  1. Sorry to hear that you are not well, and that the enviroment isn't as supportive as it should be! On the Men vs. women thing, I don't know that I've seen a number for that. Any more experienced celiacs know?
  2. Seems like it might be happening, little by little, with the press and all. Even if for some people it starts as just a way to "lose weight", if they notice the big changes, then get sick on gluten again, maybe it'll help. I do worry about people not taking it seriously if "gluten-free" becomes the next South Beach diet. Geoff
  3. Momma Goose, I'll work on it. Between the language barriers and the fact that Po-Po (Grandma) speaks no english, Nor do I speak Chinese or Vietnamese, and Po-Po doesn't measure anything, or even know the english names for things, it gets tricky!   4. Thanks you guys. This site has been a solid asset. I forgot one thing, and it's a big, big one, the pain and numbness in my hands and feet, while not gone, is certainly dramatically reduced in both frequency and severity. Woohoo! Geoff

The sauce used primarily there is Fish Sauce, which is normally Gluten-free. Chinese food is tough. I used to eat out 4-5 days a week, between lunch and dinner.   13. Barry, If you have been strictly gluten free for 9 months, and are feeling good, it seems very likely that an endoscopy will show a healed system. So it'll look like you don't have Celiac. The blood test is known for having false negatives. I had a negative, but have had positive dietary response, clear damage on the endoscopy, and tested positive...

  15. Wow. That's grim. I can sympathize a little, it took me 10-12 years to figure things out. Luckily my hardships weren't as bad as some.   19. I had an interesting experience, I was a conference the last few days, and had lots of snack foods with me. Several people noticed I was eating the offered food. Some clearly noticed, but didn't comment. A few asked if I had "allergies". One had a celiac relative and noticed the gluten free labeling on something. Nobody seemed upset, or suprised, or...

  22. I had a negative blood test, but tried a diet and saw dramatic improvement. 6-8 weeks later I did a endoscopy, which showed clear damage, but not clear Celiacs. I had been gluten free/lite for several months at that point, which I think explains the ambiguity. My silly Dr. didn't tell me I needed to eat gluten, and the first time I met the GI specialist...
  23. Salmon, Shrimp and the like should be fine for celiacs, though it is possible you have another allergy (seafood). What were they cooked in? Do be aware of processed fish cakes, or artificial crab, since those might contain wheat. G

  25. If it's authentic Vietnamese, it will use Fish Sauce, not Soy Sauce. You still need to be careful about the meats, but most are OK. fish Sauce does not contain wheat. If there is a lot of Soy Sauce, then it's not proper Vietnamese food! Geoff
