  1. What it comes down to is......We eat funny looking sandwiches. There are myriad different recipes and bread pan shapes, both conventional and bread machine. Matching them up so they work together is a real trip. Each gluten free flour has its own characteristics.
  2. Uhm, ah, no. Many companies make B vitamin mixes with way over the recommended daily amount, so that won't hurt you, but a normal person will feel pukey on that much iron. Wow. Of course at one point I was sucking down blackstrap molasses like manna from heaven.
  3. You said earlier this month that you were getting another set of blood tests for celiac.... what were those test results ? What tests were done besides genetic ? You should have a blood test for celiac antibodies, if you feel you "need" more tests to confirm, this is ridiculous. No doctor should be looking at symptoms AND a positive biopsy as your...
  4. What sized loaf pan was used, and was it metal or glass ?
  5. We are a peer group and some of us have had scientific training.... and restaurant training.... really, there's lots of places to play around with the denial games on the internet besides here, and I can direct you back there if you want to make those types of friends! The best thing somebody has said to me in the past year was "I just can't keep up with...
  6. Oh. My. G*d. Bras. Straps. I tried switching brands of deodorants and had the mother of all reactions to the new "organic natural" stuff. It seems to be complicated by using a razor with one of those lubricating strips to shave with. I had to stop using anything on the skin there for a few days, and have been limited to using a little bit of baking...

ARCHIVED Saw My New Pcp Today..

These docs love to ship people who don't know any better around on referrals. The next gastro doc will tell you you only have IBS, after testing you when you've already been off gluten, so the test won't be accurate. It's near criminal behavior.
  8. I sleep when I am tired, instead of trying to sleep whenever everybody else is. Heck, the **** dogs sleep all day, snore snore snore. The cat is asleep now. I've seen the horses go down for naps mid morning to mid afternoon after they were up grazing at night, why fight the trend ? My spouse has to get up really early sometimes to talk to people in...
  9. lovs2travel, have you tried sleeping in alternative positions other than lying down? When I need to be able to move readily the next day without a 4 hour warmup, I will sleep sitting propped up with my head blocked carefully by pillows so my neck doesn't get torqued if it tilts off to one side. I will have another pillow under my knees so the net effect...

ARCHIVED Saw My New Pcp Today..

You don't have to see this ongoing disaster of an excuse for a medical professional again, do you ? There are just as many celiacs and gluten intolerants in Ohio as anywhere else, but obviously they are never going to get diagnosed because this is what is coming out of the medical profiteering industrial complex. Do you want somebody to rebut every...
  11. For future reference, The date for the article link above on the test results of gluten content on Sami's Bakery (Florida) products is September 2011. I really wish Tricia Thompson MS RD would start putting the date on all her newsletter blog posts at glutenfreedietician.com. While looking at some of the newsletters listed, I noticed she had one ...
  12. You make perfect sense to me : ) I haven't puked up a positive blood test..... just bad brain scans and spinal stuff.... oh, and the neuro symptoms...... after years of avoiding the stuff, and having some sort of spontaneously unexplainable to the medical profession "cure," (neuro from hell
  13. Maybe try her on a gluten free B complex vitamin, too.
  14. Sami's -They are not a gluten free bakery. Look again. They do a lot of wheat mixtures, low carb and millet and flax stuff, for people wanting more fiber and fewer calories in their bread. That flatbread item on their website is not listed as gluten free on its product description page, it just says millet and flax lavash Open Original Shared Link ...
  15. Sounds like a two- fer. Amy's is sort of notorious for sensitive people, it usually only takes one experience.... sorry about that.
  16. Gluten free flours, no matter what the mixture, tend to behave differently than regular flours when going thru a cycle of preparation that is supposed to end up being "bread." Kneading doesn't do a thing for it, because kneading is to make the gluten protein in wheat act a certain way, become more stretchable, and there is no gluten. There is xanthan...
  17. You can bake gluten free fresh breads and cakes in the microwave, using a cereal bowl or very small casserole ramekin or a mug. Easy and fast. Bun in the Bowl, microwaved You can use any sort of gluten free flours with this, because the egg is binding enough that it won't crumble. If you cannot use egg, you can try a mixture of 1/3 each...
  18. Lots of us out here without the "official" diagnosis. Yeah, they want to see you 3/4's dead and strung out on every medication before they'd acknowledge that something could be causing this. You're seriously trending celiac/gluten intolerant with those symptoms, genetics and blood tests already. If you feel better off of gluten, don't eat it. ...
  19. Good grief, you are making this more complicated than it needs to be - just where are you located ? Google "feed store name of your town" or "farm and feed supplies name of your town" or "hay and feed name of your town" or "pet food dealers name of your town." or "horse feed name of your town." "goat feed name of your town." Find a store. A...
  20. Yup! Farmer's Kitchen. Very good food, but not real fast service, but that is okay. Adjacent to gluten free bakery. Mariposa Bakery in Oakland, CA has a few sit down seats and you can get a bagel and coffee or pizza slice there at lunch. Anza Bakery in Cameron Park, east of Folsom, CA also has some tables and you can get coffee with your treat...
  21. You can do a work- around for this by putting the yeast in warm water to dissolve it, then mixing it into the dry gluten free flour mixture and doing a very long, slow rise. You may want to sweeten some of these breads a little bit with whatever you can tolerate, even a bit of artificial sweetener or stevia, as some of the higher protein flours taste better...
  22. Sometimes the substitute gluten free ingredients that are used in commercially prepared gluten free baking do not agree with the newly gluten free eater. Try sticking to foods that are as unprocessed as possible, such as meats, fish, eggs, fruit, vegetables, nuts, and going easy on the grains at first. Maybe just stick to rice, potatoes for the carbs....
  23. We have a gluten free kitchen after my husband volunteered to go gluten free at home, to avoid cross contamination issues, after he saw how 1 reaction could wipe me out and ruin a weekend. Much easier this way. He's still gotten me a few times that we have not figured out how, other times we do figure it out, but it is a lot less.
  24. Stick with the gluten free diet. There is no "wonder drug" to deal with this. I wouldn't "assume" with the B vitamins. Take the B vitamins, the multi, the calcium, magnesium, and D, in gluten free. I've gotten over enough of the neuro symptoms that I can now concentrate and touch type and write, something that wasn't possible a decade ago. ...
  25. I experienced the same phenomena, lots of uti's & infections. Was likely caused by my body harvesting calcium out of my bones to keep the blood levels up, because I probably wasn't absorbing it properly (my theory) and then the kidneys filtering it out. Lots of crystals in my urine. Calcium/mag supplements helped a little, but going gluten free was...
