I didn't mean to imply that your phlegm/coughing came from dairy. If you know you have celiac disease or gluten intolerance, you probably reacted to the gluten contamination (from beer) in the 'boil'. I just wanted to explain how mucous and phlegm is a common antibody reaction. I have also heard others react with choking sensations after consuming gluten...

I had chronic postnasal drip and choking on phlegm when I consumed CASEIN (to which Enterolab tests showed I am intolerant). As soon as I stopped consuming all sources of dairy, my chronic sinus 'allergies', regular sinus infections (whenever I caught a cold) and stuffy nose all disappeared. Excessive mucous means our bodies are reacting to a perceived...

ARCHIVED Ibs Leads To Other Diseases....
burdee replied to danikali's topic in Coping with Celiac Disease
After being misdiagnosed with 'IBS' for 10 years, I learned I have gluten, dairy and soy intolerance as well as the celiac gene. Both my primary care doc (who misdiagnosed me) and the naturopath whom I saw when I first suspected celiac disease, rather than 'IBS', told me that IBS is NOT a disease. Docs assign that category for billing purposes when they... -
Hi Armetta: I have gluten, casein and soy intolerances. On potatoes I use casein/soy free margarine "SMART SQUEEZE" made by the Smart Beat Company. On sandwiches I use Nalley's Light Mayonnaise which is made from canola oil and is sugar free (no soy). Also Spectrum Naturals makes a canola based (no soy or dairy) mayonaise, but not the 'canola light' variety...

ARCHIVED Please Help With This Constipation
burdee replied to BRUMI1968's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Sherri: Oral magnesium supplements worked for me and others. It may take awhile to restore really low magnesium levels. However you should see some improvement soon. Take Mg in divided doses with meals. Taking too much all at once may increase gas and bloating. The idea is to slowly increase the amount in your bones and muscles. The body will slough... -
ARCHIVED Please Help With This Constipation
burdee replied to BRUMI1968's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Monica: I had similar symptoms (cramping, gas, spasms and bloating) before I went off gluten/dairy/soy, but still has those symptoms occasionally with absolute abstinence UNTIL I started Magnesium aspartate. Magnsium does control smooth muscle contractions (like intestines). So Mg may help you also. NOT Magnesium Oxide which is the most readily available... -
ARCHIVED Gig Moving Feet W/o Wheat Seattle Walk
burdee replied to tarnalberry's topic in Publications & Publicity
Hi Tiffany: Thanks for your feedback. Today I'm doing 'Monday Morning Quarterbacking' about what went well and what I can improve about the walk. I may change the shirt color for variety, but choose another bright, visible color like coral. I've already considered a slogan which will incorporate 'celiac' in the words. I enjoyed the shirt. I liked... -
ARCHIVED Please Help With This Constipation
burdee replied to BRUMI1968's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I struggled with chronic constipation for YEARS ... so long that I needed hemorrhoid surgery 6 years ago. I drank copious fluids and ate tons of fiber long before I needed hemorrhoid surgery, but the fluid mostly went to urine. So I had very fibrous HARD, DRY stools. For 10 years my doc misdiagnosed me with IBS with constipation and recommended I eat bran... -
ARCHIVED Gig Moving Feet W/o Wheat Seattle Walk
burdee replied to tarnalberry's topic in Publications & Publicity
TIFFANY: I was sooo looking forward to meeting you ... I wish you would have introduced yourself to somebody and asked for me ... I was the one with the red and white flower kerchief on her head who led the walk after Wayne Havrelly's tv speech kick off. I organized that entire GIG Celiac Awareness walk. We set up at 7am for rain with that 'rain emergency... -
I am gluten, dairy and soy intolerant. After a year without chocolate (which contains both dairy and soy lecithin), I discovered those ELF chocolate chips, Ener-G Foods chocolate chips and ELITE bittersweet chocolate bars. Those bars are made in Israel and are kosher (no soy or dairy). I buy those at a local grocery store which has a fantastic kosher section...

ARCHIVED Does This Happen To Anyone Else?
burdee replied to L.A.'s topic in Coping with Celiac Disease
Hi LA: Your signature included "GI told me that he has four other patients just like me who have all the symptoms of celiac and whose overall health is greatly improved by going gluten free, but just don't have the intestinal damage that goes along with classic celiac." Maybe your GI should question how he's doing the biopsies, rather than just assuming his... -
I LOVE this topic. I had to add my stupid naturopath's comment after I told him about my excruciating (bits of broken glass stuck in my intestines) pains from celiac contamination. He said: "There's no pain receptors in the intestines. You're only experiencing a little pressure from gas." I was VERY tempted to kick him in the gut and say: ...

ARCHIVED ? For Thise With Soy Intolerance
burdee replied to ebrbetty's topic in Coping with Celiac Disease
I also have dairy and soy intolerances. Enterolab tests detected casein to show my dairy intolerance, but painful experiences when I tried to substitute soy told me I had soy intolerances. Almond Breeze chocolate milk contains soy lecithin. I'm not sure but maybe the Almond Breeze Vanilla flavor also contains soy. Some people can tolerate soy lecithin... -
I've read and observed that binge eating is common among ANYONE (not just celiacs) who feel deprived by weight loss diets or health related (celiac) restrictions. When I first was diagnosed with celiac disease, I feared I would return to binge eating, which I used during years of dieting to control weight ... yeah, viscious circle there. So I found gluten...

ARCHIVED Anyone Else Not Really Gain Or Lose Weight After Becoming gluten-free?
burdee replied to jkmunchkin's topic in Related Issues & Disorders
I had lost about 3# when I had very painful symptoms, before going gluten free. Then I gained back 4# in my first few weeks abstaining from gluten. Now I stay in the same 3# range. I've been 105-110# at 5'4" for 38 years, so I didn't really expect a big weight change. Besides I like my clothes and can't afford many new ones. BURDEE -

ARCHIVED Toothpaste & Mouthwash
burdee replied to Silver-naki's topic in Gluten-Free Foods, Products, Shopping & Medications
I only use the Tom's of Maine 'kid' flavors because all the adult flavors contain mannitol (or another sorbitol like artificial sweetner) which gives me intense cramps and bloating and diarrhea (which I don't even get from gluten or dairy or soy). I read in 'Dangerous Grains' how celiacs with 'leaky gut syndrome' are often sensitive to the 'tol' artificial... -
Hi Liz: I lead a celiac support group in Bothell, WA. I assumed leadership of that group from another gal who just started meetings at Kaili's Kitchen, a totally gluten free restaurant in Edmonds. Hers was NOT an offical GIG or CSA group, but was well attended. I began leading in August after attending that group for awhile. I would LOVE to answer any...

ARCHIVED Top 5 Naturally Gluten Free Foods
burdee replied to JessicaB's topic in Coping with Celiac Disease
You asked for specific, naturally gluten free foods. So here's my top 5 favorites: King Salmon (from the Pacific Northwest) brussel sprouts (fresh from my garden) Lundberg brown rice mixes (any) avocados (esp. in my homemade guacomole) bosc pears (from local orchards) I could go on and on, but this month, those stand out. Hmmm ... if I... -
I was soooo sorry to read that you unintentionally continued to consume gluten in the Bob's Red Mill Carob Powder and kept getting symptoms and losing weight. But please don't be too hard on yourself. Your physical symptoms are enough punishment. Many of us have accidentally ingested gluten whether by cross contamination or not reading labels carefully...

ARCHIVED Abdominal Distention?
burdee replied to FaggieFresh420's topic in Coping with Celiac Disease
Hi Rae: I KNOW celiac belly bloat influenced my negative body image (feeling 'fat' at 5'4" and 105#) which kept me focussed on calories when I should have been avoiding GLUTEN. Over 19 months ago I learned I had celiac disease. Then Enterolab tests also indicated DAIRY intolerance and trying to substitute soy for dairy indicated SOY intolerance. After I... -
ARCHIVED What To Eat For Breakfast?
burdee replied to melisadki's topic in Coping with Celiac Disease
There are several other topics on this site about breakfast menus which you might check. I also must eat balanced protein, fats, carbs and fiber breakfasts because I easily get reactive hypoglycemia. I just don't want to take the time to prepare eggs. So I often have peanut butter and sliced fruit or jam on a gluten free English muffin. I like Ener-G Foods... -
ARCHIVED Want To Find/create Recipe
burdee replied to burdee's topic in Gluten-Free Recipes & Cooking Tips
Thanks. That was gutsy, yet gooey ... but I LIKE gooey! I considered just trying the ingredients in small batches until I got the right proportions for the desired texture and taste. Thanks for giving me an idea of how much nut butter, how much sweetner, how much grain (I'd use rice bran rather than flax meal) and how much of the other ingredients. ... -
I'm addicted to an energy bar baked fresh by a local organic grocer/bakery. I don't think they would share their recipe, but I pay $6.99 per pound. So I buy the smallest 'bar' and divide them into tiny pieces. Yet the ingredients don't seem that difficult to combine. I'm just not sure of the proportions. They contain: cashew butter, sesame seeds (toasted...

ARCHIVED Which Types Of Cow Milk Alternatives Are Best?
burdee replied to mightymorg's topic in Gluten-Free Foods, Products, Shopping & Medications
IF I could tolerate soy, I'd choose soy dairy substitutes because many have high protein/ high fat varieties which I prefer. UNFORTUNATELY I react to and must avoid all forms of soy. Rice milk seems completely worthless for cereals. It's high carb, low protein and non fat. Why would I want to add more carbs to a basically high carb (usually rice based...
