  1. There is a condition called refractory celiac, where they immune system doesn't seem to know how to back off when the gluten is removed. You could have that I suppose, but it is supposed to be very rare. Have the put you on any immuno-suppressants? That might help if you are still producing antibodies. I am not a doctor either but my brother had both...
  2. Hey Zack, From what I've read here, neuro symptoms like ataxia can be kinda slow to go away. So, don't expect them to clear up in two weeks. They may improve tho. When you want to check a product, try Google like was suggested, and you can also check the nutrition info on the manufacturers site. Or the FAQ which often has a blurb about gluten content...
  3. Yes, it is normal for it to take some time to feel better after going gluten-free. Some people feel better very quickly, others take a long time. You are not throwing a light switch, so don't expect it to be instantaneous. There are real biological changes going on in your body.   6. I think everyone is at least a closet artist. It seems to me that all kids like to draw when they are young. Even if it is stick figures they like to do it. Then at some point most of the kids get turned off on drawing for whatever reason. So they become repressed artists. So my figuring is that there are lots more artists in reality than ESL teachers...

  8. Food allergy testing is not a bad thing, but it won't tell you about food intolerances. Allergy tests are based on an IgE immune response, vs food intolerances which are an IgA, IgG etc response.

  11. That's great that you are finding things you enjoy eating. You may find that your appetite for food diminishes some over time on the gluten-free diet. That might happen if your intestines heal and you begin absorbing nutrients (vitamins/minerals) that you were low on before. No guarantee that will happen to you, but it could.   13. You have only been gluten-free for 3 weeks! Don't expect to learn everything you need to avoid and also heal in just 3 weeks. Your body needs time to adjust and so does your mind. Keep going and try some probiotics once in a while. And keep reading here on this forum, including older threads.

  16. Hey Beth, I was vegetarian for 5 years. But I went back to eating dead animals and wouldn't change that. I think they are really yummy! It is much easier to get the protein you need if you eat meat. I can't eat soy so most vegetarian meals are out from the get go.   17. You are just starting on the gluten-free diet. Your instestinal flora will adjust to gluten-free over time. It wouldn't be a bad idea to take some probiotics though to help with the adjustment.

  23. I have digestive symptoms from dairy also. I used to not be able to sleep if I ate any dairy, it kept me mentally wired all night. I don't eat it tho. You can try an elimination diet to learn what foods are problems for you. There are tons of threads on them.
