  1. I can't remember my Enterolab score, but it was a low positive. I had a negative blood test, but my biopsy showed clear damage.
  2. I don't have any suggestions for you on that pizza crust, but I've been making simple, cheap pizzas using the brown rice tortillas from Whole Foods. I toast them under a broiler with a light coat of olive oil, once crispy, I top them and bake some more. Definately thin crust! I'd like more a traditional pizza crust, but the one gluten-free one I tried...
  3. It's tough, but be patient. I've found the getting back to normal after and accidental glutening takes 1-2 weeks for me. UGH. Your body has been suffering for a long time, and will take some time to heal. Just think of the last time your cut yourself badly, and how long before the scab was gone completely. It takes time.   4. I don't think it's a scam. They are very open with what they can and can not do. They do not claim to diagnose Celiac, but do test for Gluten reactions and other things, as well as identifying at least some of the genes that are thought to be celiac genes. I was happy to get the information, and used it as one piece of the puzzle in my diagnosis. ...
  5. Jerry, I've sold a few pictures, and write a regular article for a magazine which normally contains several pictures. Your photos are really good, but I will warn you that it's a VERY crowded marketplace. If you want to make money taking pictures, learn to shoot weddings or sporting events, or both, and do that.   7. Not to be a downer, but haven't people on here reported that while they react to small amounts, big amounts of gluten don't affect them much. I'd just be worried that he might be asymptomatic. Will you do any follow up testing (enterolab, endoscopy, or blood work?) Geoff

  10. I did an 87 mile ride bike ride Saturday. Felt pretty good, but I definately need to find better foods for maintaining my energy. I used to do the whole cliff bar/powerbar thing, but Lara bar's don't seem to have the same staying power.... Any suggestions? Geoff
  11. I got on my new road bike saturday, down in LA. Rode 87 miles!!!!!!!! woohoo. I wasn't as fast as I used to be, and need to work on what to eat on long rides like that, but it felt simply wonderful to have that kind of energy again. I'm commuting to school this week on my bike, in honor of Bike to Work week. 21 miles each way. Geoff

  13. Holy cow. I have a lot of familiarity with diabetes, as both dad and aunt and an ex-girlfriend have type 1.   15. It was my primary symptom, other than GI issues. Mine would get pretty bad, even making regular tasks, walking, or excercise tough to impossible. Mine was frequent. I saw improvement even before gluten free with taking lots of B12. Since going gluten-free, my symptoms are significantly better. Not 100%, but much, much, much better. Geoff
  16. I bought a bunch of Luna bars, like 15-20, when I first went Gluten-free. I thought I'd read on here they were gluten-free (confusing them with lara bars). I didn't know about Oats. I felt a little weird eating a bar billed as "for women", but they were super-tasty. I was sad when I figure out I couldn't have them, and now I'm stuck with a big bag...
  17. I'm a guy. As much as I hate doctors, my problems, while not debilitating, were serious enough I went to my doctors in attempts to "figure it out". I don't know if my size threw them off, but none ever even suggested Celiac or food issues other than lactose intolerance. After years of that kind of incompetence, I stopped going. Only went back...

  20. I think you've got the right idea. Get off the weed, get a better job. Manage the Arbys, do a kick ass job, then get a job managing a Starbucks.   22. I credit eating meat again for helping me figure out my Celiac! I had been vegan/vegetarian/pescatarian (in that order) for 12 years, and been having celiac symptoms for about as long. Last September, while in England, I fell off the wagon when a favorite aunt made a favorite child hood meat dish. Loved it. Starting eating meat again, a few weeks...

  24. I fall into the "way less than I used to camp" I used to eat toast for breakfast, and sandwhiches nearly every day for lunch. Crackers and cheese late afternoon. Pasta all the time. I buy the gluten-free bread, but I go through a loaf every 4-6 weeks, instead of a loaf in 3-4 days. and the loafs are smaller. I don't eat pasta as much anymore...
