  12. People with celiac disease can be low on a large number of nutrients. The ones I was tested for were iron, B12, calcium and folic acid. Brittle nails suggest low calcium. You should probably be taking supplements for all of the above (make sure they are gluten-free of course!). Also take a look at the Canada food guide to see if you are getting enough...
  13. I agree with what everyone else has already said... casein is a milk protein and lactase is an enzyme that breaks down lactose. And you need to ingest lactose in order to keep producing the lactase enzymes to break down the lactose, so your son should avoid casein but not lactose

  18. The Safeway we shop at has a dispenser where you place the bag under the chute and press a lever. No one can cross-contaminate the food ...at least not at the customer level
  19. I don't know if celiac disease causes dark circles under the eyes... but I do know that it is something common with allergies. Could you have a mold or dust allergy? Also people with celiac disease that is not yet well-managed may still have D and be dehydrated which can also cause dark circles under the eyes. Here's an older discussion you may want...

  24. YIKES! You can't just pick off the croutons dear, you must ask the server to leave them off. Even traces of gluten can make you very sick, as you unfortunately experienced. In my opinion you should always let your server know that you have celiac disease so they can take every precaution to avoid cross-contamination and avoid making you sick. ...
