I am looking for comfort foods: Mac and Cheese, Pizza, and Hamburgers.

I am seriously in need of food comfort and am finding it VERY hard to get comfort on this diet.

I had the very same question for my newly diagnosed celiac son. I wrote an email to Connie Sarros "Ask the Cook". Here is a copy of our correspondence:

I have a newly diagnosed celiac son who loves Kraft Mac & Cheese. I was looking at the ingredients on the cheese mix and there doesn't appear to be gluten in the cheese sauce packet. My question is this. If I am able to verify the ingredients in the cheese sauce mix don't contain gluten, would I be able safely use the packet with my own gluten free noodles? I guess my concern is that the packet is packed in with the wheat noodles; but it appears to be impermeable. Any thoughts? Nothing compares to Kraft Mac & Cheese!

Good News! The Kraft cheese packet IS gluten-free, and yes, boil gluten-free noodles and use the cheese packet! Enjoy!

Kraft now sells their powdered cheese for the Mac and Cheese in a parmesan cheese style container... in fact, just last night I made Tinkyada elbow noodles with the cheese sauce made from the Kraft cheese powder, just add butter and milk just like the Kraft boxes... I have tons left over and it's even better reheated the next day!

I would be nervous about using the packet out of the Kraft box of mac and cheese because of being packed in all the gluten noodles and it's all over the packet... So, get the canister of their powdered cheese! I found it at the Super Walmart and at Ingles grocery store.

When I'm craving a hamburger, I don't like any of the buns I've come across, but I do like a burger on a biscuit made from 1-2-3 Gluten Free's Southern Glory Biscuit mix...

Also, if you're looking for quick Amy's Organic has rice pasta mac and cheese...it's really really cheesy, but good in a pinch when I need comfort.

if it's mixed with enough sauce, when I reheat it I haven't had any problems with it getting gross. The pasta's that do get gross when reheated are the Mrs. Leepers corn pastas... ick... those just fall apart and get all mushy.

When I have leftovers I just freeze them, then when I want something, I pop the lid off and microwave for several minutes until done... As long as there is enough sauce mixed with the noodles when I freeze them, I've not had a problem with them being gross.

REALY??? Cool! GOnna have to look for that. Will it be over with cheese, or over by the Mac=n=Cheese you think?

I found it in the super WalMart on the aisle with the mac and cheeses, but it was in a section for things like Velveeta and Parmesan cheeses... the shelf stable variety...

I made my own in a crock pot. It tasted amazing. I just found a recipie on line and then just used the tinkyada noodles and it was also fine to reheat. I had it at work all week :D

I use the Tinkyada Elbow noodles and take the cheese packet from the Kraft Mac n' Cheese all the time. Tastes perfect.. It is definately one of my favorite comfort foods.

If you're in NY Risotteria has incredible pizza. Looking forward to trying Mama's pizza too. Especially after the incredible chicken parmigiana I had there yesterday.

I also like Glutino bagels toasted and then some chunky peanut butter or vegetable cream cheese make good comfort food. Atleast for me. It's not exactly a NY bagel, but I'll take what I can get.

Heartland also has a good mac & cheese........ It makes a nice amount, enough for two kids and one adult for us.......

I can't find the Kraft powdered cheese in my area..... I wish and wish so maybe someday a store will carry it here in my glutened world......

there is also road's end organics mac and chreese which is gluten free and vegan!!!

they make regular flavor and alfredo flavor.

also they make a "cheese" dip that is gluten free and vegan!!!

all of it is very yummy!!

Amy's has frozen Mac & Cheese and Pizza. You can find them at Wegman's or Whole Foods. Also, Foods by George has a very good pizza. They are based in Mahwah, NJ and I think they ship.

I've also seen gluten-free pizza crusts in WHole Foods or even SHop Rite. You can make your own pizza with the crust.

I read this thread and was so excited. I loved Kraft Mac and Cheese and still had a box in the cabinet. I carefully took out the cheese packet and washed my hands making sure I didn't touch my food after touching the outside of the packet that was next to the pasta. I made up a patch of my favorite rice pasta and put the two together.

5 bites in my stomach started burning, but I told myself I was crazy and kept eating. It tasted really go going on, but the coming out and coming out and coming out part hasn't been pleasant. Maybe other people have made this with success, and I don't blame them for suggesting it, but I wouldn't recommend trying it. I'll be paying for it for the next few days.

I am looking forward to finding the cheese powder in a safe container, but I won't try the box mix cheese again.

YAY! I thought I was the only person on Earth who actually likes chReese!!! It's good huh? I make it with rice milk (I add about twice as much as it says to use) and Earth Balance and it is awesome :)

It's in a skinny can, I haven't seen it in the big cans... I usually get my parmesan in the smaller size cans too though, so it didn't seem like an odd size to me.

I just wanted to share my version of mac and Cheese! I make homemade! I always liked the real stuff best anyway! I make the rice pasta and put it in a casserole dish. Then I make a baschemel sauce using red Mills all purpose flour and butter, then add the milk and grated cheddar cheese.....bake it till golden brown and bubbly!!!!Tastes just like my grandma's! And it rehated great-even my kids (who are of course mac and cheese coniseurs) loved it!

yep, just like the powder in the boxes... I can't tell you an exact measurement, I just sortof eyeball it till it looks and tastes right.

Talking about comfort food... I made chicken and dumplings last night that were wonderful!!!! I'm from the south and dumplings are something I've really missed. YUM!

Now that sounds good! Maybe I will try my hand at some chicken and dumplins tonight.....I was trying to come up with something for dinner! I 'm in the south and I love dumplins!!!!!!!

      Hello everyone. I am Elena and am 38 years old. I suspect I have a gluten intolerance even if my celiac panel is ok. I have the following symptoms : facial flushing, Red dots not bumps în face, bloating abdominal distension, hair loss, depression anxiety even with meds and even bipolar. Fatigue extreme to the point of not being able to work. All of these after I eat gluten. Could I have non celiac gluten sensitivity? Thanks anyone else with these symptoms?

      Hi Everyone,  I do appreciate your replies to my original post.   Here is where I am now in this journey.  I am currently seeing a Naturopath.  One thing I did not post before is that I take Esomeprazole for GERD.  My Naturopath believes that the decrease in the gastric acid has allowed the yeast to grow.    She has put me on some digestive enzymes.  She also put me on Zinc, Selenium, B 12, as she felt that I was not absorbing my vitamins. I am about 5 weeks into this treatment, and I am feeling better. I did not have any trouble taking the Fluconazole.

      Hi @JulieRe.  I just found your post.  It seems that I am also experiencing thrush, and my doctor believes that I have fungal overgrowth in my gut, which is most likely candida.  I'm seeing my GI doctor next week, so I'm hoping she can diagnose and confirm this and then give me an antifungal treatment.  In the meantime, I have been working with a functional medicine doctor, doing a candida cleanse and taking vitamins. It's already helping to make me feel better (with some ups and downs, of course), so I do think the yeast is definitely a problem for me on top of my celiac disease and I'm hoping my GI doctor can look into this a bit further.  So, how about you?  Did the candida come back, or is it still gone following your fluconazole treatment?  Also, was it awful to take fluconazole?  I understand that taking an antifungal can cause a reaction that sometimes makes people feel sick while they're taking it.  I hope you're doing better still !
