I am looking to expand our supper menus! I want some yummy chicken and rice recipes. We don't eat alot of veggies, and I am trying to avoid pastas because they just don't appeal to me anymore. We like cheesy things, too. We normally eat some kind of baked chicken, meatloaf, pizza, spaghetti, etc. Not much variety, and my family is getting bored! I NEVER made rice before, but now I like it and I can't find any gluten-free recipes for it!

Please Help!!!

Just this week my daughter asked for rice so I made 5 different kinds and then froze entrees to send home with her. Any of these sound good?

Easy chicken and rice stir fry (made with minute rice, one pan)

Sweet and sour chicken and rice (my favorite)

Honey garlic sauce chicken and rice

and two I never tried before:

Orange- pineapple and chicken stir fry (I had all the ingredients and lots of rice left over to use up )

Spanish Rice (I added beans and ate with chips) ( you can add chicken or beef)

I use Bragg's Liquid Aminos for the soy sauce

Hamburger Stove top Casserole

Make rice adding salt, pepper and garlic powder before you set the rice on low heat.

Brown hamburger with dried onions, salt and pepper

When rice is done add 1/3 grated white cheese and 2/3 grated chedder cheese and cooked hamburger. Stir till cheese melted.

I have also made this receipe with tuna and chicken instead of hamburger.

What does the Bragg's taste like? I've been thinking about buying that and giving it a try-- I'm on a low-sodium diet for my bp, and really miss using soy sauce in cooking!!! (Even low-sodium soy sauce is really high in sodium. Sigh.)

I'd also like the recipes for the stuff you mentioned, if you could post them.

I like to make chicken Parmesan. Lately I just satay chicken breasts seasoned with salt, pepper, garlic and Italian seasoning in some olive oil. Then I place them in a baking dish and cover them with marinara sauce, then add mozzarella and Parmesan cheese.

I made coconut shrimp the other night, they were SOOOO yummy and easy!

2 beaten eggs, I added a couple dashes of red curry sauce from Trader Joes

1 bowl with almond flour

1 bowl with unsweeteded shredded coconut

cooked shrimp, thawed--I used the frozen, precooked, tail removed shrimp from Costco

dip shrimp in egg

roll in almond flour

dip in egg again

roll in coconut

place on cookie sheet

bake 350 for 15 minutes ur until lightly golden brown

Heaven! They were even good cold the next day!

Two of my kids love this and two hate it, so I saute the chicken and then remove 1/2 of it to make a regular chicken stew for the ones who don't like it, then make the rest for the rest of us. One of my sons calls this "Rockin' Chicken".

Moroccan Chicken

8-10 boneless thighs

1 Tbsp. olive oil

1/2 chopped onion

3 cloves chopped garlic

1 small cubed eggplant

3 cups chicken broth (check label to make sure gluten-free)

1 tsp. cinnamon

1 tsp. cumin

1/4 tsp. turmeric (it's ok if it's 20 years old)

1/4 tsp. pepper

1-2 sliced carrots

1 small zucchini or yellow squash

a chopped bell pepper

1 can diced tomatoes

Saute chicken in oil in large pot. Put in all the other ingredients. Bring to a boil and lower heat, simmer for at least an hour until chicken is tender and falling apart. Serve over rice.

Reheats well and makes the house smell great. Substitute vegetables per your liking, though they all cook down into a tasty nothingness.

My mom thinks its better then soy sauce. Its healthy too unless you are allergic to soy. You may not find it in the soy sauce section at your health food store. Ours is on the bottom shelf with the spices. Recipes soon to be posted.

Easy Chicken and Rice Stir Fry

1 1b. boneless, skinless chicken breasts cut into strips or chunks, or more

2 cloves garlic, minced

1/4 cup Bragg's liquid aminos or gluten-free soy sauce

1 T. sugar, honey or juice, opt. (I never do)

1 16 oz. pkg. stir fry veggies ( I use Great Value Sugar Snap veggies from Walmart)

2 cups dry Minute rice (I use brown)

1 1/2 cups water

Cook and stir chicken and garlic in a small amount of oil in a nonstick skillet about 5 minutes or until chicken is no longer pink. Add water, aminos, sugar if using, and frozen veggies. Bring to a boil. Stir in rice. Reduce heat to low, cover and cook about 10 minutes or so, stirring occasionally so it doesn't stick. Add a bit more water if needed. Done if rice is not chewy.

Its easier for me to post these recipes one at a time, sorry. Ridgewalker, I forgot to say that Bragg's tastes like soy sauce. My mom also uses it for a salad dressing. She raves about it and says she couldn't eat without it.

You can find the gluten-free Honey Garlic Sauce recipe at recipezaar #207228. Be sure to read the comments on the recipe site. I made the stir fry sauce with Bragg's liquid aminos and added some cooked chicken and 1/2 bag of frozen stir fry veggies and leftover rice. Cooked it until veggies were hot, stirring often.

Recipe for Orange- Pineapple Stir Fry (very easy)... and like 60 others that you could prob change to be gluten-free. This is the only one I've tried so far.

I want to try it next time with coconut milk or shredded coconut. It reminds me of a tropical dish. This time I used the juice from both cans of fruit(so save your juice), remainder of the chicken broth and some water and added leftover cooked rice. I added 1 T. of Bragg's liquid aminos. Use less salt or onion/garlic salt instead of regular. I might add some diced onion some time.

Sweet and Sour Chicken and Rice

sauce (I always triple the sauce, double it for sure)

1/4 cup brown sugar

2 T. cornstarch

1/4 cup vinegar (I use Bragg's apple cider vinegar)

1 T. gluten-free soy sauce (I use Bragg's aminos)

20 oz. can pineapple chunks, reserving the juice (I use 2 cans)

2 T. oil

2 whole chicken breasts, skinned and boned, cut into cubes (or more)(I just use tenders)

1 med. onion, thinly sliced

1 green pepper, cut into strips

(I always add a red pepper and sometimes a yellow or orange too for color /vitamins)(so pretty!)

hot cooked rice

In small, bowl, whisk together the sugar and cornstarch. Whisk in vinegar, soy sauce and reserved pineapple juice. Set aside. Heat oil in large skillet over med-high heat. Add chicken and stir fry about 5 minutes, until no longer pink. Stir in sauce until thickened and bubbly. Reduce heat to low, stir in pineapple, onion and peppers. Cook and stir about 5 or more minutes or until veggies are crisp-tender. Serve on top of hot rice. I drop some into ziploc baggies and then plastic containers and freeze (fast entrees) for when my daughter comes home so she can take some to her house.

this recipe looks great! i bet it would be so good with coconut milk. let us know if you do try that :)

gluten-free Spanish Rice

3 cups precooked, cold rice

1 chopped onion

1 clove garlic, minced(opt.)

1/2 each of red/green peppers or 1 whole

1 jalapeno, if desired

1 can Rotel tomatoes, with juice

1 8 oz. can tomato sauce

1/2 tsp each more or less (depending on your taste) cumin, red cayenne pepper, chili powder, garlic powder

1 16 oz. can red or black beans, drained

Cooked meat, cheese, tortilla chips, optional. Add some water if needed to prevent sticking.

Saute onion, garlic, and peppers in some oil in a skillet until tender. Stir in remaining ingredients. Heat thru. Add cooked meat and cook until hot if desired, stirring often. ( Add more tomatoes or sauce if desired). Top with cheese. Serve with tortilla chips, guacamole, sour cream, salsa, tomatoes, olives, green onions, etc. Or fill a tortilla.

      I have trouble with nausea. It often starts when I’m anxious about something (home repairs, sick dog) but continues long after the home is repaired or the dog is healthy again. When it happens I eat less and lose weight.  My gastroenterologist suggested ginger or peppermint tea. I don’t know if that will work or not because I haven't had the problem since she suggested it.

      Hello  I'm not sure what to think . Seems no matter what I do I get sick. I had some yogurt with only 2 grams of sugar and is labeled gluten free ...the strawberry version seemed to really set me off My jaw is burning as well as my stomach and my feet.  Horrible pain..plus acid reflux and nausea... sensitivity to touch pain. ..yikes !! I don't know if it's from the lactose in the yogurt or if I'm getting an ulcer  This condition can make you question yourself quite a bit.  Then if you are not sure the anxiety comes 😞 Does any of these symptoms sound familiar to anyone? The neuropathy is quite intense.  What do you eat or drink after this happens  Open to suggestions  Thank you

      Of course my son is on a 100% gluten free diet.  I wish his symptoms were not debilitating as there are right now.  He cannot work, even when a miniscule of cross contamination occurs.  It's not just GI distress, but intense fatigue, brain fog, depression, anxiety, insomnia, etc.  It's literally neurological inflammation.  Not to be taken lightly here.  We have sought out many other possible ways to cope during this window of time (8 months!!!!)  without success.   AN-PEP does not help and seems like studies on this are not well researched.  So, we are trying this out because research shows some promising results.  And, all participants showed no cravings afterwards, no signs of addiction.  The patch is different than the oral route such as smoking, vaping, gum, pouch, etc.

      Have you tried AN-PEP enzymes, for example, GlutenX (who is a sponsor here)? A lot of research has shown that it can break down small amounts of gluten in the stomach, before it reaches the intestines. It might be a better approach than risking nicotine addiction, and the questionable research around this. I also hope that he’s trying to be 100% Gluten-Free.

      Hi all  I was diagnosed Coeliac a few years ago and follow a gluten free diet. The list of foods that I can eat without a problem grows shorter on a weekly basis. [I also have diabetes and asthma also].  BUT the reason I am posting this is because I seem to struggle with nausea quite a lot, which is really quite debilitating, and I was wondering if others suffer from nausea, even if following a gluten free diet.
