Green Beans

All right. I loooooove green beans (AND they love me! :D). I've looked up recipes, but so many have gluten and dairy and other stuff that doesn't agree with me and I'm not creative enough to substitute just yet.

What veggies can I combine them with besides potatoes and onions (those two make me tired if I have too many)? Would any fruit work (besides lemon, which I'm not against)? Also, is there a recipe out there for a simple but dairy, soy (and of course gluten) free green bean casserole? I also know the beans work with just about any meat, but if I wanted to make it for a party I'd want it to be vegan so more people could enjoy it. I know you can fry green beans in olive oil (yummmmm), how about baking them in it? Is there any other kind of oil or sauce (gluten, dairy, and soy free) they work with?

Lots of questions, sorry. :P I'm a bit of a cooking n00b and I'm capable of SOME creativity, but not a lot just yet.

They go well with mushrooms, garlic, tomatoes, carrots, corn ... those are just the sorts of things I've tried. I tend to like to steam bags of frozen mixed veggies (you can find more interesting mixes). Maybe try using veggie broth or chicken broth or beef broth as a base for a sauce, adding flavors as you prefer? You could thicken with corn starch or with gluten-free flour mixes ...

I love them cooked crisp-tender with fresh Indiana corn in the summer time. Canned corn perhaps?

After I wash and trim them, I put them in a glass casserole along with a few cloves of minced garlic, a little extra virgin olive oil and salt. Cover and nuke for 6 - 8 minutes, stirring occasionally, until done to your preference. No added water means they retain their vitamins and flavor. This is almost as good as the ones fried in olive oil but without all the frying.

Any sort of vinegar, apple cider, balsamic, white wine...

Combine with almonds or sesame seeds/oil!

Add to spring rolls.

And, for a vegan casserole, I would imagine you can't go wrong with layers of cooked rice (quinoa, polenta, etc) alternating with green beans and then use a tomato sauce of some sort. I can see using either a Tex-Mex salsa or enchilada sauce or going more Italy with something heavy on the oregano, basil, marjoram, etc. I'm not much of a tomato person, though, so consult others.

My family is from the south, and anytime I make these, everyone raves. Just chop up 1/2 lb of bacon and brown. Then add chopped onions. Add in your clean and snapped beans and boil til they are soft. Nice, bacony goodness!

Green Beans- TGI Friday's has the appetizer green beans where they are coated and fried.. yum well those aren't gluten free so I made my own. Wash and dry the beans and then toss them in some egg whites and coat with any gluten free flour seasoned with whatever spices you like (brown rice flour works for me with garlic powder, onion powder and a little salt).. Deep fry the beans in hot oil until they start to brown. Sprinkle with sea salt and serve warm. You can dip em in a dip or just eat em plain... mmmmmmmmmmmmmmmmmmmmm B)

This recipe calls for 1 can of green beans, but I eliminate the corn and add an extra can of greenbeans. Play around with this recipe and add extra greenbeans to make it the way you like it.

Taco Soup

Ingredients:

1 lb. ground beef

1 pack taco seasoning mix

onions, bell peppers, etc.

15 oz. can corn (undrained)

15 oz. can green beans (undrained)

15 oz. can kidney beans (undrained)

10 oz. can rotel tomatoes (undrained)

15 oz. can pinto beans (undrained)

15 oz. can ranch style beans (undrained)

1 large can V-8 juice

For Christmas I like to mix them with cherry or grape tomatoes or strips of red pepper and a little onion.

They are also good with onion and bacon. Some people like them with ham. I don't like ham.

They are super with almonds. But I am allergic.

I make a Spud Puppy casserole. Spud Puppies are organic and like Tater Tots but without the soy. If you can't find those you can use any frozen hash brown product (that is suitable for you) as a topping. Cook some ground beef or use cooked chicken that has been chopped into bite sized pieces. Mix it with a sauce. I've made a sauce of rice milk, olive oil and mushrooms, thickened with sweet rice flour. I've used ketchup for the sauce. Tomato sauce for the sauce. Even a can of creamed corn. That (I think) is the best. I usually cook a bit of chopped onion and celery with the beef. Mix in a can of green beans or some frozen green beans. Top with your potatoes and bake until the potatoes are brown and crisp.

A similar casserole has the ground beef or chicken with the onions and celery, mixed with a can of green beans and creamed corn and topped with mashed potatoes. I don't put milk in my potatoes. I mash them with Nucoa but that has soybean oil. If you have a margarine you use, use that. Otherwise use some light olive oil, some salt and plenty of freshly grated black pepper. Bake until heated through.

If you like a little heat, try simmering a can of French-style green beans with about a half can of Rotel tomatoes.

I mix greenbeans with progresso mushroom soup(thicken it with cornstarch), Hormel bacon bits, cheddar cheese(white and yellow), some crushed Funyuns and save some for the top. I add them the last 5 minutes. I like mine extra cheesy!! At Thanksgiving my gluten eating family loved it. I don't eat it often as I'm being corn free etc, but made is a special treat for Thanksgiving.

I do this but a little different. I buy that real bacon that's cooked already and in a zipper sealed package to keep on hand just for this recipe.

I brown the onions in olive oil, add the cooked bacon and sautee for about a minute and then add fresh green beans not boiled and sautee for about 5 minutes. Then I put a cover on and put the heat on very low and let it simmer for about 10 minutes. Turn the heat off but leave the cover on while I'm cooking other things. When I open the cover later they are nice and soft and yummy perfect. I make these quite often. Oh and I salt them if they need it at the end.

      I have trouble with nausea. It often starts when I’m anxious about something (home repairs, sick dog) but continues long after the home is repaired or the dog is healthy again. When it happens I eat less and lose weight.  My gastroenterologist suggested ginger or peppermint tea. I don’t know if that will work or not because I haven't had the problem since she suggested it.

      Hello  I'm not sure what to think . Seems no matter what I do I get sick. I had some yogurt with only 2 grams of sugar and is labeled gluten free ...the strawberry version seemed to really set me off My jaw is burning as well as my stomach and my feet.  Horrible pain..plus acid reflux and nausea... sensitivity to touch pain. ..yikes !! I don't know if it's from the lactose in the yogurt or if I'm getting an ulcer  This condition can make you question yourself quite a bit.  Then if you are not sure the anxiety comes 😞 Does any of these symptoms sound familiar to anyone? The neuropathy is quite intense.  What do you eat or drink after this happens  Open to suggestions  Thank you

      Of course my son is on a 100% gluten free diet.  I wish his symptoms were not debilitating as there are right now.  He cannot work, even when a miniscule of cross contamination occurs.  It's not just GI distress, but intense fatigue, brain fog, depression, anxiety, insomnia, etc.  It's literally neurological inflammation.  Not to be taken lightly here.  We have sought out many other possible ways to cope during this window of time (8 months!!!!)  without success.   AN-PEP does not help and seems like studies on this are not well researched.  So, we are trying this out because research shows some promising results.  And, all participants showed no cravings afterwards, no signs of addiction.  The patch is different than the oral route such as smoking, vaping, gum, pouch, etc.

      Have you tried AN-PEP enzymes, for example, GlutenX (who is a sponsor here)? A lot of research has shown that it can break down small amounts of gluten in the stomach, before it reaches the intestines. It might be a better approach than risking nicotine addiction, and the questionable research around this. I also hope that he’s trying to be 100% Gluten-Free.

      Hi all  I was diagnosed Coeliac a few years ago and follow a gluten free diet. The list of foods that I can eat without a problem grows shorter on a weekly basis. [I also have diabetes and asthma also].  BUT the reason I am posting this is because I seem to struggle with nausea quite a lot, which is really quite debilitating, and I was wondering if others suffer from nausea, even if following a gluten free diet.
