  1. I tried for a week but just couldn't take all those emails!!! They have some good information on the website - I've done' some browsing - just to pick up some ideas/hints.
  2. If you need to hear it from a doctor in order to commit to a life long gluten-free diet, then get a second opinion. You won't have to repeat the testing, they will interpret the results from your tests that have already been done. I once had a doctor that recommended 2nd opinions (at times - to put people at ease, a 2nd set of eyes, life long diagnosis...
  3. Congratulations, I know that after my first baking success is when I thought "OK, I can do this". I think the baking would throw most people for a loop. It's a whole new ball game to what you've previous learned (No "knead" to knead the gluten-free bread dough ). In the beginning, it's pretty expensive baking from scratch - there is a fair amount...
  4. Check out Open Original Shared Link. They have a support group that meets on the North side of Indy. The next meeting in September 23. I have not been to a meeting yet as my daughter is newly diagnosed but I am going to try to make it to that one.
  5. I always put choc chips in my pre-celiac banana bread recipe and they always dropped to the bottom half. I accidently bought the mini-chips recently and used those instead (also - now using a gluten-free recipe) and they seemed to do a lot better job of remaining evenly distributed. So . . . I do plan on just sticking with the mini-chips from now on.
  6. Most of the recipes that I have seen or tried said to let it rise to the top of the bread pan. Also, one of the problems with the gooey center is too much liquid in the recipe. Cut back on the water or milk. I'm definitely not an expert, but I have started making progress with the dense/gooey problem by cutting back a little on the fluid. It also helps...
  7. Taylor, Thanks for the post. It's great to see it from the point of view of someone that's been there.
  8. I don't consider myself a pro - fairly new to this, too. (I'll be watching for good tips, too) My daughter was diagnosed with about two months left in school last year. I notified the school nurse, her teacher, and the teacher's aid. Substitutes were not an in issue since the teacher or her aid were always there. The teacher's aid was also the lunch...
  9. That's some nice detective work! Thanks.
  10. Same for us - whenever my daughter goes somewhere she takes her own snacks (in her lunch box). You might want to let your daughter pick out a fun one that she will enjoy since she will be using it so much. Some close friends that my kids will visit often are willing to be educated (somewhat). I let them provide some of the easy, prepackaged stuff. They...
  11. length = 21 inches weight = 6 lbs 9 oz time of birth = 11:30 pm (stef's time) labor hours = 10 but she won't realize it until she's over half way through it (I read her post under the "nesting" topic ) natural date = I'm torn - first babies are late, but Stef has had preterm labor - hmmmm - I'll go with 8/20.
  12. I always freeze unfrosted (not Pamela's but the recipe that I use) and have never had a problem. My grandmother used to freeze cakes with the frosting still on it and the cake part would be fine and the frosting just fell off in chunks. I just got the William Sonoma bug pan for my birthday - the kids are really excited about it. That's a great tip...
  13. Length - 21 inches Weight - 7 lbs 3 oz Hair - Lots (How's the heartburn? a lot of heartburn is suppose to mean a lot of hair ) Time - 7:30 pm Angie's time Labor - 12 hrs (but you got a good night's sleep before it all started) vbac date - Aug 28th (That's my sister's) Good Luck!
  14. Whenever I make pancakes or waffles, I always make extra and freeze them for quick breakfasts for the kids. I put wax paper in between so that I can separate them. I usually defrost/heat them in the microwave, but a toaster would work, too, for waffles. When I'm making the ones to go into the freezer (after everyone's done eating breakfast), I usually...
  15. I had a vbac. My daughter WAS going to be induced fairly close to the due date (instead of the two weeks late). The doc didn't want her to go too late - get too big, because of the vbac risks. I didn't need to worry, she came 3 days before my induction date. Recovery was a piece of cake compared to the c-section. I drove myself and daughter to...
  16. If you feel up to baking, I used this one and thought it turned out great. So far, it's the only one that my daughter will eat even if it's not toasted. (She preferred her wheat bread toasted, too) Open Original Shared Link At this point, my daughter is the only one that has to eat gluten-free (son is being tested). The rest of us are eating gluten...
  17. We have a nearby Wild Oats and we are suppose to be getting a Whole Foods. I was looking forward to some new options. I hadn't heard of a possible merger. For the current status of the Wild Oats-Whole Foods merger: Open Original Shared Link
  18. From your description of the cake, it was obviously made by someone that had not made one before or they would have known immediately that it didn't come out right. And if it was made by someone that's never done it before, you know they don't understand the ramifications of cross-contamination. They could have even used regular flour to dust the cake pan...
  19. If you don't do it for yourself, do it for your son. He needs a healthy and happy mom. He may also need your support if he finds out later in life that he needs to go gluten-free. You need to be his best example and mentor.
  20. How long have you been gluten-free? You may be having a problem with the dairy. Also, I always make my potatoes in the same dish. Only a rice caserole that I make gets put in the same one. If I were to have a problem with that dish, those are the only two items that I would have trouble with. Are you using a dish/pan that may have been scratched up...
  21. I can only tell you what we did . . . My daughter had a positive blood test and inconclusive biopsy. The doc said visually, it wasn't enough damage to call it celiac but all of her sugar processing (not just lactose) was decreased. (He DID diagnose her with Celiac based on the blood test, reduced suger processing and iron and protein deficiency (indicative...
  22. Sent to me by a friend of mine. INSTRUCTIONS FOR GIVING A CAT A PILL 1) Hold cat firmly in left arm as if holding a baby. Position right forefinger and thumb on either side of cat's mouth and gently apply pressure to cheeks while holding pill in right hand. As cat opens mouth, pop pill into mouth. Allow cat to close mouth and swallow. 2)...
  23. Wilton has a cake pan for Cinderella and one for Ariel and Barbie (as a princess). There is also a pan that makes a cake/skirt for a Barbie that you can decorate anyway you want. And Zarfkitty is right - those shaped pans from Wilton are easy - they tell you what color of coloring paste to buy and tell you what icing tip number to use. Michael's and JoAnn...
  24. I mentioned to my daughter's dentist that she was diagnosed with Celiac and asked about the ramifications of it dental-wise. I was expecting a conversation about enamel defects, but she said she is most likely to suffer from canker sores (at least more than the average Joe). She recommended just coating them as needed with a little milk of magnesia (sp...
  25. I'm not sure about oven-baked, but I have a recipe for pan-fried that uses corn flour. It only called out corn flour in the recipe but I didn't want to put all my eggs in one basket so to speak and so I used 2/3 cup corn flour and 1/3 cup gluten-free flour mix (the basic rice flour - tapioca flour - corn starch mix). I thought it turned out great. Good...
