  1. I don't see what the big deal is and why there is such a desire to modify wheat so we can eat it. I don't know, but I'm sure the process will be lengthy and expensive and products will still cost an arm and a leg. I would bet that there will still be people who react to it also. I know I won't eat any of it because even certified gluten free oats cause...
  2. I'm going for a complete check up with my NEW(she so get's celiac) pcp next month. I'm sure I'll be having things rechecked then. I've been taking Rx vitamin D 50,000 iu once a week for two years now.
  3. A few years before I started with my symptoms I had my first cholererol pannel done and it was weird too. My HDL was low as was all the others. My triglyceride level was barely on the low end of the chart and a doctor commented to me that she had never seen one so low and that I was lucky. Fast forward a few years and I get my celiac diagnsis and I read...
  4. I use Organic Valley organic non fat dry milk. Open Original Shared Link I originally bought it to use in yogurt and it worked great. According to their website they are a full disclosure company and even have a gluten free list. Open Original Shared Link Open Original Shared Link
  5. I've never had the gene tests and I very well may never get them done for the very reason that some GI could tell me after the fact I don't have it based on the genetics alone. I am blood and biopsy diagnosed.
  6. I have found that the Betty Crocker cake mixes to be very good. The devils food cake is nice and moist and does not have the corn bread consistency. Now their yellow cake does, but with a little tweaking it is fab. Mix the cake according to package directions and then mix in two ounces of softened cream cheese into the batter. I watched mine closely and...
  7. I can't stand the aftertaste that splenda leaves in my mouth. I also like the Truvia the best.
  8. Not sure this is related but I will share. I am one of the unfortunate celiac people that can not tolerate pure gluten free oats. I tried eating them 7 months after my diagnosis and oh boy was I miserable. I had horrible bloating/gas/abdominal pain, constipation for a week and red raised painful bumps all over my bottom that looked like pimples. Sure...
  9. Both my kids do fine getting their blood drawn. My youngest son(6) has been screened twice Two years apart and was neg on blood testing after I was dx but just 2 months ago was positive. My oldest has been screened three times and all neg but the numbers are slowly inching up. He will probably be gluten free soon since his allergist feels that he is either...
  10. My main symptoms before my celiac dx was acid reflux, anemia and constipation!
  11. We use Taste of the wild High Prarie Canine Formula and he does great on it. My german shephard didn't tolerate the wetlands formula at all.
  12. I took creon for about three months and it helped significantly. I chose to do a drastic food elimination at the same time as the creon since the only other option was steroids. I opted out of the steriods and glad I did. I no longer need the creon now that I have corrected the malabsorption problem I was having from hidden gluten sneaking in my diet....
  13. Oh, dang! I just read on Babycakes website that they use Bob's Red Mill Products for their gluten free goodies. I gave up eating any Bob's products in August and I feel so much better since doing so. I think the cc from their gluten free oats was getting me. Oh well for me. I may still visit for my son though. The info is in the last paragraph. ...
  14. One more week to go and we are there!! My kids are so excited. My youngest wants some gluten free goodies so we are going to check out Babycakes bakery for sure. We still haven't decided where to go out to eat yet. My mom and I did a meal plan together so we don't have to spend a whole lot of time in the kitchen.
  15. Youngest son is 6 and went gluten free a month before his birthday. Not yet officially diagnosed but had a positive ttg and allergist say's it is celiac but won't comfirm without a GI confirming it. I elected out of a GI consult and biopsy at this time and put him gluten free since I am blood/biopsy diagnosed. Oldest son who is almost 10 is not diagnosed...
  16. This is a great idea. I had some things that I donated to the local food bank over Christmas.
  17. I take two prescriptons by mylan also and I got the same response. I haven't had any problems with them. Good luck.
  18. You said you eliminated oats with her. Some celiacs can not eat even gluten free oats. I am one of those and discovered that I was having issues with Bob's Red Mill products from the cc from the gluten free oats. You could eliminate the Bob's products and see if it makes a difference.
  19. Yes it is a public school. I don't know if I would be allowed to do a 504 plan for him since we don't have an official dx (yet). We do have a signed paper from the allergist office for him to avoid wheat/gluten ingredients because of suspected celiac disease. Would that be enough? His mood has leveled so much this weekend. I almost don't want to send...

    ARCHIVED Glutenology

All grains have gluten. In this context it is referring to the potein in all grains. So in that sense there is corn gluten, rice gluten, wheat gluen, etc. For celiac patients gluten is the proteins in wheat, rye and barley do damage that we should avoid. The gluten proteins in corn, rice, and other safe grains are not harmful to celiacs. However there...
  21. Here is a link to the black bean brownie thread. It tastes wonderful and I have my coworkers ask me for it. They can't believe it is made out of beans..no flour at all. I have used various things for sweetner: sugar, splenda, erythritol/stevia and truvia. Like the regular sugar and truvia the best.
  22. We are going this month. I can't wait. We are going to do most meals in the airstream, but hubby and I want to at least have a dinner out one night by ourselves while the grandparents watch the kids.
  23. That sounds good!
  24. Sure if you follow a gluten free diet your celiac can and will get better. Everytime to consume gluten though you are starting the immune response all over again and doing damage.
  25. I don't have any gluten free friends either. The last vist to the inlaws I took and made my own food. We haven't been back to visit since my youngest son went gluten free, but when we do I think we are going to have a hard time of it with them. I only trust two people to cook for me now, my husband and my mother. Even though my mother is not gluten free...
