  1. I like to paint and draw (watercolor, pencil, colored pencil and ink). Other artsie names were already taken so I ended up with this one. I kind of like it. I am mildly dyslexic and have never been a good speller. I named my son Jeffrey (or was that Jeffery) and for the life of me I can't be absolutely certain how I spelled it for his birth certificate...
  2. Pamela's bread mixes are pretty good. I think the frozen, premade breads are terrible and I don't blame your son one bit for rejecting them. They are like eating cardboard. (my opnion only - others like them - so it's really a matter of personal taste) With gluten-free bread, hands-on is the best. You might want to visit the recipe forum here for many...
  3. If I hadn't found this board I wouldn't have known about all the hidden gluten and wouldn't have been successful in trying to stick to the diet. It helped me tremendously to read other's journey into this G.F. world. I also am now more serious about my other food sensitivities and because of this am well on my way to getting well. And, it's been a great...
  4. Cassava is another root that is used like potato. You can get it in some large grocery stores in the "exotic" section. I haven't fixed it my self, but once when I was in Venezuala they served it mashed and it was good. You could even buy "chips" made from sliced cassava, but I didn't buy them. That was a very interesting site.
  5. There are two books with similar soup recipes in them. I started with The Maker’s Diet and when that failed (not from the diet but from the casein/gluten/corn in the foods and the supplements, but at the time I didn’t know this) I tried the Guts & Glory diet, which failed eventually for the same reason. Restoring Your Digestive Health: How the Gut...
  6. Well.... it'll have to be from memory, and I usually make only a half a recipe since my pan isn't big enough for a whole chicken, etc. I often freeze in 1-cup portions that I just can reheat slowly in a small pan for a quick meal. It's nice to have these handy. (Now that I'm writing this, I think I'll make some more soup this week). ------------------...
  7. Looks like its a fairly healthy diet and would be gluten-free (except for the blue cheese), so if a person's intestinal problems were really undiagnosed celiac, then I could see how this diet would turn that around. There were some comments on the site, though, from people saying that the diet would not be good for Chron's, etc. I followed a similar diet...
  8. Thank you SO MUCH for posting these recipes. I haven't had a chance to read through them all, but am going to try the cashew cheese recipe very soon. And the mayonaise, too. I have a question (if you've already mentioned this, sorrry) Does the cashew cheese melt? Do you put it on a pizza before cooking or afterwards (in other words, does it melt...
  9. Looks like a great site, Lee. Thanks. I'll have to study it later. And, from what I saw in the recipe list, there should be something there for everyone - and their food allergies!
  10. If eating raw hurts, don't. For years I couldn't eat much raw foods (I don't eat raw meat) and would get terrible stomach pains for days after eating "too much" which would be more than a dinner salad. I guess there's been some healing since eliminating gluten and other food allergens, and now I can eat a lot more raw. Still, the ratio has never been...
  11. I just remembered that an ingredient in supplements that gave me problems with burning was calcium stearate (magnesium stearate is okay for me). I'd buy supplements only to have to throw them away after taking for a while because of this until I figured out what the offending ingredient was.
  12. It's the starch from potatoes - it is NOT ground up potatoes, that's potato flour. I have found it in the Kosher section of the grocery store, and, of course, in health-food stores.
  13. Yes, I have had that problem. It can really get bad. It's like a chemical burn and there have been times when the tissues have bled. One thing that would pass through and burn badly on the way out was any kind of acidopholis type probiotic. I was really puzzled about it and absolutely could NOT take the stuff. Digestive enzymes did the same thing to me...
  14. I tried the Ph Balance diet. The author advocates working up to eating 70% raw. I was never able to reach that level because of stomach pain (which is now somewhat resolved). BUT, I do contniue to eat a lot more raw vegetables than I did before trying this diet, and I like it. When I eat more raw vegetables I feel better. Maybe I'll give it a go again.
  15. Could you be a bit more specific about what you mean regarding this site. I went there but didn't understand what you were referring to.
  16. I used to get very sick every time I got a cold. It would travel down my throat (giving me a severe sore throat and then laryngitis (sp?) - then go into my bronchial tubes and I'd get bronchitis. I'd be sick and coughing for at least two weeks, sometimes even longer. Over a year ago (before going gluten-free) I discovered a way to treat a virus that greately...
  17. Thank you so much for the egg replacer recipes and link to the pizza crust (looks good). Although I can't have cheese and so my pizza would be rather dull, one can use the crust for other combinations to use as a sort of open-faced sandwich and take-along snacks.
  18. I for one appreciate the work the moderators do to keep this board somewhat sane - which given the diversity of personalities and quirks resulting from gluten and other toxins, is a huge job. My initial impression of Tailz was that she was obsessed - which is above passionate - and was "pushing" her own agenda. I quickly got to the point where I would...
  19. I've heard of using flax seeds, but don't know how to prepare them for this. What do you do and what is the amount per egg? I'm allergic to corn, and Ener-g egg replacer has dextrose or some other corn-based ingredient (I've thrown away the box and don't remember exactly what it was.)
  20. If any of you who are allergic to eggs have come up with a decent recipe for bread or rolls or pizza crust that does not use eggs, I would be very glad to know abouti t. What I've tried so far has been less than satisfactory - hard thin "hockey pucks" that are gooey in the middle. Yuck!
  21. Yes, I did. Glad you like it.
  22. It is rather overwhelming at first, but it gets easier as you learn more. Actually, regular cooking for meals isn't much different gluten-free. Meat, vegetables, potatoes, rice..... they are all naturally gluten-free (just don't add wheat flour). Fruit makes for nice desserts and they are gluten free. It's the breads that are more of a challenge, but there...
  23. Sounds like you've been given several suggestions that might work for you. I don't have DH, so can't be of help there. But, I do suffer from itchy skin (not as bad as yours, though). I am finding that it is not from gluten, but most likely from some other food allergy. I thought it was corn, and actually, it's less itchy now that I'm off all corn derivatives...
  24. What a wonderful service that will be to those in your community. I sure hope you're able to get the contract.
  25. Perhaps I didn't write my response in a way that relayed what I really meant. Their wording would be a red flag - the way it's worded would indicate (a better word than "say") to the discerning celiac that the product may not be completely gluten free even though the ingredients when first put into the product were from a gluten-free source. One has...
