Tonight was supposed to be a nice salad with garden fresh cucumbers and tomatoes (courtesy of one of my customers), and croutons made from Udi's hamburger buns (had to use them somehow since I didn't like them as buns). Followed by some baked chicken with gluten free pasta, sautéed red and green bell peppers, sautéed onions, red apples (don't give me looks, it adds a nice sweet crunch to it), in an oil based sauce.......but I had no power for over 6 hours today so I had to trash most of my groceries and couldn't even cook, so instead I went out and got a grilled chicken Cesar salad. :-/

But I use red delicious apples, chop them up finely, and garnish the finished product with them. First time I did it was catering a friend's wedding with a right budget and of course she wanted it to look at least semi-classy. It was a pretty big hit.

I make this stuff that I put on toasted gluten-free baguettes - it's lightly cooked apples and onions and a drizzle of balsamic reduction. Apples and onions go great together.

And you know I'm just kidding about dating you.... I really might just adopt you. Your chore will be cooking! You may call me Mom! Lol

For this type of thing - where the bread is second to the topping - Udis baguettes or Shars are good. You slice and toast first. Then top.

College....hmmmmm... That's tricky. Let me think on that.

Schar are sold off the shelf and you bake them for a few minutes before you do anything else. We had Udis baguette at a restaurant the other night made into garlic cheese bread and it was great!

It's a delicious rice dressing (meat, rice, liver, heavy seasoning) wrapped in a casing. (Like sausage) Not too sure what its made of now. Traditionally it was wrapped in the intestines of a pig... Yuck! Then it's smoked. Pure deliciousness!

Glad you found one! I have not found that many sausages in the US have gluten but I haven't looked for boudin.

The Manda brand is gluten free. I haven't had trouble with sausage neither, but finding this was quite exciting!

Today I made grilled chicken with green beans and sweet potatoes.  Have had a terrible mirgraine since my IVIG treatment thursday, still not really better. I have stuff to do, this needs to go away!!

Yesterday we got a shkar( you know the ones who make those rolls) brand pizza and it was sooo delicious. The perfect cheese to sauce ratio. My bf cooked it on the oven rack so it was nice and crispy too. He sauteed some onions and green peppers for the top and chopped some black olives. totally hit the spot since my grandmother kept asking if we wanted pizza- all day while we were visiting.

 

Tonight I took some chicken, bell pepper, jalepeno, garlic carrot and onion and cooked that up in the wok and added some ginger and curry powder (badia is certified gluten free!) and made like a curry fried rice on the deck.. it was delicious. ate wayyyy too much.

 

 

Just curious, I have read many of your posts and you seem to be having many issues with your gut.  You said you "pound the Pepto"  and your sick and on the couch recovering alot.  Do you think it might be the foods your eating?  If I ate what you had last night I would be sick as a dog all the time too.  If your gut does not heal, you will stay sick and most likely will not absorb the nutrition from your food.  

 

Just "Food" for thought.

If you can't find the baguettes, you can order them from Amazon.  I like the baguettes, but the the bread not so much!!!  As in, it's AWFUL imho.

Last night was our last night in Colorado - we went to Vinnys in Frisco. So good with food issues! I had a great poached pear, chèvre and candied pecan salad, beef tenderloin in a nice sauce ( they cook bones for days to make the sauce & no thickener needed) on polenta.

Tonight we got home late and ordered pizza from Minsky's.

I have eaten out 4 times in the last 6 days and did not have a problem. It helps to pick places that are specifically trained or have a knowledgeable chef.

Karen, where in Colorado are you?  I'm in or around Denver once a year, and sometimes around Beaver Creek.  I'd love to know where you are eating.

I have kids at CSU in FT Collins. We were up in Dillon.

Vinny's is in Frisco. The trout special used gluten-free bread crumbs!

Then there are the usual places like PF Chang's, Brazilian steakhouses, Spoons outback, etc.

Colorado has a lot of places with gluten-free. I haven't tried them all but my son notices that some places do a nice job with gluten-free - fresh ingredients for the gluten-free burger, etc and some not so good.

I haven't eaten at any in Beaver Creek but I have heard some of the more expensive places do a great job gluten-free. I don't remember the name, but one place has a son with Celiac. But it is probably $40 a person without drinks so I haven't tried it.

Highly recommended by Celiacs but been too busy when I have tried to go.

Tonight I have cut up pork tenderloin that I usually make stir fry with, but I think I am going to do like a beef tips and gravy with it.  Just want something different and more comfort food-ish.  I think I have been eating stir fry too much lately, haha.

We stopped at the store today and I got a chicken for $3! Yay! I roasted it, filled the house with smoke (lol) and enjoyed a lovely dinner. I'm really enjoying my husband having the same two days off every week, it's positively great. Stayed up way too late last night, enjoying a lot of tv last night and tonight and some ice cream. Had some errands today to go pick up a bag of buckwheat, go to the bank and such. It's just plain too hot for me these days though. Ick. A person could melt out there.

Although...if one does utilize the subscribe and save feature....one saves not only on gluten-free pasta and cereal....but many supplements, household items and more.

Got a london broil out of my freezer to thaw for tomorrow. Tonight I'm in the mood for mac & cheese. Nothing I can really thaw quickly so I think we'll just do burgers. Not particularly exciting, but a decent summer supper. I have a container of baby spring mix greens for salads and maybe I'll get out the deep fryer for fries for my husband since he doesn't like homemade mac & cheese. (something seriously wrong with that man.) I owe him though, I dragged him to Joann's today. I was like a kid in a candy store, I picked out 7 or 8 new flannels and fabric for a reversible, two colored basket liner. He wasn't excited to be there at all. :lol:

 

Tonight we're going to take a walk around the neighborhood around sunset and go look at people's gardens. We've seen a few in passing that have interesting things we'd like to look at to see if they are things we'd like to add to our garden next year. The walk will probably call for some of our dark chocolate covered fruit pops to bring along since it doesn't entirely cool off til around 10.

Today I went to sams club and they had freshetta gluten-free pizza!! Yaaaaaaay!!!  Im eating it right now, pretty good!

      Yes. I have not been tested for celiac. It took forever to get diagnosed with Fibromyalgia. lol. I have an appointment with my regular GP later this month and will convey my findings on improved symptoms and see what his thoughts are. Thank you.

      @Grahamsnaturalworld, It's never too late.   Have you been checked for Small Intestinal Bacterial Overgrowth?  SIBO can cause ongoing symptoms.  Mast Cell Activation Syndrome (MCAS) and Histamine Intolerance (HIT) can also be the cause of ongoing symptoms.  The AIP diet can help with these by starving out SIBO bacteria and calming the immune system. Do you include dairy in your diet?  Casein in dairy can cause an autoimmune response the same as to gluten.  Have you been checked for lactose intolerance?  Some people lose the ability to produce the enzyme, lactase, needed to digest lactose, the sugar in dairy because the villi where the lactase enzyme is made are damaged.  AIP diet excludes dairy. Do you include grains in your diet?  Gluten free alternative grains and ancient grains can be inflammatory and cause symptoms.  Some people with Celiac react to corn and oats.  The AIP diet excludes all grains.  Lectins in grains can be inflammatory and cause symptoms. Do you eat nightshades (tomatoes, potatoes, peppers, and eggplant).  This family of plants produce glycoalkaloids, chemicals that promote Leaky Gut Syndrome.  The AIP diet excludes nightshades.   Are you on any medications?  Some medications can cause gastrointestinal symptoms.  Do you take any supplements?  Some herbal teas and supplements can cause digestive symptoms.  Medications for diabetes, antidepressants, and other pharmaceuticals can cause digestive symptoms as side effects. Have you been checked for nutritional deficiencies?  Malabsorption of essential nutrients can occur with continued symptoms.  Deficiencies in Niacin, Thiamine, and other B vitamins can cause digestive symptoms.  Gastrointestinal Beriberi and Pellagra are often overlooked by doctors because they are not familiar with nutritional deficiency disease symptoms.  Nutritional deficiencies can worsen over time as stores inside the body are depleted.   Have your doctors checked for all these?   I had a horrible time getting my symptoms under control.  I had to answer all these questions myself.  Yes, it's frustrating and exasperating because doctors don't have to live with these symptoms everyday.
