  5. I have it, my mom had it, and we both are/were overweight. Celiac messes with the immune system if you keep eating gluten, so it shows itself in vastly different ways. Symptoms exhibited by one person can be the exact opposite of what another shows. Have you had an endoscopy? A GI doc needs to take samples from the lining of your small intestine for biopsy...

  8. You had a positive biopsy, you went on the diet, you started feeling better, you went off the diet, now you are sick again. Get back on the diet, give your body 3 years to heal, then stay on the diet!! By all means, if it will make you feel better, get a second opinion. Let us know what the second doc says. Make sure he does a biopsy, don't just talk...
  9. I agree with Richard, except I use bite-size Tostitos chips. I like pizza crusts thin and crispy, and this suits me just fine. I use the microwave to melt the cheese on top.

  11. I used to use the same pans as my family, until I spent a month sick because of it. Now I have separate pans, just for me. Other than that, I cannot convince you, you will have to try it and see for yourself.

  13. Don't be afraid to ask us any questions, even gross ones. We have all been there at some point in time. If someone does flame you, ignore them. They could be having personal issues of their own.
  14. Yes, it does sometimes make you crave more. Allergies can do it, too. Something about eating the offending food makes you feel temporarily better after an accidental ingestion, so your body craves it, trying to relieve the symptoms. It is just like narcotics. You have to quit eating the stuff, and go through detox all over again. Misery, I know.

  16. I'm not Susan but I do mix my own flours. I use equal amounts of garbanzo bean flour, potato starch/flour, corn starch, and tapioca starch for cookies and cakes. For pancakes, I leave out the potato.

  18. Doctors seem to think that we don't know anything. When my gallbladder went bad, I kept telling my doc that it needed to be removed. It took 3 months and a lot of harping and nagging on my part to get in to a specialist. It was removed, and the autopsy on it showed that I was right. Your mom will have to keep on to her PCP, it is her body and her health...

I will avoid known and suspect items, but I use wheat flour and breads in my house for the rest of my family, so even food I make at home would have to be labelled "made in a facility that processes wheat." I have to eat to live...
  20. Bleu cheese is made with bread, all brands are no-nos for us. I don't know about the dipping sauces.
  21. In thinking about your question, Carrie, I would have to say yes, we should all avoid those products. However, I have many food allergies, and I can honestly say that some of them mimic the symptoms of gluten contamination, so how do I know that your reaction is strictly gluten, and not a latent allergy or intolerance? That is the whole problem with celiac...

  23. The fat thing would explain why 8 ounces of whole milk stopped the hunger, but it took 16 of the 2%. I did hear on the news that a lowfat diet did nothing to stop heart disease. I think that when my 2% is all gone, I will start buying whole again. Thanks for the info!

  25. Those are the times I use yoga. I don't need a lot of energy going in, but I feel much, much better afterward.
