First, let me introduce myself. My name is Melisa. I am a classically trained chef and am currently studying to become a registered dietician. I am in the process of being tested for celiac, but regardless of the results will be implementing a gluten-free lifestyle immediately following all testing. I am married and have two daughters, ages 3 and 5.

I was wondering if anyone would be interested in me posting daily/weekly gluten-free meal plans, including shopping lists and recipes? Although every recipe would not work for all celiacs, taking into consideration the wide range of other food allergies & intolerances, most would work for many.

If anyone is interested, I would be happy to post them as I create them, I just don't want to waste what little energy I have if nobody is interested.

Personally I would find it interesting. I would think it would really help people who are new to the diet, or people who are starting to get feed up with the diet. I find the different meals that people come up with very interesting.

Oooh!!! My hubby (non-celiac disease) is also a classically trained sous chef (and me with gall bladder problems :( )

He's gotten really good at tweaking recipes to make them low fat for me, along with of course being gluten-free.

Please post! This would be very interesting!

On another message board I post at we have a "What's For Dinner" board that we all post what we are having for dinner and recipes when requested... noone else deals w/the dietary restrictions that I do but I get ideas from them and it sometimes gives me inspiration. Maybe some of you would like to do that too.. ?

interesting, i was going to suggest we start doing a "What Are You Eating Today?" thing with our menus, so everyone can have constant ideas, or can point out if someone felt sick and we can pinpoint it, and whatnot.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
