I mostly miss the convenience of eating regular food and being able to eat at restaurants. I have a busy schedule, so it's not always easy to go home and prepare myself something. I also miss baking, although I'm learning new gluten-free recipes. I've been gluten-free for 4 months, so I have found some new things to eat and am getting into a routine. I've discovered grass fed beef and butter and coconut oil. I'm still learning to like veggies more. 

 "Most of all this Christmas I'm going to miss my mom's homemade hot chocolate. It has no gluten...but it's made with milk and the chocolate has soy in it."

I miss good hot cocoa, too. I recently discovered a Pinterest recipe for making your own chocolate bars with organic cocoa and coconut oil. I haven't tried it yet, but I'd like to, since most of the chocolate I have found has soy in it, which I've decided I also need to avoid. Maybe coconut or almond milk could replace the dairy- I may try giving that up, too.

Enjoy Life chocolate is great and free of all major allergens. It's so good. Chocolate is my favorite food group. ..I don't want to have to give it up!!

i did mix it, but i get free and loose with my measurements when it comes to flour lolz (1/4 cup?  close enough)  as long as i end up with the total amount and all flours are included, i am good!  lately, i have been using king arthur a.p. and my friend swears by domata so i picked up a sack of that to try again.  she makes brownies with them that are yum-o :)

 

Ok. The flour mix I have is very similar so I might give it a try with that and see how it goes.  Thanks.

gluten-free brownies are one treat that I find is usually better than the "glutenous" variety. Brownies are one gluten-free dessert that I can always bring that no one will turn their noses up at.

I miss good ol fashioned pizza! Or just picking up something and buying it with out having to search for hidden gluten, Corn, Or soy ..... I have tried making breads and buying breads but havn't found anything I like as of yet..... Making breads most of them have so much stuff in them, I don't have and it is pricy to buy all that stuff So I just don't eat any bread.

Christmas time is when my grandma makes Mexican food.. homemade flour tortillas... I miss those. Nothing compares to fresh flour tortillas made with gluten. I have found no good substitute that works like a tortilla should. Thankfully I am a tear and scoop tortilla eater so I don't wrap burritos very often.. but the ones I have tried all tear when you try to roll them! Boo!!

 

I miss dairy, I miss eggs. I haven't found any good breakfast that is quick and nutritious that compares to eggs or Greek yogurt. I miss protein powder. The vegan ones all give me tummy aches too.. not sure what the issue is there but I had to give it up for the time being ( I have colitis too - so these other intolerances are from that).

 

I have made a good Thai red curry at home that I really like... but I have been in a rut when it comes to food lately. Everything triggers my colitis.

I haven't tried gluten-free tortillas yet, but I'm wondering if you popped them in the microwave for a few seconds. That MIGHT make them roll more easily without tearing.

 

I always heat them up either in the microwave or on a skillet. The best tortilla that has come close to roll well is La Tortilla Factory. But even then I had tearing once it cooled down while eating.

I have a girlfriend who steams tortillas before rolling and it works beautifully. I haven't done it myself - too lazy.

      So I've been dealing with chasing the name celiac because of my body actively dealing with health issues related to celiac though not eating. Diagnosed in 1994 before foods eliminated from diet. After 25 years with former pcp I googled celiac specialist and she wasn't because of what ive been through. I wanted my results to be sent to my pcp but nothing was sent.I have email copies.I did one zoom call with np with team member from celiac specialist in Nov 2025 and she asked me why I wanted to know why I wanted the celiac diagnosis so bad, I sad I don't, its my life and I need revalidaion because its affecting me.KB stated well it shows you are.I asked then why am I going through all this.I was labeled unruly. Its been a celiac circus and medical has caused anxiety and depression no fault to my own other than being born with bad genetics. How is it legal for medical professionals to gaslight patients that are with an ailment coming for help to be downplayed? KB put in my records that she personally spent 120min with me and I think the zoom call was discussing celiac 80 min ONE ZOOM call.SHE is responsible for not explaining to my pcp about celiac disease am I right?

      I've noticed with my age and menopause my smell for bread gives me severe migraines and I know this.Its alarming that there are all these fabulous bakeries, sandwich places pizza places popping up in confined areas.Just the other day I suffered a migraine after I got done with my mri when a guy with a brown paper bag walk in front of me and I smelled that fresh dough bread with tuna, I got a migraine when we got home.I hate im that sensitive. Its alarming these places are popping up in airports as well.I just saw on the news that the airport ( can't remember which  one)was going to have a fabulous smelling bakery. Not for sensitive celiacs, this can alter their health during their travel which isn't safe. More awareness really NEEDS to be promoted, so much more than just a food consumption!FYI I did write to Stanislaus to let them know my thoughts on the medical field not knowing much about celiac and how it affects one.I also did message my gi the 3 specialist names that was given on previous post on questions on celiac. I pray its not on deaf door.

      I used to be able to get the Rivera yougut i havent been able to get it lately. I like getting it did say it did say gluten free. I just looking for a good yogurt that gluten free that i can add some fruit and nuts to any suggestion would be helpful  thanks
