  1. Celiac often appears after a severe physical or emotional stress. Have they at least blood tested you for celiac? If not call your doctors office and demand the blood test. Do not go gluten free until you have had all the testing you feel is needed as that will negate the tests. False negatives also are not uncommon so if the test results are negative...

  3. I personally wouldn't touch it but I don't tolerate distilled gluten. What I would suggest you do is to challenge it. Drink it three days in a row without consuming anything else risky and check for a reaction. Many of us can tolerate distilled gluten grains but some of us cannot.

  7. I have also had issues with Bob's Red Mill products. Before you go through the daunting prospect of checking for other intoelrance you may want to try some other brands. Gluten Free Pantry makes some good bread mixes and a great chocolate cake mix. Pamela's is also good if you can tolerate dairy.

  11. Heinz distilled vinegar is fine as it is derived from corn. It is the only one I use. I am one of those who are sensitive to distilled gluten grains in vinegar and alcohol. I always check it distilled vinegar is listed as an ingredient.
  12. I had kind of the reverse happen. Before I was diagnosed I caught every bug there was and most minor colds quickly developed into broncitis. My antibodies were so busy killing me that they didn't have the time to go after any viruses. That would be my guess anyway.   15. Listen to your body, it has given you the answer. A two week challenge is often not long enough to redo enough damage for a doctor to deem you to have celiac if you have had some healing.   17. If you have been gluten free for a couple weeks you may have a more intense reaction when you add it back in. If you should become severely ill from the challenge do let your doctor know. Some will have you stop the challenge. A dietary challenge is another valid tool in the road to diagnosis. Some doctors recognize this and some don't.

  25. Unfortunately they do not have to disclose anything but the wheat. If barley is used in a broth or as a flavoring agent it does not have to be disclosed. Same as with other foods. We have a long way to go for safe labeling regs for those of us with celiac.
