It can be done but the resulting product is often crumbly. I've had success using psyllium husk fibre (and measuring by volume). When baking with gluten-free flour, aerate the blend in the canister or bag then spoon it into a cup before levelling. This has happened to me since I was 13, each and every month. Not fun but I have grown so used to it. The back pain gets quite severe so I take prescription muscle relaxants. Perhaps something to look into! Midol and Pamprin extra strength can also make a big difference. -

I've been gluten-free for nearly three months and know I was accidentally glutened twice when eating a product that had been marked gluten-free but the manufacturer contacted me and told me it was not. If they had not contacted me I would have had no clue that I was glutened because I don't get sick. On my three-month gluten challenge I did not get sick...

Or worse - an island in northern Alberta in January??!! I would love to be stranded on an isolated island with my husband, away from the maddng crowds. But to reiterate what I said earlier, I would eat gluten if my life depended on it.

I haven't been to the UK gluten-free yet. So glad to hear about Ireland. One of the reasons we have bought a house in Europe is the pace of life. No comparison with here. There are about 1,302 good reasons but that is a biggie! BTW, on one of our flights (a shorter one, 4 hours) the movie monitors were not working so we did not have any distractions...
