauce, malt vinegar, some flavorings, most processed foods, self-basting turkeys, some cold cuts, and many prepared stocks and soups. Vinegars and alcohols that are properly distilled should not contain any harmful gluten. However, if additives have been added...
  7. I thought modified food starch is wheat in the USA unless it specifies "from corn" in parentheses. I think that is your culprit.
  8. Evie, I hope you feel better soon--sending you prayers and strength to fight the c diff!
  9. I like Roben Ryberg's cookbook, too. If you can find super-fine rice flour, it does make a big diffeence. Authentic Foods sells a very very expensive version, but you can get exactly the same thing at the Asian markets in little one-pound plastic bags for 69 cents.
  10. Hi, Shalia, I got a lot of inspiration from Lisa Lewis' SPecial DIets for Special Kids---not so much the recipes, but just how she worked with her autistic son. Pardon me if I already said this to you on another thread, I can't remember what I've said to whom any more! I don't know what it means, but my son responded really, really well to the gluten...
  11. I had trougble finding millet flour, which is specified in Annalise ROberts' GLuten-Free Baking Classics, so I bought plain millet and ground it up in my coffee grinder. It worked beautifully!
  12. Did you check the salad dressing and french onion dip ingredients? Sometimes dressings and dips are thickened with wheat starch or modified food starch (which is from wheat unless otherwise specified). Another possiblity is that you may be casein-intolerant or lactose-intolerant. Some people on this board are sensitive to corn. Are you using real...
  13. Wow, nice work! One thing really jumped out at me: You wrote, "You appear healthy." This seems to imply that there is no chance that somebody might actually BE healthy. That's kind of a turn-off--you've left no room for the possibility that somebody reading your flow chart might NOT have celiac. I also thought you might like to add it takes an average...
  14. Laura, what a beautiful photo! And your post brought tears to my eyes, too...
  15. Don't know if this will help as it is quite a long shot, but would she sleep better either sleeping with you or with a dog or cat (if she is not allergic)? Just wondering, becasue my oldest had sleep issues and he has a lot of overlap with the ADD stuff, and he slept just fine if he had a warm body. Didn't matter whose warm body, the cat or the neighbor...
  16. Thanks, Chelsea. I hope everything works out well for you, and that one way or another, your pain and discomfort disappear and that you don't need meds, etc. Sending prayers and good energy your way!

    ARCHIVED Save Me!

Seems to me you you would either need to avoid ALL dairy--or none. Or am I missing something?
  18. Premature Post!!! Can you have carbonated water? We make our own sodas for special occasions with grape or orange juice , or lemonade with a squeeze of lime, mixed with carbonated water--yum! No caffeine, no refined sugar, no preservatives, no chemicals. Would that tame your craving? Question about the Lyme and mercury--if Lyme binds to mercury...
  19. I'm sorry, I didn't know that. I wonder why they make it differently?
  20. that's the funniest thing I ever heard!!!!! Seriously, thanks for posting this. I was wondering why I only seem to have "good Poop days" on days I eat salad (and darn it, sometimes I just get tired of eating salads! )
  21. Hi, welcome to the board! Lea & Perrins Worcestershire sauce IS gluten-free--no need to find a substitute! It's one of the major brands, and comes in a dark brown bottle that's wrapped all over with tan paper.
  22. Nah, you'd think I'd have a better handle on all this by now!!!!!! Here are my results: Tissue Transglutam AB IGA-- 4 (less than 20 is negative) Gliadin AB (IGG) 64 (weak positive 20-30, positive > 30) Gliadin AB (IGA) 9 (less than 20 is negative) The biopsy of my arm was also negative...
  23. Mostly, I feel pretty good! This week, I've had a lot of loose stools, but no C, and I was assuming that the loose stools were from diving headfirst into the leftover Hallowe'en candy (yes, I should know better!). Then there's Ursula's thread about Wilson's Syndrome (check it out if you haven't yet)...honestly, my head is spinning even without brain...
