I hear you! Gluten free baking is like alchemy, there are so many weird ingredients. You're probably right to stick with simple foods until you get things figured out.

About the lime in your tortillas-- are you sure it is the fruit? It might actually be the mineral kind. That is what is used to treat corn for hominy & grits. It's related to the stuff you put on the lawn, not the fruit. It actually breaks down the husk of the corn, so it might affect its digestibility. Have you tried eating grits? (If you want to try them I'd go for the whole foods kind, definitely not Quaker!)

You are really lucky to be able to eat the Kinnickinnick....its much better than Ener-G...thats for sure! One of the worst reactions I ever got was from the Glutino flax bread. I think it was just loaded with histamine. :huh: It had dried egg whites, cornstarch and some other things I cant think of right now. I never got an immediate reaction with any breads I've tried except that one. It almost felt anaphylactic. I was hysterical from that incident. My mom remembers it quite well. :ph34r:

Susan...I'm finally gonna do the rock climbing thing. We have a class on Friday...after the class we can climb all we want. I know nothing about this....no experience whatsoever. The Dave will be my partner...dunno if I should feel safe or not. :unsure: He was saying something about they can put some 70 lb. thing on me to even out the weight. :blink: Ummm...no thank you....I dont feel like carrying something that weighs more than my large dog as I'm trying to climb up a rock for the first time in my life. :huh: I may be doing more "clinging" than climbing. :lol:

Rachel - - which Ener-G bread are you eating? I've found only two palatable breads so far - their Light Tapioca and the other, from Trader JOe's - Brown Rice Bread sweetened w/ Fruit Juice (and you have to actually squeeze those and make sure they are very soft - got a couple of bad batches and they were like bricks). I LOVE the Ener-G light tapioca - it is like air-fluff white bread, which, strangly enough I NEVER ate in "real life" (only the gnarliest whole grain breads before *sniff*). Toasted w/ butter and honey and it is a small slice of heaven, really.

Rock climbing :rolleyes: .....the weight, if used, would only be when you BELAY The Dave, not when you're climbing, to anchor you down. Most gyms have a piece of webbing in the floor that you can tie into - I"ve never seen the weights. my former climbing partner-slash-boyfriend was a competetive cyclist, solid muscle, 6'5" and 220 pounds - and I weighed 112. He was not the typical build for a climber but we did very well I was always anchored into rocks/trees, if necessary, and we only climbed in a gym once, and I was tied in. What fun! You'll do fine - - remember - - push off with your legs and rely less on arms - - your arms are going to be more tired from belaying Dave than from climbing - - although climbing really blows out your forearms and you may not be typing much the next day.....ohhhhhhhhhhhhh I miss it so much (the outdoor stuff)!

I agree with your thoughts on bringing this thread back to the scientific, supporting thread is was "in the old days". I too have been guilty...I do plan on going back as I have time to delete the village job lists. Those probably take up 10-20 pages by themselves.

I don't suffer from as much as most of you but like to be here to learn and support everyone. My stuff is in my sig.

I've contributed nothing but trivial, silly observations and stories, and I am sorry.

I know nothing that would be of any help to anyone, but I have learned a great deal here, information helpful to me and, more importantly, to my family. For that you have my undying gratitude.

Therefore, in the future, I'll only pop in occasionally to glean information, and to see how everyone is doing.

Do any of you guys ever eat polenta? It seems really versitile and easy . I have wanted to try it for a while but was avoiding corn. Lately I am back to eating it though- with fingers crossed - no bad reaction. I think I might try polenta and see what I can do withit.

Oh rachel I know you're like me and have found it hard to find a chip or craxker you can tolereate I found trhese blue corn chips they are backed and I have tried them a few times- the first time I thought tey were a definite no but then I tried them again and I think they might be a possibility I will post the name later if you are interested.

Those of you who havent eaten bread in a long time will understand the "happy" part...anyone who has tasted Ener-G bread will know why I'm sad about it. :P

Its really too soon to tell if the bread will do me in...of course in typical "Rachel" fashion...I have eaten the whole loaf in less than 48 hours. :ph34r:

There are lots of good gluten free breads but I'm stuck with this one cuz its basically made out of almost nothing.

The Dave and I were talking about french toast last night. Breakfast food used to be my favorite and I loved the restaurants that would have breakfast available 24 hours. Awesome!! Anyways he dosnt know how to make french toast and asked if I'd make it for him sometime...gluten free of course. I told him I'd make his out of real bread and I'll make the gluten-free stuff for myself. No WAY am I gonna make someones first gluten-free meal out of Ener-G bread. :blink: Holy Cow...they would be traumatized by the words "gluten-free" for life! :lol:

I'll make his out of the big texas toast bread....perfect for french toast (what a lucky guy). I'll make mine out of the cardboard stuff that is "labeled" as bread but looks like styrofoam and tastes like anything but bread. :(

Yes, I've had the Ener-G bread, lol. I have a loaf of Food For Life Millet Bread in my freezer...don't have it very often, but I do ocassionally make some french toast with it. It's not horrible, lol.

Definately the mold. If I take the time to make homemade juice or smoothies (and in that case I drink a lot more than comes in those little bottles!!), I have no problem at all. Peanut butter causes the same problem. This is, however, an item I can rotate in ... twice a week and I'm okay. My problem was I was drinking it every day.

Thanks! I'll have to explore this further...I've gotten pretty lazy in avoiding the stuff I should be with the mold thing (except haven't been drinking juice, lol), so quite possibly THAT could be the reason I'm itching so much.

Ener-g was the second bread that I tried--after Food For Life! The combination of those two were just about enough to swear me off bread forever :D

Turns out, I needn't have worried, as I'm sensitive to the main ingredients in all breads! :angry:

Well, I went through the first part of the day yesterday without the intense itching, but was feeling slightly nauseated and lightheaded which I think was probably from being a little dehydrated...my blood pressure is so low normally and when I get a little dehydrated it really dips LOW. It was after dinner that I started to itch badly...had chicken breast, PEAS (I know, I know), an organic corn totilla, a little apple juice (unsweetened) and mineral water, and mango sorbet which I make from frozen organic mango, agave nectar (about 1 tablespoon) and a little stevia (which I haven't had in 2 weeks).

Still waiting for the progluten reactions from yesterday.....my mom forgot about the flour she coats the pot roast with. She said it was just a little and shouldn't hurt us. :o:(

I don't have long reaction/recovery times like alot of you, but do have a reaction now. Talitha's reactions always seem to be delayed. Micah doesn't complain about tummy troubles or anything most of the time. Of course my daughter is very vocal.

OK......back into the back pages......Don't worry, I'll come out again. :P

Anyone remember me having problems with lettuce last week? Lettuce of all things....supposed to be healthy right? Anyways again, in typical "Rachel" fashion....I bought more of it. :o

Guess what...same thing happened...I reacted and felt like my head was about to explode. :(

I *thought* it was the Auxigro but now I'm thinking its sulfites. I re-read my "things that contain sulfites" list and packaged salads or convenience salads contain sulfites. I guess I missed this one before...or maybe I forgot...anyways its causing a histamine response so I'm done with the packaged salads. I stopped eating them awhile back because I was feeling bad all the time but I was trying to add them back in. Oh well....I never ate salads before I got sick so I can do without them now...and frankly I'd rather eat ice cream. :D

Ice cream = weight gain.....I cant get that from a salad. There is a method to my madness. :P

Woah....I hope I dont appear completely idiotic to all the other climbers. :ph34r: I will definately need to watch my diet on this day. I probably need all my brain cells to be functioning if I'm gonna be a successful climber. The Dave is very competitive....so am I. :ph34r: I know this is more of a "team" effort but still....I cannot fail. :rolleyes:

Speaking of histamines. I'm starting my testing for that today. I'm doing a 24 hour urine test and a blood test. I have to save all of my urine from today in a HUGE orange jug. Seriously I dont know why its so big...I probably wont even fill half of it. I'm glad I'm home and doing it on a Sunday. Can you imagine?? What if I had to carry this thing around with me?? :blink:

Tomorrow I'll bring it back to the lab and then they'll draw the blood. I'm so curious about this test. Cant wait to find out. B)

Donna, are you still wondering about histamines?? I remember when you suspected having problems with chicken awhile back. Chicken and all fresh meats contain "amines". The longer they're around before you eat them the more amines they will develop. I try to get the "freshest" meat possible....I eat it within one day. I dont buy the packaged meat from the grocery store anymore because I noticed sometimes I'd react. This was before I found out about the amines. All of the different "amines" can cause histamine reaction. I buy organic chicken fresh from whole foods. If I'm not gonna eat it within a day I'll freeze it.

Also never eat leftovers. It stresses this on the histamine restricted diet....leftovers will have tons of amines.

I think I digest the lettuce fine. Its not a tummy issue really...its more of an "allergic" reaction that occurs right after I eat it.

Polenta=something like cornmeal mush but much thicker, comes in a tube or you can make your own. I tried it was and wasn't impressed but doesn't mean you wouldn't like it, if you can eat it.

Chips.....Rachel, we need to work with you on overeating with one food item. This could be a smidgen of the problem....you find a food you can eat, eat tons of it and then when you have it again you have a reaction. :unsure: I know it must be difficult when you don't have much of a variety right now. Hopefully as you heal and can add a few more foods you will be able to eat some of the others in more moderation thereby allowing more foods into your life again. ;)

:o YIkes on the brown rice. The last couple of weeks I've been eating Lundberg brown rice cakes...two a day. I bet that's one culprit right there!

Yes, I am still wondering about the histamines. I buy all my meats from Whole Foods and generally buy them from the meat counter, but the last couple of weeks I've been buying some of the packaged chicken. Bet that's another culprit. I'm still not sure if chicken is a problem, but it could be. I usually divide and freeze my meats the day I buy them, and lately I've been cooking all the meats for my week day lunches on Saturday or Sunday, then freezing them in individual portions--just taking them out the day I need them.

So is the orange pee jug to test for histamines or is that the blood test? Is that from your doctor at HN? I think I will eventually need to get my bewtocks in there to see them. I bet they would be able to help figure this out in my case. Female Dr. P said she thought they could help me with some of this. I emailed the clinic about food allergy testing and she answered me and corresponded by email for a while during the ampulla of vater adventure, lol. :lol:

Yes the same big orange Jug and everything. The funny thing is when they gave it to me to take home they put it in a bag tha said 24 hour urime specimen and I carried it home not understanding why people kept staring at me. Me and mom are still laughing about it.

So is the orange pee jug to test for histamines or is that the blood test? Is that from your doctor at HN? I think I will eventually need to get my bewtocks in there to see them. I bet they would be able to help figure this out in my case. Female Dr. P said she thought they could help me with some of this. I emailed the clinic about food allergy testing and she answered me and corresponded by email for a while during the ampulla of vater adventure, lol. :lol:

Donna, I always react to the rice cakes.....its a quicker reaction then what I'd get from plain brown rice or brown rice cereal. I've been wondering what it is exactly about the cakes that do me in. From what I've read about it when stuff is heated past the boiling point they develop more amines. When foods ripen or ferment they develop more amines. Really ripe bananas will have alot of amines (even not ripe they are considered high). I'm thinking the way the rice cakes are made they probably are heated and develop more amines that way. Since I'm already overloaded I'll react pretty quickly. If I wasnt overloaded I could probably eat the cakes now and then as long as I dont overdo it and reach my threshhold.

The "orange pee jug" (:lol:) and the bloodtest are both for histamines. I asked the doctor at HN if she could order me the test. She wasnt familiar with it but she looked it up, ordered it and gave me the lab slip. On the lab slip there was a bunch of labs to go to for the test. I picked one on Remmington in Sunnyvale. Just went in on Friday and walked out with a huge orange pee jug. :lol:

Are you doing the test for histamines? Or is the orange jug universal for all sorts of "pee tests"?? :lol:

Its already 12:30 and I havent even gone yet. The first morning one doesnt count....you're not suppossed to "save" that one. My jug is gonna be so not full. :rolleyes:

      Thank you all for your advice and the dermatitis herpetiformis article. The latter made me realise I had stopped taking my antihistamine, which I will restart today. The Dapsone has cleared the rash entirely but I still get quite a bit itching, absolutely nothing to see though. I know its notoriously hard to clear and its still relatively early days for me.  The iodine issue is very interesting. I do eat quite a bit of salt because I have Addison's disease and sodium retention is an issue. I also have autoimmune hypothyroidism, not sure how a low iodine diet would play into that? Because of my Addison's I am totally steroid dependent, I take steroids 4 x daily and cannot mount any defence against inflammation. I need to increase my meds for that. Now that I know what is wrong I can do just that if Im having a bad day. Life is very sweet, just so damn complicated sometimes! Hey ho, onwards. Thank you again for your advice.

      So, essentially all of the nutrition in the food we eat is absorbed through the villous lining of the small bowel. This is the section of the intestinal track that is damaged by celiac disease. This villous lining is composed of billions of finger-like projections that create a huge amount of surface area for absorbing nutrients. For the celiac person, when gluten is consumed, it triggers an autoimmune reaction in this area which, of course, generates inflammation. The antibodies connected with this inflammation is what the celiac blood tests are designed to detect but this inflammation, over time, wears down the finger-like projections of the villous lining. Of course, when this proceeds for an extended period of time, greatly reduces the absorption efficiency of the villous lining and often results in many and various nutrient deficiency-related health issues. Classic examples would be osteoporosis and iron deficiency. But there are many more. Low D3 levels is a well-known celiac-caused nutritional deficiency. So is low B12. All the B vitamins in fact. Magnesium, zinc, etc.  Celiac disease can also cause liver inflammation. You mention elevated ALP levels. Elevated liver enzymes over a period of 13 years was what led to my celiac diagnosis. Within three months of going gluten free my liver enzymes normalized. I had elevated AST and ALT. The development of sensitivities to other food proteins is very common in the celiac population. Most common cross reactive foods are dairy and oats but eggs, soy and corn are also relatively common offenders. Lactose intolerance is also common in the celiac population because of damage to the SB lining.  Eggs when they are scrambled or fried give me a gut ache. But when I poach them, they do not. The steam and heat of poaching causes a hydrolysis process that alters the protein in the egg. They don't bother me in baked goods either so I assume the same process is at work. I bought a plastic poacher on Amazon to make poaching very easy. All this to say that many of the issues you describe could be caused by celiac disease.

      thank you so much for your detailed and extremely helpful reply!! I can say with absolute certainty that the less gluten containing products I've eaten over the past several years, the better I've felt.   I wasn't avoiding gluten, I was avoiding refined grains (and most processed foods) as well as anything that made me feel bad when I ate it. It's the same reason I gave up dairy and eggs- they make me feel ill.  I do have a bit of a sugar addiction lol so a lot of times I wasn't sure if it was the refined grains that I was eating - or the sugar. So from time to time I might have a cookie or something but I've learned how to make wonderful cookies and golden brownies with BEANS!! and no refined sugar - I use date paste instead. Pizza made me so ill- but I thought it was probably the cheese. I gave up pizza and haven't missed it. the one time I tried a slice I felt so bad I knew I'd never touch it again. I stopped eating wheat pasta at least 3 yrs ago- just didn't feel well after eating it. I tried chick pea pasta and a few others and discovered I like the brown rice pasta. I still don't eat a lot of pasta but it's nice for a change when I want something easy. TBH over the years I've wondered sometimes if I might be gluten intolerant but really believed it was not possible for me to have celiac disease. NOW I need to know for sure- because I'm in the middle of a long process of trying to find out why I have a high parathyroid level (NOT the thyroid- but rather the 4 glands that control the calcium balance in your body) I have had a hard time getting my vit D level up, my serum calcium has run on the low side of normal for many years... and now I am losing calcium from my bones and excreting it in my urine (some sort of renal calcium leak) Also have a high ALP since 2014. And now rapidly worsening bone density.  I still do not have a firm diagnosis. Could be secondary HPT (but secondary to what? we need to know) It could be early primary HPT. I am spilling calcium in my urine but is that caused by the high parathyroid hormone or is it the reason my PTH is high>? there are multiple feedback loops for this condition.    so I will keep eating the bread and some wheat germ that does not seem to bother me too much (it hasn't got enough gluten to use just wheat germ)    but I'm curious- if you don't have a strong reaction to a product- like me and wheat germ- does that mean it's ok to eat or is it still causing harm even if you don't have any obvious symptoms? I guess what you are saying about silent celiac makes it likely that you can have no symptoms and still have the harm... but geez! you'd think they'd come up with a way to test for this that didn't require you to consume something that makes you sick! I worry about the complications I've been reading about- different kinds of cancers etc. also wondering- are there degrees of celiac disease?  is there any correlation between symptoms and the amnt of damage to your intestines? I also need a firm diagnosis because I have an identical twin sister ... so if I have celiac, she has it too- or at least the genetic make up for having it. I did have a VERY major stress to my body in 2014-2016 time frame .. lost 50lbs in a short period of time and had severe symptoms from acute protracted withdrawal off an SSRI drug (that I'd been given an unethically high dose of, by a dr who has since lost his license)  Going off the drug was a good thing and in many ways my health improved dramatically- just losing 50lbs was helpful but I also went  off almost a dozen different medications, totally changed my diet and have been doing pretty well except for the past 3-4 yrs when the symptoms related to the parathyroid issue cropped up. It is likely that I had low vit D for some time and that caused me a lot of symptoms. The endo now tells me that low vit D can be caused by celiac disease so I need to know for sure! thank you for all that great and useful information!!!

      Welcome, @catnapt! The most recent guidelines are the daily consumption of a minimum of 10g of gluten (about the amount found in 4-6 slices of wheat bread) for a minimum of two weeks. But if possible stretching that out even more would enhance the chances of getting valid test results. These guidelines are for those who have been eating gluten free for a significant amount of time. It's called the "gluten challenge".  Yes, you can develop celiac disease at any stage of life. There is a genetic component but also a stress trigger that is needed to activate the celiac genes. About 30-40% of the general population possesses the genetic potential to develop celiac disease but only about 1% of the general population actually develop celiac disease. For most with the potential, the triggering stress event doesn't happen. It can be many things but often it is a viral infection. Having said that, it is also the case that many, many people who eventually are diagnosed with celiac disease probably experienced the actual onset years before. Many celiacs are of the "silent" type, meaning that symptoms are largely missing or very minor and get overlooked until damage to the small bowel lining becomes advanced or they develop iron deficiency anemia or some other medical problem associated with celiac disease. Many, many are never diagnosed or are diagnosed later in life because they did not experience classic symptoms. And many physicians are only looking for classic symptoms. We now know that there are over 200 symptoms/medical problems associated with celiac disease but many docs are only looking for things like boating, gas, diarrhea. I certainly understand your concerns about not wanting to damage your body by taking on a gluten challenge. Your other option is to totally commit to gluten free eating and see if your symptoms improve. It can take two years or more for complete healing of the small bowel lining once going gluten free but usually people experience significant improvement well before then. If their is significant improvement in your symptoms when going seriously gluten free, then you likely have your answer. You would either have celiac disease or NCGS (Non Celiac Gluten Sensitivity).

      after several years of issues with a para-gland issue, my endo has decided it's a good idea for me to be tested for celiac disease. I am 70 yrs old and stunned to learn that you can get celiac this late in life. I have just gradually stopped eating most foods that contain gluten over the past several years- they just make me feel ill- although I attributed it to other things like bread spiking blood sugar- or to the things I ate *with* the bread or crackers etc   I went to a party in Nov and ate a LOT of a vegan roast made with vital wheat gluten- as well as stuffing, rolls and pie crust... and OMG I was so sick! the pain, the bloating, the gas, the nausea... I didn't think it would ever end (but it did) and I was ready to go the ER but it finally subsided.   I mentioned this to my endo and now she wants me to be tested for celiac after 2 weeks of being on gluten foods. She has kind of flip flopped on how much gluten I should eat, telling me that if the symptoms are severe I can stop. I am eating 2-3 thin slices of bread per day (or english muffins) and wow- it does make me feel awful. But not as bad as when I ate that massive amnt of vital wheat gluten. so I will continue on if I have to... but what bothers me is - if it IS celiac, it seems stupid for lack of a better word, to intentionally cause more damage to my body... but I am also worried, on the other hand, that this is not a long enough challenge to make the blood work results valid.   can you give me any insight into this please?   thank you
