Start taking Vitamin D, calcium, magnesium like the PP said, plus take Vitamin B12 "sublingual" (under the tongue). You can find sublingual B12 at healthfood stores, just make sure all of these are gluten-free. For D, magnesium and calcium I use Nature Made. For sublingual B12 I use Trader Joe's. Yes, wear gloves. BUT, wear a respirator (like housepainters wear) or at least a paper dust mask. When I cleaned my kitchen, I didn't do this -although my husband suggested it - and later got sick and wished I had. Wheat particles float and get in your mouth/nose. ~Laura -

Most chocolate has milk, except for SOME types of dark chocolate, so peanut M&Ms are out if you want to avoid dairy. I second the flourless PB cookies. Avoiding gluten-free baked replacements (that have alternative flours in them) early on in the process helps healing and makes the healing easier.

I agree...eat plain white rice, plain cooked chicken, hamburger or turkey. Cooked plain veggies (no raw veggies or frut), very little oil. Eat small amounts slowly. Maybe some applesauce. How about chopped macadamia nuts or chopped pecans? I always put nuts in my stuesel topping. And you could put flax in whatever flour you use for extra fiber to mimic the whole wheat flour perhaps... Sorry about the disaster... goes with the territory, I guess. I really like pumpkin pie without the crust. I would do that, except my darling son likes eating "normal" pie. The press-in crust was good, while the other crust I made for the apple galate wasn't very good at all. -

This is the first year subbing for dairy at Thanksgiving. I experimented and made a small portion of the Libby's recipe with coconut milk and a portion with evaporated milk for a taste test. Sorghum is the best replacement, IMHO. Or you could try almond meal if it is a small percentage of the total flour. I find it gives a good flavor and some fiber and protein. -

I STRONGLY agree with this - all first degree relatives should be tested anyway, but especially with carb cravings. I was the original carb addict and could have eaten only pizza and french bread all day long, everyday. And for the health of one daughter, the other (and other family members) might have to give up gluten at home in order to get the celiac... -

It looks like you've got some good docs and they are testing for the right things. When will you get answers? My grandfather was Type I and my son has the gene for it but has not developed diabetes to this point. Did you have any gene testing done? ~Laura -

Right, I haven't let him have any soy since he went diary free (except a little in margarine for baking) because it's so bad for developing males. He eats well, he's just not getting enough calories to gain weight. This is not to replace beef or other good protein, but as a supplement. My son REALLY needs to gain weight. We need a protein powder that is gluten-free/DF and not soy-based (it's ok if it has a little but not too much, as soy isn't good for males in puberty). I don't want to spend a lot of money on one that tastes yucky. Rice powder, hemp powder? Any ideas? Thanks in advance. ~Laura -
