  1. I agree with all the Rice Guy has said, he always gives good advice so all that I have to add is to keep a food diary and become your own detective at what is bothering you. You are so new into healing and sometimes its best to keep it simple in the beginning with all fresh foods. As Rice Guy says citrus fruits can be hard to digest for some (I still can...
  2. Hi Jessy, I actually eat a lot of stuff. As for the soy, soy lecthicin and soybean oil does not bother me. Its products that contain the soy protein that I generally stay away from. A little soy sauce (like a tsp on rice) doesn't bother me either but a glass of soy milk would give me stomach issues very quickly. So maybe i should say soy lite in my signature...
  3. Just curious, I am casein/dairy intolerant and can eat all eggs. Eggs are not dairy and do not contain casein. That said some people are allergic to eggs as a separate category. I don't eat the egg beater ect. so not sure if casein is added to them??
  4. As with another post, for ME, clarified butter works and doesn't give me the GI symptoms that unclarified does. It removes the proteins and lactose. I make my own (commercial is very expensive)and store it in a glass jar that doesn't need to be refrigerated. I haven't baked with it yet but use it on my toast, stir fry recipes etc. I am very sensitive...
  5. That's awesome Bosque! Thanks for sharing!
  6. Clarified butter works for me. It removes the milk proteins and lactose. I find it cheaper to make myself with salted butter (salted butter has less milk proteins). I store it in a glass jar and it doesn't need to be refrigerated. If you are super sensitive you may want to buy it commercially because you have to remove all the white protein that settles...
  7. I agree with everyone that a dairy free trial could be beneficial to you. I would totally eliminate it for at least a month, diligently reading labels for casein, whey, lactose etc. and seeing if that helps. A food journal also helps keep track to see if anything else may be bothering you such as soy, fructose, etc. It was well worth it for me. Hope you...
  8. I didn't give up dairy at first and after 4 months of feeling great, got the old symptoms back again. I gave up dairy but always cheated and never got full relief until I diligently got serious and checked every lable for casein, lactose, whey etc. You will be suprised at how many products have hidden dairy in them. For instance on vacation, my mother...
  9. I have to say that for a very busy corporate restaurant (I usually always eat at independents) I was impressed last Friday night. The cook came to my table to discuss my mahi mahi being both gluten and dairy free since they blacken the mahi in butter. He suggested that they bake it. I asked for olive oil but they don't carry it so I had it in canola and...
  10. Thanks for posting David. My son announced yesterday that he wants to go there next Friday for his birthday and I was wondering what on earth I could eat there since I am also shellfish intolerant. The blackened Mahi Mahi sounds like a winner for me!
  11. Hello and welcome! Sounds like you have figured out the culprit in added gluten free foods but now which ingredient? I used to think it was xanthan gum but I can handle the food for life brown tortillas that have xanthan so I'm thinking guar gum or yeast. I too found out years ago when I went on a low carb diet that I felt fabulous. You could become a...

    ARCHIVED Dr. Scot Lewey

Don't know him personally. He is a frequent diner at one of my restaurants. The Colorado Springs Celiac support group leader, Val goes to him and absolutely loves him! The only problem is the year waiting list to see him! He does have other staff members that work directly with him if you want to get in sooner.
  13. My son has been working at Taco Bell for over 3 years now, while going to college. He always says "you can't eat anything there mom, cc is a big problem". If you are not sensitive to cc then it maybe okay with the safe things they list on the website.
  14. I have a problem with Soy too. I can however (and others too even those allergic) tolerate the soy lethicin that is in the Pam Spray. Soy lethicin does not contain the soy protein so it doesn't bother me. I've also heard that soybean oil does not contain the protein but don't know for sure. Others may chime in. Glad you are discovering your other tolerances...
  15. I also learned this little tid bit from the IBS forum.....by saying you had to cut back because you went the other way.....do you mean taking the three a day Caused diarrhea? I was doing fine on 3 a day until recently....now the watery diarrhea is back with a vengence. I have had the flu so it may be due to that. Who knows with this difficult disease?
  16. I almost started a topic similar to this one. I can't take vitamins either but for me it is all gastro symptoms not fever etc. 2000mg is a lot of vitamin D but you can get most of it from drinking 2 glasses of calcium fortified orange juice (minute maid), 2 glasses of milk (if you can do dairy) and spending 20 minutes in the direct sun with no sun protection...
  17. It's a good idea to go the doctor. It could possibly be a bacterial infection. My daughters friend who is twenty has had diarrhea for over two weeks and went to the E.R. and found to have a bacterial infection in her colon. When stress triggers my IBS symptoms, I can get diarrhea everyday but its only usually in the morning which is a typical IBS pattern...
  18. A good test for the milk is to only drink a big glass of milk in the morning with nothing else and see if you get any symptoms within the next 3 hours. If you do get symptoms, try it again the next morning but take a lactaid pill first and see if it helps. If you have no reactions on the first day and you have already been tested for casein then I would...
  19. Sorry that your still having problems. I am not sure of your age, but I read in Dr. Green's book, I believe it was called "Celiac, the Hidden Epidemic" that it can take up to two years to heal in adults. I am a little over a year and although much better, still dealing with lactose intolerance etc. Of course be diligent on finding hidden gluten, but you...
  20. Hello and welcome! Just a thought, since you say you drink a lot of milk, have you looked into Lactose Intolerance? It would have to do with the milk sugars not the protein casein. I am still lactose intolerant after a year of being gluten free and keep waiting that hopefully I can bring it back in my diet again someday. Lactose intolerance will bring...
  21. I was told to eliminate any unnecessary vitamins, supplements etc and just do the caltrate d for 3 days and see how it goes. You can add back in the probiotics if you think you still need them later. Good suggestion on eliminating the fruit for awhile too! Hang in there and keep us posted!
  22. Something you may want to consider. I discovered this little trick on the IBS forum and it does work for me (I still deal with the IBS issues from time to time when I am really stressed out). I take caltrate D 3 times a day WITH my meals and it really worked but had to cut back to twice a day because I went the other way. It has to be calcium bicarbonate...
  23. Hi David, Although I feel great gluten free I still battle with IBS from time to time and it doesn't matter what I eat causing gassy distended stomach etc. I also belong to ibsgroup.org when I am having IBS issues, its a great forum like this one, with many intelligent helpful people. You may want to surf there or possibly ask their experts what...
  24. I use the Enzymedica's GlutenEase, it has DPP-IV activity. It is a protease enzyme which helps break down caseine and gluten. I only use it when going to a restaurant or to someone's house. I found it to be of benefit such as only getting a little gas instead of the whole shabang in symptoms if accidentally glutened. Its meant to be a a little safegard...
  25. Sorry Henny that you are going through some tough times. I am gluten free over a year now and still have some bad days. Lactose Intolerance hit me too around 4 months and I still haven't been able to add it back. I am not sure of your age, but I am over 40 and have read that for adults it can take up to two years for the villi to heal. I too have had...
