ARCHIVED I Need Help Cooking gluten-free Pasta
BethJ replied to RachelisFacebook's topic in Gluten-Free Recipes & Cooking Tips
I bought two of the microwave pasta cookers and will never go back to doing it on the stove-top. I can cook my husband's gluteny pasta in one and do my gluten-free pasta in the other. I marked mine so there will never be a mix-up. It may take a little experimentation with the gluten-free pasta. All microwaves are different and different types of gluten... -
Don't get me going on this type of drug! My doctor put me on Fosamax and within three weeks I could no longer walk around the block without feeling like I was going to collapse. By the 3rd or 4th week, I had to stay in bed a day every week. Then I started putting two and two together and realized these symptoms hit me 2 to 3 days after I took the weekly...

I learned the hard way when I first went gluten-free. I ordered a salad but forgot to ask for no croutons. When it came, it only had a few so I carefully picked them off. Oh boy, big mistake. I thought I had gotten them all and I didn't see any crumbs but I was sick for the next two days. Whenever I react after eating out, I figure a stray crumb got in there...

ARCHIVED Hope I Don't Offend Any Of You Southerners, But....
BethJ replied to Monklady123's topic in Coping with Celiac Disease
Yes! Grits . . . it's what's for dinner! Fried grits are great although I rarely make them this way anymore. I dipped my cold squares or patties into a beaten egg and then fried them in butter. Mmmmmmm. Do yourselves a favor and buy regular grits or at the very least, quick cooking. Instant grits taste like the package it came in. The regular ones... -
Thanks, everyone. I'm leaning toward cross-contamination. They were extremely busy that night. I've reacted there before and it always was a mystery. I wish I could remember if I had anything from the bar on those occasions. Sometimes my husband orders a drink at the bar while I'm being seated. Before I had to give up alcohol, I use to enjoy a glass of...

We went out for an early dinner on New Years Eve to an upscale local place we've been to a number of times. The place was packed and we had to wait in the bar until our table was ready. I ordered a club soda which came in a large glass. I ordered my usual fish, baked potato and salad without croutons. Nothing out of the ordinary. Later that night, I was...

ARCHIVED What Is The Physiology Of Non-Celiac Gluten Intolerance?
BethJ replied to dws's topic in Coping with Celiac Disease
I saw this article earlier today. It looks like the damage goes on whether you're formally diagnosed or not. The gluten-free diet seems to be imperative for "potential" celiacs. I would think this includes those who are gluten intolerant. https://www.celiac.com/articles/22389/1/Study-Supports-Gluten-free-Diet-for-Potential-Celiac-Disease-Patients/Page... -
ARCHIVED I Miss Lindor Chocolates :(
BethJ replied to JillianLindsay's topic in Gluten-Free Foods, Products, Shopping & Medications
I've never had any problem with Ghiradelli chocolates and squares. Be sure to read the ingredients panel to be safe, but I've never seen anything questionable in the ones I've tried. -
You make a very good point.

After I wash and trim them, I put them in a glass casserole along with a few cloves of minced garlic, a little extra virgin olive oil and salt. Cover and nuke for 6 - 8 minutes, stirring occasionally, until done to your preference. No added water means they retain their vitamins and flavor. This is almost as good as the ones fried in olive oil but without...

ARCHIVED How Did You Feel After 6-Months On A Gluten Free Diet?
BethJ replied to gifree's topic in Coping with Celiac Disease
I voted "good" because I was feeling a lot better, but it took over a year - and maybe close to two years - before I could say "great." I think I was ultra sensitive to more than gluten at first and as I slowly healed, some of these sensitivities have abated. Or maybe I'm just more careful. -
ARCHIVED Nestle Butterscotch Chips Got Me
BethJ replied to Frances03's topic in Gluten-Free Foods, Products, Shopping & Medications
We need to work together . . . I never add enough water and end up with a gloppy mess. -
Thanks for posting this. I will avoid Red Lobster like the plague. Any restaurant that can't provide broiled fish, broccoli, asparagus and a shrimp cocktail without adding wheat isn't a place where I'll spend my money. What on earth are they doing to the broccoli?

ARCHIVED Poll: gluten-free Diet - Easy Or Hard
BethJ replied to tarnalberry's topic in Coping with Celiac Disease
I've been gluten-free about 2 1/2 years now. At first it was hard. I was constantly afraid to eat anything without checking here or the manufacturers' websites. When I realized there are far more gluten-free foods out there than I realized, it became easier. I do most of my own cooking and while restaurants are a big concern, eating at friends' homes is what... -
ARCHIVED What Is The *purpose* Of Adding Flour To Everything?
BethJ replied to Monklady123's topic in Coping with Celiac Disease
That show has made me very wary of eating out anywhere! It's a sin what they're doing to foods that don't require wheat or barley. And now the latest darling is putting beer in everything from marinades to sauces. I know to ask about soy sauce and things that I know could contain gluten, but hidden poisons like beer terrify me. -
ARCHIVED Gluten-Free Dry Onion Soup Mix
BethJ replied to JillianLindsay's topic in Gluten-Free Foods, Products, Shopping & Medications
Thank you Lisa. This made my day. I always keep an envelope or two on hand for convenience. It's nice to know nothing has changed except their label. -
ARCHIVED Progresso Soup
BethJ replied to GFreeMO's topic in Gluten-Free Foods, Products, Shopping & Medications
I love Progresso! After I tearfully gave away all my Campbell's soups, I discovered the many varieties Progresso has to offer. Even my husband prefers them to Campbell's now. The creamy mushroom is my favorite! -
As strange as it sounds, Sam's meat is not the same as Walmart's meat. They don't sell "enhanced" (translated: soaked in salt water so it weighs more) meats. Sam's meats are generally of a good quality and are minimally processed. I never buy meat at Walmart. I almost bought a ham there last week but the label stopped me dead in my tracks: "Contains up...

I've never had a problem with their fresh meats but have only bought their hamburger one or two times. This was the lean 93/7 and made into patties. I buy their steaks, roasts and pork products all the time. Frozen is a different matter. You have to be careful buying frozen beef patties. They will be labeled as beef patties and appear to be simple all...

ARCHIVED Are Places Like Panera & Chipotle Safe?
BethJ replied to jasonD2's topic in Gluten-Free Restaurants
I skip the lettuce, cheese and anything else that isn't dished up with a spoon or tongs. The first time I went to Chipotle, I asked them to change gloves and they were very accommodating but usually it's so noisy in there it's just easier to do without than scream at them why I want them to change gloves. I still get very nervous watching them move my bowl... -
ARCHIVED Eczema Topical Meds?
BethJ replied to mommyoftwinks's topic in Gluten-Free Foods, Products, Shopping & Medications
You have a great derm! Hang onto him and don't let go. When I asked mine what could be causing my horrible eczema, his reply was, "Anything, who knows." After years of Rx creams and Pred, I tried going gluten-free just to see what would happen. To my complete surprise, my skin was clear in three days. I don't know about the meds you were prescribed... -
ARCHIVED Snyders gluten-free Pretzels
BethJ replied to Jestgar's topic in Gluten-Free Foods, Products, Shopping & Medications
Are they on the shelf with the regular Snyder pretzels or stuck away in some obscure area of the store? I keep scanning the regular pretzel display when I shop but so far, nothing. FWIW, I was paying $7.59 for Glutino pretzels but they've been on sale for $5.29. At least at this price, I eat them sparingly. -
ARCHIVED Survey For People With Celiac Disease
BethJ replied to Kayhere512's topic in Coping with Celiac Disease
1. Sex: Female 2. Age: 61 3. How long ago were you diagnosed with celiac disease? 2 1/2 years (July, 2008 self diagnosed) 4. Does anyone in your family have celiac disease? I'm almost certain my father had it as well as my grandmother. My aunt (dad's sister) also may have had it. 5. How severe is your celiac disease? Not as severe as some on... -
I had Tinkyada brown rice fettucine this week and it was by far the best gluten-free pasta I've eaten. Up until recently, Tinkyada was only carried at a health food store but now our local Publix is stocking it. I plan to try the other Tinkyada pastas next. I have been using DeBoles corn and quinoa spaghetti and linguine but like somebody said earlier...
