Well, I tried ADALAIDE's famous root beer pulled pork :) and it was such a huge hit!!---and it made so much--that we're having the "encore" tonight in those "Against the Grain" baguettes that I toast up with a garlic oil rub.

I add carmelized onions to the pork sammies, too.

Add the neighboring farmer's corn on the cob. Yum, yum.

And because they are coming out our ears, :lol: sliced tomatoes.

I think I am going to try the roasting & freezing of the tomatoes I told you about--I have given away boxes to the local gluten-free cafe and family members and we still have so many. Got lucky this year.

I wouldn't call it famous, but it sure is tasty! I keep almost talking myself into it again... as if that's difficult. Against the Grain baguettes? I'll have to try those, I've struggled with finding a bread or bun that makes me happy, but frankly am so satisfied that I don't care if I have to put it on rice.

I'm slacking this year, I've hardly had any fresh corn at all. It's so much more expensive than last year! I know why, but it still really just grates on me to pay so much for it.

For the first time in almost two weeks I was feeling up to actual cooking again tonight so I made some arepas. Yay! Burgers on arepas with curly fries and green beans. It isn't fancy but it sure is summery and delicious.

Hon, I am guessing you mean "a mock couscous" made from quinoa, right?

(some people may read this and gasp ..or faint. :lol: )

Most people think of couscous as being made from semolina---i.e wheat.

Pork loin, mac & cheese and I'm sure I'll think of a veggie to add by the time it's time to throw one on the stove. My doctor told me as long as I'm staying symptom free I'm allowed a little of my tyramine foods so I'm having my mac & cheese with cheddar today yay!

Just plain corn meal on the couscoussier, for twenty minutes, I think. It's so popular and common around here I am seriously finding out now there's couscous made with wheat. :blink:

One time, I talked about my "rye bread" recipe on here and it caused a bit of alarm...it was mock rye, of course, but some newbies reading the thread may not know, so we just checked to make sure. :D

Corn couscous is not mentioned often around here. Maybe you could share the recipe on the recipe thread?

      I sure appreciate the information. I knew there had to be gluten consumption for the blood test, but I did not realize that also applied to biopsies. Thank you so much for that nugget of knowledge.       Thank you for sharing this — it’s really important. The FDA is actively seeking public input on improving gluten and ingredient labeling, which could directly impact how people with celiac disease and gluten sensitivity shop and stay safe. Clearer labeling would help reduce accidental gluten exposure and make it easier to identify hidden sources of gluten in foods. I encourage everyone here who is affected by celiac or gluten sensitivity to read the announcement and submit their own suggestions — real lived experience matters and can influence policy changes that benefit the whole community.

      A low tTG is great news, but it doesn’t always mean the small intestine has fully healed yet—iron and vitamin D absorption can lag behind for months or even years, especially in young children. Many kids need supplements for a period of time while the gut repairs itself, and that doesn’t necessarily mean it will be lifelong. Morning stomach pain is also commonly reported in celiac kids and can be related to slow healing, reflux, motility, or even low iron itself. It sounds like the supplements are clearly helping, which is reassuring, and ongoing monitoring with her doctor can help determine when (or if) doses can be reduced as absorption improves. The most common nutrient deficiencies associated with celiac disease that may lead to testing for the condition include iron, vitamin D, folate (vitamin B9), vitamin B12, calcium, zinc, and magnesium.  Unfortunately many doctors, including my own doctor at the time, don't do extensive follow up testing for a broad range of nutrient deficiencies, nor recommend that those just diagnosed with celiac disease take a broad spectrum vitamin/mineral supplement, which would greatly benefit most, if not all, newly diagnosed celiacs.       A lot of gluten-free packaged foods do rely on extra sugar, starches, or sodium to replace texture and flavor, so focusing on simpler options makes sense. Many people do better with naturally gluten-free proteins like eggs, plain yogurt, nuts, seeds, hummus, beans, and minimally processed protein bars with lower added sugar and higher fiber. Pairing those with whole foods can help you feel more “normal” without triggering symptoms. Subscription boxes can be hit or miss, so checking labels carefully and using them as an occasional supplement—rather than a staple—often works best.
