First, as well as checking again for hidden sources of gluten, if I were you I would immediately eliminate all dairy (and foods with casein) and consider eliminating all grains. I read it as saying mild damage. Inflammation, flattening, but only a few villi are blunted. Notice there is no crypting mentioned, which is the hallmark of severe celiac. Also, if the damage were severe, the pathologist would have firmly diagnosed celiac rather than saying it's possibly peptic ulcer disease or duodenitis. I believe it confirms your... -

Ugh. That must be a pain. By the way, you are confusing the enzyme with the organism that produces the enzyme. That's why I thought your source might be dodgy. The enzyme in Lactaid is called lactase. Lactase is produced by a number of bacteria, yeasts, and fungi. I have to wonder about inaccuracies in a source that calls the fungus A. oryzae an enzyme. Also, most commercial lactase preparation is from A. niger or GMO bacteria. It's definitely not the same as Rice Dream either because with Rice Dream the enzyme they use is directly extracted from barley. I will be curious to hear what Hood says, because their website... -

Have you worked out any baking recipes? Some quick bread recipes use oil rather than butter and you can slice and freeze them. I make gluten-free scones a lot but I don't know how well the soy-free Smart Balance works for that kind of baking. -

Are you eating specialty "gluten free" breads and baked goods? All the major brands have a limit of either 10 or 20 ppm of gluten, so there can be traces of gluten. There would be more gluten in a loaf of bread that happened to test at 10 ppm than you'd get on old utensils or a pot. Have you tried a few days eating nothing but naturally gluten-free foods... -

Are you still eating dairy? Try eliminating that. A lot of people who are gluten sensitive can't tolerate casein either. -
Mom has vagal nerve spasm from her reflux and a hiatal hernia. Vagal nerve issues can cause problems with heart and lungs and she has trouble swallowing, heart palpitations, and her chest gets tight. It is RARE to not convert T4 to T3. The reason so many of us feel better on T3 is becasue the damn doctors under-dose T4. Insist on getting enough thyroid hormone that your symptoms resolve, whether it's T3/T4 or a decent dose of T4. Last time I checked name-brand Benedryl, they said their medication is free of all major allergens including wheat. I really like Benedryl at bedtime when my allergies are kicking up. -

Why are you giving your doctor such power? YOU are the one with the power to make yourself well, not him. You have a great answer about celiac. You have positive bloodwork AND you feel better off gluten. Biopsies can miss damage, or it's not there yet because you're latent celiac. You will be fine. All those studies on people recovering in 24 months are in real, live people who are getting glutened by mistake sometimes and simply doing their best. The people in studies who don't get well always admit to cheating and not really trying to stick to the diet. A single mistake will not wipe out your villi and set you back to square one... -
I really don't think gluten in sushi rice is a universal thing like this waitress suggested. It's not like unagi, where there will always be soy sauce in the flavoring. Plus I don't react to sushi and I eat it all the time! Agreed there are gotchas like the fake crab, many of the sauces, and roe.
