Also, others on this Forum have mentioned that Against the Grain has great baguettes, too, but I don't believe they're yet in stores West of the Rockies. Could be wrong on that--the company...
  12. Trader Joe's has a boxed gluten-free mac and cheese that tastes identical to the Kraft Dinner type that has gluten in it. Until I found this brand, I thought all of the others were absolutely awful.

  17. I also vote for the mayo as being the culprit. Soy in mayo is vicious!! I use Smart Balance now, but I skipped eating mayo for years because of the soy. Since you mentioned just getting a cat, have you checked to see if the cat food you're buying contains gluten? Is there any possibility that you are hyper-sensitive to gluten?
  18. Oftentimes, dairy, soy, oats, and corn are eliminated when a person first starts a gluten-free diet, because many people with celiac react badly to them. After three months, you can start adding them back into your son's diet one by one to see if he has any reaction to them.   20. One of the hallmarks of celiac is that symptoms can wax and wane throughout one's ilfetime. There were periods in my life when I felt almost completely well. You might be reacting to more than just gluten, and many people go on an elimination diet that eliminates gluten, dairy, soy, and sometimes corn.   22. While I haven't had the extent of the blurry vision that you appear to have, I've had eyes that seemed dry and blurry so that reading was difficult and painful. It turned out to be a zinc deficiency in my case. However, in your case, I'm a bit worried about the hair coloring. I wonder what's going on...
  23. I tend to get esophageal spasms from time to time, and the pain is in the center of the chest--very intense. I've never linked them to celiac, but the last time I had one, it was about an hour after I ate at a restaurant...and soon I felt as though I'd been glutened.
