  3. In the USA modified corn starch is made from corn and is gluten-free, but if it is ever made from another source it needs to be labeled that way, for example: modified food starch (from wheat).
  4. The nuts are likely naturally gluten-free and safe because they would need to put an allergen warning label for wheat, if there was the possibility that there could be any wheat contamination.
  5. It is certainly possible that there is another gastro explanation for your eczema, and perhaps treating the SIBO will help it improve. Since you are already gluten-free are you also making sure that you are on a low iodine diet, just in case it is DH? Iodine in sea food, dairy, salt, etc., can cause DH flare ups.

  9. I think you should definitely be screened for celiac disease. Many celiacs have no symptoms at all, but since you do have symptoms and have linked them to eating gluten, it's possible that you have celiac disease or non-celiac gluten sensitivity.   10. Just FYI McDonald's fries have never tested positive for gluten, and Hydrolyzed Wheat is considered gluten-free, especially in the levels used in their beef flavor.   23. I agree, if you are going to do at gluten challenge to be tested it must be done according to protocol, or you will suffer needlessly and get unreliable results that could lead some to start eating gluten again (after their doctor tells them they have negative results!). More info is here:
