ARCHIVED What's The Bread That's Inedible But Makes Good Stuffing?
BethJ replied to luvs2eat's topic in Gluten-Free Recipes & Cooking Tips
Add me to the list . . . my happiness at finding a gluten-free bread faded rapidly when I actually tried to eat the stuff. I remember taking a slice to a restaurant so I could dip my eggs like I used to do with toast. Never tried that again! I do have a loaf in the freezer which I plan to reduce to bread crumbs some day, or maybe try making stuffing... -
You just described my reaction and how I can tell if it's from gluten or from something else (I seem to be sensitive to fructose and dairy at times). I know it's gluten because the D will hit within 30 minutes and I immediately feel like I've been run over by a truck. The fatigue is almost overwhelming and lasts from 24 to 36 hours. The next day I ache, can...

ARCHIVED What Would You Have Done In This Restaurant Situation?
BethJ replied to SaraKat's topic in Coping with Celiac Disease
A funny thing happened at a restaurant that has a gluten-free menu. I ordered our take-out dinners online and stressed no croutons etc. When I arrived to pick up my order, the girl said the chef thought the sauce for the fish might contain gluten so he substituted another sauce that he knew was safe. I thought, wow, this place rocks. When I got home and... -
I like breakfast as it's much easier to find food that doesn't make me sick. I stick with bacon and eggs. Some places let you substitute fruit or sliced tomatoes for grits and potatoes although grits and potatoes can be okay if you ask about them. I usually avoid them rather than take a chance, and, of course, emphatically state NO BREAD and tell them why...

ARCHIVED Gluten-Free Pet Food List
BethJ replied to SGWhiskers's topic in Gluten-Free Foods, Products, Shopping & Medications
Several years ago when dogs and cats were being poisoned by melamine in Chinese wheat gluten, this topic came up on a rescue cat board I frequent. Some of the loaf-style classic Fancy Feast cans contain no wheat and no obvious gluten. I think classic Fancy Feast chicken is one and also some of the others. You'll have to read the labels to make sure but any... -
ARCHIVED Typical Weekly Menu?
BethJ replied to blondie1985's topic in Gluten-Free Recipes & Cooking Tips
I make the same things I ate before but substitute gluten-free ingredients. When substitutions aren't possible, I just don't make it any more. For instance, use gluten-free bread crumbs or even instant potato flakes in your meatloaf, corn starch or gluten-free flour mix in gravies, and stock only gluten-free items in your pantry so they'll always be there... -
ARCHIVED Gluten Free Bisquick
BethJ replied to BethM55's topic in Gluten-Free Foods, Products, Shopping & Medications
I made the biscuits with butter instead of shortening and they were great. DH also loved them and I had plenty left over to freeze. Next time I'll make half a batch. I wonder if you could use egg whites instead of whole eggs to cut down on the egginess. I agree about the box being so small and the price so high. I was expecting a gluten-free "real... -
ARCHIVED Heartland Gluten Free Pasta
BethJ replied to sunnybabi1986's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks. I'll try it next time. I would like one that doesn't get mushy. -
ARCHIVED Heartland Gluten Free Pasta
BethJ replied to sunnybabi1986's topic in Gluten-Free Foods, Products, Shopping & Medications
Has anybody tried this product yet? I just discovered it today at our Walmart and the price of $1.58 scared me off. I'm not used to buying gluten-free anything that cheap. After I got home, I read on their website how strict they are about checking for cc so I plan to try it next time I go. -
ARCHIVED Kcrunchmaster Crackers
BethJ replied to Roda's topic in Gluten-Free Foods, Products, Shopping & Medications
I've had the roasted garlic Crunchmaster crackers several times and have had no problems. I tried the rosemary and olive oil ones last night and although they didn't bother me, I didn't care for them. I noticed one variety, the sea salt ones, list oat fiber in their ingredients. I passed on that one but it did say gluten-free. I don't buy or eat crackers... -
Gorton's Fish Sticks! And thick pizza crust . . . just the crust, forget the stuff on top. And fresh-baked garlic knots with gobs of garlic, olive oil and parmesan cheese drowning them. And some Popeye's fried chicken. Also gravy biscuits, bagels, real egg noodles, Campbell's canned condensed soups . . . see, I'm not picky! Oh my, I guess just about anything...

ARCHIVED Egg Noodles?
BethJ replied to suzyq63's topic in Gluten-Free Foods, Products, Shopping & Medications
If you can't find noodles, broken up gluten-free fettucine works fine. They look like long flat noodles. Just break them into noodle lengths before cooking. -
ARCHIVED Pumpkin Muffins! - It's Fall! - Scd Legal!
BethJ replied to ShayFL's topic in Gluten-Free Recipes & Cooking Tips
I've never had reason to use huge quantities of almond flour but have had good luck making small batches in a coffee grinder I use for grains. I buy the whole almonds at Sam's Club so they're not too expensive. -
ARCHIVED Gluten Free For One Whole Year!
BethJ replied to Nadia2009's topic in Coping with Celiac Disease
Big congrats to you! I think the first year is the hardest . . . not only are you learning a new way of life, your body is still healing. I think this is one of those things that gets better - and somewhat easier - with time. -
ARCHIVED Just Thought I Would Let You Know...publix
BethJ replied to imsohungry's topic in Gluten-Free Foods, Products, Shopping & Medications
Thank you. I'll go download one right now. Our Publix just got remodeled and they've put the gluten-free items all throughout the store. I wish they'd put them back in one general location but to their credit, they're carrying a much better selection of gluten-free products now. I really dislike having to cruise the flour aisle to find gluten-free products... -
ARCHIVED Anybody Figured Out How To Make Hush Puppies?
BethJ replied to B'sgirl's topic in Gluten-Free Recipes & Cooking Tips
I always used self-rising cornmeal when I made mine so now I use cornmeal with a little all-purpose gluten-free flour, salt, and baking powder mixed in. My recipe also calls for eggs and a little milk so I'm sure that helps hold them together. I always pan-fry mine rather than deep-frying. That probably keeps them together, too. -
ARCHIVED Any Tricks To Ward Off That Brain-Fog?
BethJ replied to bridgetm's topic in Coping with Celiac Disease
Red Bull always helps me with the fog and the grogginess. After reading above about B12, I see why. Red Bull has a lot of B12 and some other B vitamins in it. -
ARCHIVED Black Rice Flour

ARCHIVED Stubb's Barbeque Now Gluten Free
BethJ replied to dante'sgirl's topic in Gluten-Free Foods, Products, Shopping & Medications
Thank you! This was our favorite BBQ sauce until they started putting soy sauce in it. I'm so relieved that's changed. I'll be sure to look for the new bottles. DH will be even happier as he hasn't been too impressed with my doctoring up of the Kraft sauces. -
ARCHIVED Tampa, Florida (and Lakeland) Restaurants
BethJ replied to somegirl2004's topic in Gluten-Free Restaurants
No, I haven't eaten there since going gluten-free (we're on the East coast of Florida). The article I read about them seemed to indicate that they take care in preparation. I would ask or email them ahead of time. And yes, onions are very common in Spanish food. I would ask as I'm sure there are onion-free options. I've had good luck eating in Cuban... -
ARCHIVED Black Rice Flour
BethJ replied to kimis's topic in Gluten-Free Foods, Products, Shopping & Medications
Depending on how much you need, you could try making your own in a coffee grinder. I've done this with small amounts of brown rice and it turned out amazingly well. I have one coffee grinder I use only for grains and so far have made my own millet flour, brown rice flour, almond flour and a few others. -
ARCHIVED Udi's In Publix!
BethJ posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Happiness is finding Udi's at Publix. I almost jumped and down when i saw it this morning. The last time I checked for a local Udi's distributor, the nearest place was 60 miles away. Our Publix recently remodeled and set up various little gluten-free and organic stations throughout the store. I just happened to look in the frozen bread case today and... -
ARCHIVED Tampa, Florida (and Lakeland) Restaurants
BethJ replied to somegirl2004's topic in Gluten-Free Restaurants
Don't forget the Columbia Restaurant in Ybor City. It's one of the oldest restaurants in this state and has wonderful amazing food. Although a lot of Cuban food is naturally gluten free, they actually have a gluten-free menu. For the gluten eaters, their homemade bread is to die for *sob sniff. . . I miss that part so much!* Open Original Shared Link ... -
This isn't a frittata or something you can make ahead and freeze, but it's fast and nutritious. Like you, I always had a type of breakfast sandwich before going gluten-free. One day at the vet's, I noticed one of the techs eating a panini-type breakfast sandwich and I got this idea which is now what I eat almost every morning. I use Eggbeaters but you could...

ARCHIVED Bun, Pizza Or Muffin In A Minute Recipe
BethJ replied to bluebonnet's topic in Gluten-Free Recipes & Cooking Tips
Thank you! These look wonderful. I'm doing the low-carb thing and have lost a few pounds. Sometimes I really crave something "bready" and these recipes should satisfy that need.
