Gluten Symptoms After First Time Eating Gluten Free Breads?

I've been gluten free for a year now and for the last 2 months been feeling perfectly fine. I just this past weekend managed to find Udi's gluten free breads at my local store, so I bought some of the gluten free hamburger buns to use with my Five Guys Burger the other night. It was AMAZING. Sat with me perfectly, no issues.

This was also the first time since I'd went gluten free that I've had ANY sort of bread.

The next night, I made some Bob's Red Mill Gluten Free Cornbread Mix, and the next morning was feeling some gluten symptoms, they were light, but there. Has anyone else had this happen? I think I'm just feeling like I do cause my system isn't used to having breads down there anymore...

I have tried 3 different mixes (brownies, cornbread and pizza crust) from BRM and each time I've felt cruddy the next day although it wasn't a full glutening type of feeling. The instance were all spaced apart (several days or even weeks) and the BRM product was the only new thing I tried. I now avoid the brand.

hope you feel better soon. I have heard from several when they eat bread they feel ill...For me, I react to Bob's Red Mill so I don't use it at all...

There are many packaged products gluten-free that people react to so maybe it was the pkged mix....

josh052980 Enthusiast

I had a feeling that'd be the case... The Udi's stuff didn't phase me one little bit and it tastes just like I remember the real deal being. Guess I'll stick with that and avoid BRM stuff at all costs.

I found that when I first reintroduced rice and corn into my diet, I started feeling less stellar overall, no stomach issues but just dragging a bit the next day. Now I don't eat much of either at one time, and I don't eat both on the same day and I'm just fine. Most days I just stick with my potatoes that have always been my mainstay carb, along with fruits, veggies and some beans on occasion. I've read this about Bob's Red Mill products from many here and I think I'll just avoid that. But Udi's muffins and pizza crust are my favorite, especially if you like thin type. THERE YOU GO!!! MAKING ME HUNGRY!!!!!!!

Can you tolerate gluten-free oats?

Bob's Red Mill stuff, all of it, is CC'd with gluten-free oats. Which sucks for that percentage of celiacs who react to the oats themselves.

I just read about this last night. BRM gluten free oats mess me up pretty bad, so I guess I have my answer. I was nearly at a migraine last night. It's weird though, the symptoms now take longer to show up in me, I guess cause I've been gluten free so long that I'm starting to actually heal?

This is interesting (and perplexing) but what about all this isn't, right?!

I can honestly report that BRM flours--like rice and sorghum-- do not bother me and I am very sensitive to trace gluten CC, HOWEVER the BRM all-purpose flour with the Garfava or garbanzo bean flours in them? Make me nauseous. For what that's worth.

Also, delayed symptoms often make it VERY difficult to determine what causes symptoms in me, but I always know when it's GLUTEN. Those are very definite symptoms in me that mean only one thing.

If there was gluten CC in BRM flours, I'd be sick every day from the bread we make ourselves.

Could be the oats, however, as was suggested.!!

Oddly, I have more of a wonky stomach after eating Udi's than anything made by BRM. Not sure what THAT means.

But I have a package of their rolls right here I am going to try and let you know. :)

Just goes to show that our stomachs --and systems-- are all different, I guess. If only we humans came with user manuals.

I just tried Udi's for the first time this weekend too... And I ate some of it yesterday. Perhaps between BRM and Udi's it was a perfect storm of gluteny crappiness?

No, you may have missed my point, hon. I do not think it is gluten CC. I think it is something else in those products bothering you. IMHO

That's what I'm meaning; I don't think this is gluten, while the symptoms are similar, they're not the same as being glutened. It feels a LOT like after I got nailed by the oats though. What I need to do to be sure of things is get over this and feel normal again, then give Udi's another shot, then I'll be sure.

Good thought Josh. Let us know....it might help someone. :)

I know many have good luck with Five Guys but isn't that the most likely gluten cc? I have seen the bun guy wrap the bunless burgers. I have been to one that grills the buns if people ask- right with the burgers.

Sorry. Maybe I misunderstood you.

I read your sentence as this--it said "between BRM and UDI's, it was the perfect storm for "gluteny crappiness" ---and thought that was what you meant--as in Gluten CC.

Okay. Got it!

Several of his comments sounded like that to me, too.

Perhaps Josh worded his post poorly, but he clarified it here :

Yup, sorry kids, just bad wording on my part. CC or not, I kinda think of it in my head as "gluteny crappiness" simply because my gluten issue is the root cause of the problem. I was thinking through the remnants of a migraine too, so I was a little off yesterday. Good news is I'm almost 100% again, so I know FOR SURE it wasn't gluten. If it was I'd be sick for another 3 days or so, that's how my body seems to roll.

I'll do the Udi's experiment in a few days and see what goes down. If I was a betting man though, I'd say it was oat CC from BRM that got me, but there's only one way to know for sure :)

I think I've found the culprit; Chocolate Chex & Cinnamon Chex. Yesterday, I skipped having either of these for breakfast as I had some left over gluten free buckwheat pancakes, and I felt AMAZING the latter part of the day once I got the remaining stuff outta my system if you know what I mean. This morning I had some Chocolate Chex, and I'm right back to feeling crappy. They say they're gluten free, but I've had an issue with artificial and "natural" flavors before; which are in the ingredient list for these. Mystery solved! Back to regular corn Chex for this kid!

Josh have you thought about the sugar? Chocolate Chex would make me gag in the morning. How a bout too much sugar.

And diary, could that be an issue? Ahhhh..maybe yes!

But, Josh, by using the phrase "they say they're gluten free but...." you are implying that artificial and "natural flavors" contain gluten because you "feel crappy". Do you see how this is misleading/confusing to a reader? What does crappy mean? Nausea? bowel issues? headache?

Once more, I am going to suggest to you that it could be the cinnamon, the chocolate, the dairy, or any number of things. What did you "wet" those chex with? Milk? Cow, Almond, coconut, or soy?

Many of our symptoms are delayed. If you had pancakes, you probably used butter? maple syrup?

Too much sugar or carbs? Too many variables make it very difficult to pinpoint a culprit.

I had the Honey Nut chex once and thought they were very sweet and they made me nauseous after. But my first thought was not "hidden gluten". It was "bummer"-- I like the taste  .

Your "issue" with artificial and natural flavors is not a gluten issue, just to be clear, right? All those cereals have BHT, etc. in them as preservatives and some folks have trouble with those as well.

I found a great deal on Chocolate Chex, so I ate them constantly for a couple weeks. Also for a couple weeks I had the weirdest, continuous headache I've ever had. Ran out of Chex, ran out of headaches...

It had nothing to do with gluten, but clearly there's something in the product that my body doesn't care for.

I tend to stick with whole, natural foods, and I'm always happier when I do. :)

Me, too, and when I indulge in packaged goodies, I almost always feel--as Josh would say--crappy <_<

This is my issue right now, to the word. I've had a headache for two weeks straight, except that one day where I skipped the Chex, and voila, headache is gone. I ate them yesterday and now I'm near a migraine again. I skipped them this morning though, so hopefully once this headache clears I'll start getting totally better again. No more flavored Chex for me! I'm sticking with the straight up ones from here on out, this is #$%@ing ridiculous.

methinks it's the chocolate/sugar, J! Feel better soon (I HATE migraines  )

I agree with the other posters on sugar: too much could give anyone a migraine/nausea! Thing is, our bodies aren't really supposed to have the white sugars in those kinds of cereals. Ideally, we'd be getting them from natural sources — e.g.: fruits and carbohydrates without the added/refined sugars! Feel better. :)

Some interesting articles regarding the use of Zinc Carnosine to help heal gastric ulcers, gastritis and intestinal permeability. I would consult a medical professional about it's use. https://www.nature.com/articles/ncpgasthep0778 https://www.rupahealth.com/post/clinical-applications-of-zinc-carnosine---evidence-review https://pmc.ncbi.nlm.nih.gov/articles/PMC7146259/ https://www.fallbrookmedicalcenter.com/zinc-l-carnosine-benefits-dosage-and-safety/

He is. Which makes everything even more difficult. I’m not a believer in “staying for the kids” but I have nowhere to go and it’s not just me, it’s me plus my babies. We live in a beautiful place, lots of land in the country and me and the kids love the place we’ve called home for their entire lives. But Im seeing that he’ll never change, that my kids deserve a happy healthy Momma, and that staying in this as is will be the early death of me. Then I look at the scars covering my entire body…this disease and the chronic stress I’ve been enduring for years that tell me I’m no longer beautiful and no one will ever look at me with interest again. I try self care, try to give myself grace so I can just start loving myself enough to gain strength but the slightest sparkle in my eye and skip in my step attracts his wrath and it all comes crashing ten fold. Life is just absolutely railing me from every single direction leaving me wanting to wave that white flag bc I don’t feel like there’s much hope no matter what happens.

Hi, I was recently diagnosed with Celiac and dermatitis herpetiformis after years of suffering without answers. I lost my mind. I lost my job. I lost so much time. I lost Me. Conventional doctors are opulent come near me and the one who did sat across the room, misdiagnosed me, pumped me full of steroids which collapsed my entire hip for 6 months. So without answers I began my holistic journey. Fast forward a couple of years and still struggling with a mysterious whole body itchy, crawling “skin hell”, perfect teeth now deteriorating, thick hair now thinning rapidly and no more than a day or 2 at most relief….An acquaintance opened up a functional medicine practice. Cash only, I found a way. Within a month tests clearly showing my off the charts gluten allergy/sensitivity as well as the depletion of vital nutrients due to leaky gut and intestinal damage. dermatitis herpetiformis was more than likely what I was experiencing with my skin. I was happy. I thought this is easy, eat healthy Whole Foods, follow the diet restrictions and I finally get to heal and feel confident and like myself again very soon! 😔 Supplements are very pricey but I got them and began my healing. Which leads to the other major issue: not working, stay at home Mom of young kids, entirely financially dependent on my man of 7 plus years. He’s never been supportive of anything I’ve ever done or been thru. He controls everything. I’m not given much money ever at a time and when he does leave money it’s only enough to possibly get gas. His excuse is that I’ll spend it on other things. So my “allowance” is inconsistent and has conditions. He withholds money from me as punishment for anything he wants. Since being diagnosed, he’s gained a new control tactic to use as punishment. He now is in control of when I get to eat. He asked for proof of my diagnosis and diet bc he said I made it up just to be able to eat expensive organic foods. Then after I sent him my file from my doctor he then said she wasn’t a real doctor. 😡. I go days upon days starving, sometimes breaking down and eating things I shouldn’t bc I’m so sick then I pay horribly while he gets annoyed and angry bc I’m not keeping up with all the duties I’m supposed to be doing. His abuse turns full on when I’m down and it’s in these desperate times when I need his support and care the most that I’m punished with silence, being starved, ignored, belittled. He will create more of a mess just bc I’m unable to get up and clean so that when I am better, I’m so overwhelmed with chores to catch up that the stress causes me to go right back into a flare from hell and the cycle repeats. I’m punished for being sick. I’m belittled for starving and asking for healthy clean water. I’m purposely left out of his life. He won’t even tell me he’s going to the grocery or to get dinner bc he doesn’t want me to ask him for anything. I have no one. I have nothing. Im not better. My supplements ran out and I desperately need Vitamin D3 and a methylated B complex at the very minimal just to function….he stares at me blankly…no, a slight smirk, no words. He’s happiest when im miserable and I am miserable.  this is so long and im condensing as much as I can but this situation is so complicated and disgusting. And it’s currently my life. The “IT” girl, the healthy, beautiful, perfect skin, perfect teeth, thick and curly locks for days, creative and talented IT girl….now I won’t even leave this house bc Im ashamed of what this has dont to my body, my skin. Im disgusted. The stress is keeping me from healing and I think he knows that and that’s why he continues to keep me in that state. He doesn’t want me confident or successful. He doesn’t want me healed and healthy bc then how would he put the blame of all his problems on me? This journey has been hell and I’ve been in Hell before. I’ve been killed by an ex, I’ve been raped, robbed, held hostage, abused beyond nightmares but the cruelty I’ve experienced from him bc of this disease is the coldest I’ve ever experienced. I’ve wanted to give up. Starving and in tears, desperate…I found a local food pantry in our small town so I reached out just saying I had Celiac and was on hard times. This woman is blessing me daily with prepared gluten free meals, donations, educational info, people who know this disease and how they manage life and the blessings just keep coming. But it’s overwhelming and I feel like I don’t deserve it at all. He just glared and I know he’s going to sabotage it somehow. I don’t even know what to do anymore. I’m so broken and just want peace and healing.

@Colleen H   I am just curious,  when you were tested for coeliac disease, did the doctors find out if you had any deficiencies? Sometimes muscle pain can be caused by certain deficiencies, for example, magnesium, vitamin D, calcium, and potassium.   Might be worth looking into having some more tests.  Pins and needles can be neuropathy, again caused by deficiencies, such as iron and B12,  which can be reversed if these deficiencies are addressed. In the UK where I live we are usually only tested for iron, B12 and vitamin D deficiencies at diagnosis.   I was very iron anemic and supplementation made a big difference.  B12 was low normal, but in other countries the UK's low normal would be considered a deficiency.  My vitamin D was low normal, and I've been supplementing ever since (when I remember to take it!) My pins and needles definitely started to improve when my known deficiencies were addressed.  My nutritionist also gave me a broad spectrum supplement which really helped, because I suspect I wasn't just deficient in what I mention above but in many other vitamins and minerals.  But a word of warning, don't take iron unless blood tests reveal you actually need it, and if you are taking it your levels must be regularly monitored because too much can make you ill.  (And if you are currently taking iron, that might actually be making your stomach sore - it did mine, so my GP changed my iron supplementation to a gentler form, ferrous gluconate). Lastly, have you been trying to take anything to lessen the pain in your gut?  I get a sore stomach periodically, usually when I've had too much rich food, or when I have had to take an aspirin or certain antibiotics, or after glutening.  When this happens, I take for just a few days a small daily dose of OTC omeprazole.  I also follow a reflux or gastritis diet. There are lots online but the common denominators to these diets is you need to cut out caffeine, alcohol, rich, spicy, acidic food etc and eat small regularly spaced meals.   When I get a sore stomach, I also find it helpful to drink lots of water.  I also find hot water with a few slices of ginger very soothing to sip, or camomile tea.  A wedge pillow at night is good for reflux. Also,  best not to eat a meal 2-3 hours before going to bed. If the stomach pain is getting worse, though, it would be wise to see the doctor again. I hope some of this helps. Cristiana
