Gluten Free For One Whole Year!

I decided to go gluten free for good last year on the same day.

One year later, I am doing well on the diet and realized it is not the end of the world to go gluten free. I was a healthy eater and even a health nut according to some but often felt sick with something.

Now, I avoid gluten but I eat more fried food and more sweet food. For about 3 months after going gluten free, I went sugar free too and took some coconut oil and garlic with probiotics. I was thinking of starving any bad bacteria. I felt fine and didnt miss the sweet taste but I got tired of the strict diet. Now, I introduced sugar back in my diet but because I almost never have desserts, I indulge in this special gluten-free dessert made of mostly sugar.

I only watch out for gluten and became more relax about the rest of my diet. I guess I will worry more about my diet if I gain weight. For now I am back to my weight about 10-12 years ago and about 15 lbs less than 2 years ago.

Btw, it is only when I came to North-America that I increased carb/gluten in my diet after watching the Oprah show. I thought I was missing out on a lot of fiber and good nutrients because I didn't eat like the food pyramid suggested. In the past year, I got rid of those lbs I gained by following the fool pyramid.

Thanks. Toast with wine lol. I guess all other mistakes are allowed as long as it is gluten free. Maybe about time to have my cholesterol checked but I'll keep having french fries (home made!)and my coconut oil should take care of the cholesterol.

When you went off sugar, did you also eliminate fruits and starchy foods? I am having a hard time starving those bad bacteria but feel so limited with what I can eat.

Big congrats to you! I think the first year is the hardest . . . not only are you learning a new way of life, your body is still healing. I think this is one of those things that gets better - and somewhat easier - with time. :)

Thank you! I am singing Gluten free is fun, gluten free is fun! Colette, tell me what you eat since you cannot have rice tapioca potatoes and dairy. It must be hard. Maybe I should eat less rice before I develop an intolerance to that too.

Well, I am trying with my family but my younger brother asked me what he would eat if he stopped having bread :D there are much less options where he is but we will see.

I did eliminate all fruits and added sugar for about 1.5 months but I didn't eliminated all starches. I was having some brown rice, basmati and some multigrain breads. I don't know where people who eliminate all carbs get energy and I worry about having a diet made of two food groups only unless it is for a short time. I know people on the paleo or candida diet eliminate all starches and fruits but I dont know how it works. I want to go back to a sugar free diet/candida diet and I am still figuring out what I will eat if I eliminate corn and rice from my diet. I know buckwheat isn't a grain but does it work give the same nutriment than a carb and is it allowed on candida or paleo diet.

I actually felt so good and healthy while on the sugar free diet and I know I digest very well meat and vegetables than anything else.

Thank you! I feel like I cut years of age off me. I used to do the first steps of the day as an old lady when I was up in the mornings wondering if I didn't need a chiro and etc. Now, I just have to exercise a bit more :D

Absolutely. The first year is hard but guess what this message board and your support made it easier. I appreciate the responses to the many questions I had when I started the journey and was going all directions enquiring about lactose fructose gluten wheat allery candida and so many ohter things. I found guidance and understanding with people sharing their personal stories on the forum or mp and encouraging me.

      This treatment looks promising. Its aim is to provoke immune tolerance of gluten, possibly curing the disease. It passed the phase 2 trial with flying colours, and I came across a post on Reddit by one of the study volunteers.       Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.
