Sick all the time

I was diagnosed with celiac disease when I was about 16, and now I'm 23. In addition, I also do not eat dairy, eggs, corn or beans due to allergies and sensitivities. I have IBS that varies between C and D, although I'm not sure what triggers what symptom (I avoid all of my known triggers). I never 'cheat' and I rarely eat anything that I haven't prepared myself (I live alone so no cross contamination). However, I am sick almost every single day. I am either nauseous or have severe stomach pain, sometimes both, and I am constantly bloated to the point of looking pregnant. Recently the pain has been so bad that I can't sleep, and I have been losing my appetite. I am also tired all the time. I have no idea what is causing this. I eat buckwheat with protein powder and fruit for breakfast, salad for lunch, grilled vegetables with fish for dinner, and a rice cake with almond butter after I work out. I have cut out each of these things at some point, but my symptoms have not improved. They are only getting worse over time. My symptoms don't hit at the same time every day, and they are not the exact same every day, so I don't know what is causing it. Has anyone else ever experienced this, or know what could be making me sick? I have been to countless doctors both alternative and western, as well as gastroenterologists, but have found no relief. Please help if you can.

There is the rare chance of it being Refractory Celiac Disease, but I think it might be more of a issue like crohns or Ulcerative Colitis. For a couple of years after going gluten-free I found that fruits, sugar, grains, were making me bloat, distend, and have bloody stool. I later found via a colon scope that I had Ulcerative Colitis and those were my triggers so I went to a almost keto version of a high fat/protein low carb paleo diet and resolved most of it.

What type of protein powder are you taking? If a vegan version is it a blend like orgain etc with gums like xantham and added in probioitics etc? This could be a issue as many gain intolerance to them. A more pure blend of protein like plain pea (being a legume can cause issues) or Pumpkin Seed protein by either Jarrow or Julian Bakery might be easier on the stomach.

Other thoughts, SIBO, or Candida are common issues with celiac disease especially if you eat processed or high carb/starch foods.

Have you gotten a follow up test to see if your antibodies have come down? I would check that first to see if your celiac is still flaring. A follow up of both scopes to check for other issues is also in order. I would like to recommend that you aslo see about having a vitamin/nutrient panel down and see if you low in anything. Those of us with this disease will often have issues with Magnesium, the whole B vitamin spectrum, vitamin D etc.

I was thinking refractory as well and it's turning out to not be so rare as was previously assumed.

You might also look at a experimenting with a ketogenic diet which would essentially eliminate starches and most of the sugar in your diet. If you are suffering candida (yeast) overgrowth it likely would really help with that. But with no eggs in your diet going keto would be a challenge.

      Thank you very much for your response. Since I got this advice I called Pepsid manufacturer and they could not give a definite answer. Basically,  there is no final testing and they do not guarantee anything. So I went and got farmotidine from Wagmans that was marked gluten-free and also our pediatrician gave us a prescription for farmotidine that was also gluten-free. So there are other options there thankfully. In case someone will come across of this dilemma.

When i was diagnosed there was zero support and few dieticians and Dr understood celiac disease.  I typically guide a newly diagnosed celiac to a whole food diet to easily transition to the gluten free lifestyle

      Your gluten-free journey sounds like a lot of trial and error—especially working in a deli where gluten exposure is constant! The eye-watering issue could be an airborne gluten sensitivity (like flour dust irritating your eyes) or even a mild wheat allergy, since you’re around it daily. A daily antihistamine (like Claritin or Zyrtec) might help if it’s allergy-related, but avoiding airborne gluten as much as possible (masking, washing hands/face often) is key. It’s great you’re tracking triggers—high-fiber foods and certain gluten-free substitutes (like those tortillas or PB pretzels) can sometimes cause similar symptoms due to additives or digestive adjustments. For travel, pack safe snacks (protein bars, nuts) and research gluten-free translation cards for Aruba. On flights, opt for packaged gluten-free meals or eat beforehand. Many gluten-free foods and baking mixes contain xanthan gum or other gums like guar gum. Although they are both gluten-free, they may cause IBS-type issues in some people with celiac disease or gluten sensitivity:   You’re doing all the right prep—trust your research and enjoy your trips!
