  4. I like breakfast as it's much easier to find food that doesn't make me sick. I stick with bacon and eggs. Some places let you substitute fruit or sliced tomatoes for grits and potatoes although grits and potatoes can be okay if you ask about them.   6. I make the same things I ate before but substitute gluten-free ingredients. When substitutions aren't possible, I just don't make it any more. For instance, use gluten-free bread crumbs or even instant potato flakes in your meatloaf, corn starch or gluten-free flour mix in gravies, and stock only gluten-free items in your pantry so they'll always be there...

  9. Has anybody tried this product yet? I just discovered it today at our Walmart and the price of $1.58 scared me off. I'm not used to buying gluten-free anything that cheap. After I got home, I read on their website how strict they are about checking for cc so I plan to try it next time I go.
  10. I've had the roasted garlic Crunchmaster crackers several times and have had no problems. I tried the rosemary and olive oil ones last night and although they didn't bother me, I didn't care for them. I noticed one variety, the sea salt ones, list oat fiber in their ingredients. I passed on that one but it did say gluten-free. I don't buy or eat crackers...

  12. If you can't find noodles, broken up gluten-free fettucine works fine. They look like long flat noodles. Just break them into noodle lengths before cooking.
  13. I've never had reason to use huge quantities of almond flour but have had good luck making small batches in a coffee grinder I use for grains. I buy the whole almonds at Sam's Club so they're not too expensive.
  14. Big congrats to you! I think the first year is the hardest . . . not only are you learning a new way of life, your body is still healing. I think this is one of those things that gets better - and somewhat easier - with time.
  15. Thank you. I'll go download one right now. Our Publix just got remodeled and they've put the gluten-free items all throughout the store. I wish they'd put them back in one general location but to their credit, they're carrying a much better selection of gluten-free products now. I really dislike having to cruise the flour aisle to find gluten-free products...
  16. I always used self-rising cornmeal when I made mine so now I use cornmeal with a little all-purpose gluten-free flour, salt, and baking powder mixed in. My recipe also calls for eggs and a little milk so I'm sure that helps hold them together. I always pan-fry mine rather than deep-frying. That probably keeps them together, too.
  17. Red Bull always helps me with the fog and the grogginess. After reading above about B12, I see why. Red Bull has a lot of B12 and some other B vitamins in it.
  18. Thank you! This was our favorite BBQ sauce until they started putting soy sauce in it. I'm so relieved that's changed. I'll be sure to look for the new bottles. DH will be even happier as he hasn't been too impressed with my doctoring up of the Kraft sauces.

  20. Depending on how much you need, you could try making your own in a coffee grinder. I've done this with small amounts of brown rice and it turned out amazingly well. I have one coffee grinder I use only for grains and so far have made my own millet flour, brown rice flour, almond flour and a few others.
  21. Happiness is finding Udi's at Publix. I almost jumped and down when i saw it this morning. The last time I checked for a local Udi's distributor, the nearest place was 60 miles away.   22. Don't forget the Columbia Restaurant in Ybor City. It's one of the oldest restaurants in this state and has wonderful amazing food.
