ARCHIVED Do You Ever Cheat On Your Gluten Free Diet?
GFinDC replied to karinp's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Jeffy, It sounds like you are doing pretty well with avoiding gluten., For eating out I sometimes take my own food with me, or eat before hand and just get a drink or a side dish of veggies. I sometimes take fruit when I go out as it is easy to carry. I think it is harder when you don't have symptoms to be sure that you are gluten-free. Just no... -
ARCHIVED Super Easy Meal Ideas Anyone?
GFinDC replied to KnightRobby's topic in Gluten-Free Recipes & Cooking Tips
1 can cooked black beans 1 can mackeral Herbs Garlic powder (or fresh if you are that way) Salt Black Pepper Tortilla chips Throw all that in a pot, except for the tortilla chips. Put the heat on low and breakup the fish with a spoon into small chunks. If you pour the water/juice out of the can of fish first it makes a pretty nice, thick... -
ARCHIVED Elimination Diet So Far, Is It Gluten Or Wheat?
GFinDC replied to SandraLAVixen's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Right, staying gluten free needs to be a couple weeks at least for your test.. A month or more would be better. The immune system reaction kicks in quickly but doesn't stop quickly. So you have to allow it time to die down before testing something else. It would be much simpler to stop all gluten for 3 months and then add one food back in for a week... -
Carrots bother me too. So I don't eat them anymore. With celiac disease the damage to the gut can lead to food intolerances of many kinds. Carrots are one of them, for some of us.

GFinDC replied to samanthasouth's topic in Introduce Yourself / Share Stuff
Welcome to the forum Samantha! Feel free to ask questions and someone is pretty likely to have an answer, or make one up. Going gluten-free is quite a journey and it helps to have some friends in the same boat. We can all paddle together. -
ARCHIVED How Do You Decide?
GFinDC replied to 1desperateladysaved's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi D-Lady, I am more of the 5 year recovery plan type myself. I had periods of feeling better and feeling worse. Notice I am using past tense Yahoo! I have quite a few intolerances, most of them developed after going gluten-free. I pretty much stick with the minimum 6 months for a retrial of a problem food, if I am really interested in eating that... -
ARCHIVED Why I Still Eat Bread...
GFinDC replied to SandraLAVixen's topic in Coping with Celiac Disease
Hi Sandra, The being hungry feeling could be related to blood sugar issues also. If t is, then eating bread / carbs is not good for you. You could ask your doctor to test you for blood sugar reactions. Or you could get a glucose meter for about $30 at a drug store. They make some pretty cheap ones now. The way to test is to test before eating, an... -
ARCHIVED Please Help, Major Stomach Issues
GFinDC replied to MATT1983's topic in Coping with Celiac Disease
Hi Matt, It might help to take some probiotics. I suggest trying some deglysternized licorice (DGL) for the ulcers and mastic gum. Antacids are not real helpful for your condition. H.Pylori likes a low acid environment and that just lets it thrive. I take Betaine HCL for my H.Pylori to help kill it. And I sleep on my side that hurts so the stomach... -
ARCHIVED I"ve About Had Enough Of This !
GFinDC replied to ncdave's topic in Coping with Celiac Disease
Hi Dave, It is easy to test if the corn is the problem. No need to guess. Just eat some corn meal mush every day for a few days. Plain polenta is easy to find and would work well for a test. If it's a problem you will know shortly. How about the nightshades? Have you dropped the idea of eliminating them? -
Reactions can be delayed, and show up a few days later. So you may have set things in motion the first time you ate it, and got the full brunt the next time you ate it.

ARCHIVED Do You Ever Cheat On Your Gluten Free Diet?
GFinDC replied to karinp's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi, Welcome to the forum. Some people do have actual withdrawals symptoms form gluten. If you keep eating gluten occasionally you will just keep that withdrawal issue alive. It's kind of like smoking, if you quit, you quit, because doing just one is not easy. The other thing is the autoimmune process starts and stops, but it starts fast and stops slowly... -
ARCHIVED Introducing Myself While I Wait For Test Results
GFinDC replied to KC in KC's topic in Introduce Yourself / Share Stuff
Welcome to the forum KC! There is lots to learn here about celiac disease and gluten intolerance. And eating gluten-free for that matter. Your budget should be fine if you stay away from processed foods and concentrate on whole foods and cooking them yourself. Cooking is going to be important for you so you can know what is in your food rather than... -
ARCHIVED Last Ditch Rant.... Con't
GFinDC replied to Littllemel's topic in Food Intolerance & Leaky Gut
Antibiotics kill the bacteria in your gut, both the good and the bad. You can take probiotics every day to re-establish the good bacteria. Avoiding sugars and carbs for a while would be a good idea also. I suggest you load up on probiotics and drop all sugar for a while. Several weeks at least. -
ARCHIVED Pre Diagnosis Topic #100000000
GFinDC replied to IMissBigDirtySandwiches's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi, welcome to the site. You have learned one very important thing already, you feel better when you don't eat gluten. That in itself is the real information you need to be healthier. A diagnosis might be "nice" but it won't change the reality that your body does not like gluten and reacts badly to it. Have you gotten the results of the endoscopy? ... -

ARCHIVED Arsenic In Rice?
GFinDC replied to rachelh4207's topic in Parents, Friends and Loved Ones of Celiacs
From the article: So what's a parent to do? To reduce arsenic risks, we recommend that babies eat no more than 1 serving of infant rice cereal per day on average. And their diets should include cereals made of wheat, oatmeal, or corn grits, which contain significantly lower levels of arsenic, according to federal information. Well, corn grits or... -
ARCHIVED Whats The Deal With Corn
GFinDC replied to buckwheat's topic in Gluten-Free Foods, Products, Shopping & Medications
Short answer, no, corn gluten does not affect most people with celiac. Corn is a grain, so it has gluten in it. However, it is not the kind of gluten that affects most celiacs. "Gluten" is a generic term for a carbohydrate and protein that are joined together to form a large molecule called gluten in grains. In that sense, every grain has gluten.... -

ARCHIVED So Frustrated
GFinDC replied to Reddino83's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi Red, There are apps like findmeGF. And there are groups like the CSA (Celiac Sprue Association) NFCA (National Foundation for Celaic Awareness), GIG (gluten intolerance Group) etc. But I agree with the previous comments. Right now you are just starting the gluten-free diet, and it takes a while to understand how to avoid gluten in your diet. The... -
ARCHIVED Any Help Appreciated..
GFinDC replied to Jodster72's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi, Great job writing up your symptoms and history. It sure sounds like celiac disease to me. However, even if it isn't going gluten-free is a great, healthy diet and can help you heal. I used to have fainting spells that doctors couldn't explain. They stopped after I quit eating soy. Celiacs can develop food intolerances to many different foods in... -
ARCHIVED I"ve About Had Enough Of This !
GFinDC replied to ncdave's topic in Coping with Celiac Disease
Hi Dave, If you can find Hain brand Safflower oil mayo that might be good for your meals. It's the only mayo I know that doesn't have either soy or potato in it. Hellman makes a canola oil mayo but it has potato last I checked. I like to make soup with sweet potatoes. They get soft and you can stir them up to make a thick soup. Makes for a rich... -
Hi Wystearya One thing I used to do is make large pots of rice and veggies and meat. I finally figured out that it was better not to add many spices to the big pot of rice. Instead I put them in the bowl of food when eat it. That way if I react to a spice it is only that one bowl of food not the whole shebang. Less is more as they say.

ARCHIVED Mass Confusion After 4 Years
GFinDC replied to laurajojetter's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yep, I noticed, but she said she got no direction from her doctor and was thinking of starting from scratch. Maybe something in there will help her, maybe not. I suppose I could have taken out the line about the first 6 months tho, that is certainly not right.
