    I know! How many countries are so far ahead of us in this, yet we've decided we know best? I think part of it is that our medical care system is so controlled by big pharma, and there's no drug to take to cure Celiac is there?

    I've had some success with turning off the oven and opening the door partway and letting the product cool off inside the oven.

    Anecdotally, I would have to agree with this. I used to get sick (before gluten free) all the time, bad. Minor colds for other people would be horrible for me. Now, it's the other way around. A bad cold could wipe out my office over a three week period, and I'd be sitting in my little corner sniffling lightly and feeling smug. Go figure?

    On the contrary, every third guest asks for a refrigerator. I spent six years behind the front desk of a hotel. In our case, we never charged for them, so this wasn't an issue. My understanding is that most places that will charge are what's called limited service, meaning the housekeeping staff goes home at 3, and so does everyone else except for one person...

    Got glutened yesterday by poor overworked waitress at a restaurant I had no business being in on Mother's Day.... tomorrow oughta be interesting. I haven't been glutened in over a year. Hopefully I won't wander into traffic or anything too hazardous....

    Fair warning= the Inn is a reservations kind of place on the weekend, woudn't want you to be dissapointed and get turned away cuz it's too busy! That's really only during tourst season, and I have no idea when that starts, just wanted to let you know.

    I would think any chocolate cake mix could be used, just use coffee instead of water for the cake mix, and put espresso powder in the frosting as previously suggested. Sounds good!
