ARCHIVED Perfect Gluten-Free White/sandwich Bread
eatmeat4good replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
I have really enjoyed reading this thread as well as the one about Challah by Simona. Out of respect for all those who have gone before in the bread baking saga of gluten free baking I wanted to post this link. I think your recipe must belong at the end of this thread in light of the reviews it is getting. The Challah by Simona rates up there... -
Coca Cola is gluten free and it is the only soda I have found without benzoates! So give yourself a bonus point for that and drink up!

ARCHIVED Anyone Have Symptoms Get Worse In Cycles?
eatmeat4good replied to Emsstacey's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I think the test you had is the most sensitive one there is. Someone will be along to correct me if I'm wrong, but on that test if it is positive at all then you are Celiac. Not every Dr. requires the biopsy to be positive if the blood tests are. You certainly have enough Celiac symptoms to warrant going gluten free with or without a diagnosis. Have you tried... -
ARCHIVED Tahini Eating Suggestions
eatmeat4good replied to AVR1962's topic in Gluten-Free Recipes & Cooking Tips
I use it as a sauce over meatloaf, meat balls, or cooked vegetables. Just stir the oil in and measure how much you want to use...I thin it with a little water. I have used it like peanut butter on gluten free toast. It's better with something with like jelly or Nutella but if you are avoiding sugar that won't do. Egglant Dip is a traditional mediterranean... -
ARCHIVED Does This Look Like Dermatitis Herpetiformis To You?
eatmeat4good replied to MerrillC1977's topic in Dermatitis Herpetiformis
Wow. Maybe we can understand now why it is so hard to diagnose! I'm allergic to nickel too. It is terrible. Only real silver and gold for me and you! Hope your rash is healing. Are you going back to gluten or staying gluten free for other reasons? Just curious. -
ARCHIVED New To Gluten Free Lifestyle
eatmeat4good replied to Ramfan's topic in Coping with Celiac Disease
I have not heard of those with just Celiac being sensitive to food dyes. However, there are some of us who are also Salicylate sensitive or allergic. If this applies to you then you would also have a problem with food dyes. Especially yellow and red dyes. Preservatives are also a source of salicylates. Benzoates are notoriously reactive for those with... -
Benedryl could either make you drowsy...or make you jittery. It isn't really meant as a sleep aid, though I do know some people use it as such. Melatonin is a supplement that is said to help those with trouble sleeping and those with jet lag. It is harmless by all research I have read. You could try that. Or test out how you do with Benedryl. Or ask your...

ARCHIVED Different Symptoms When Glutened
eatmeat4good replied to AMom2010's topic in Coping with Celiac Disease
I, too, get neuro issues. Sometimes they come on fast, like dizzy to the point of wanting to fall down and having to think about each step I take. I get spacey and cannot think at all. It comes in waves along with depression and anxiety. Massive migraine headache for 2 or 3 days. I get anywhere from immediate onset to 24 hour delayed onset. After a glutening... -
Look into Salicylate sensitivity. Coconut is very high in sals. So are many fruits and vegetables and spices. It is cumulative...so the more you get the more symptomatic you become. Open Original Shared Link It is highly restrictive. But if this is your problem it is the only way to handle it is strict avoidance.

ARCHIVED Gluten Ataxia - What's Your Experience?
eatmeat4good replied to T.H.'s topic in Coping with Celiac Disease
I bumped into walls and fell down. I walked uncoordinatedly and so did my son. I was scared to death the neurological symptoms would be permanent. Unbelievably relieved and happy that we both walk normally now. Even when glutened...it is the depression and anxiety that show up first, headache second, nausea, D but I have not yet had an incident of glutening... -
ARCHIVED Need Brands Of gluten-free Flours
eatmeat4good replied to thleensd's topic in Super Sensitive People
I've used both Tropical Traditions and Nutsonline for coconut flour. Nutsonline I've used their Almond flour but want to try the Cashew flour and Hazelnut. I'm sure they would be helpful if you call. Their customer service has been excellent for me. -
ARCHIVED Could This Be The Answer To My Mysterious Illness
eatmeat4good replied to melissa222's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Major muscle issues are definitely a Celiac symptom. At first I had weakness in the legs. Then aches, then difficulty contracting my muscles, then they atrophied. I just couldn't exercise. Taking a walk would make me have to sleep or rest for 2 days to recover. Of course I was diagnosed with Fibromyalgia. I lost coordination and bumped into walls... -
ARCHIVED Where Do You Crock?
eatmeat4good replied to kareng's topic in Gluten-Free Recipes & Cooking Tips
How fun! I took the crock out...stashed the part with the cord in a closet and used it to hold all my cooking utensils on the counter... I thought I was being very creative too. Now I use it for making bone broth...for extra minerals. -
ARCHIVED Skin Trauma: Please Tell Me I'm Not A Hypochondriac
eatmeat4good replied to Jenniferxgfx's topic in Dermatitis Herpetiformis
Well, good Lord, I just fell off my chair 3 times reading this wonderful post. Thank that man...and tell him to tell his Dr. Dud friends about DH and your results. What a wonderful experience you had! Wow! I am very impressed! Thank you for posting this positive experience...I hope more Doc.'s will take on his attitude and knowledge. -
Wow! That Dr. is just right down the line ridiculous in every statement she makes. Celiacs don't have to have wasting and weight loss. I was FAT. TSH does Not indicate Hashimoto's! I have Hashimoto's antibodies AND a normal TSH...so far) Soy CAN do all that Doc! That is just ridiculous. But I think there are millions of Dr.'s just like her. The white...

ARCHIVED Should I Have Waited?
eatmeat4good replied to sobeit's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I really don't know why it is so hard to find a Dr. that "believes" gluten is a problem. That is ridiculous that they did an endoscopy but no biopsy because it didn't "look" like you needed one? I thought it was microscopic damage they look for to diagnose Celiac. Going gluten free will not effect the colonoscopy. However if you want to ask them to do anothe... -
ARCHIVED Could It Be?
eatmeat4good replied to i heart baguettes's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Many people do not test positive on blood tests for Celiac. Yet they react violently or become chronically ill from eating gluten. Don't push it on your Dr. Just push the gluten off of your plate. You can do a strict gluten free trial and see if it resolves any of your symptoms. Everything you list sounds suspiciously like Celiac. It could also... -
ARCHIVED Rudi's Bread?
eatmeat4good replied to shadowicewolf's topic in Gluten-Free Foods, Products, Shopping & Medications
I can't say for sure I was glutened by the bread. But I'm suspicious. -
ARCHIVED Rudi's Bread?
eatmeat4good replied to shadowicewolf's topic in Gluten-Free Foods, Products, Shopping & Medications
Oops! That is terrible. Sorry for them both. I thought they were a dedicated facility. Just finished two loaves of the stuff myself. First time I've eaten it. I have not been feeling great at all. Thanks for your post. I didn't suspect the Rudi's. -
ARCHIVED Confused About Sc Diet
eatmeat4good replied to Apache's topic in Food Intolerance & Leaky Gut
Could you be sensitive to Salicylates? They are in most fruits and vegetables. The one that confuses me is Brussels Sprouts as they are supposed to be very low in Salicylates. Just wanted to mention that in case. -
ARCHIVED How Long Until I Feel Better?
eatmeat4good replied to jk17's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes it is all consistent with Celiac/Gluten Intolerance. Yes your symptoms can be from tiny traces of gluten. I would strongly suspect cross contamination by living in a shared kitchen. You have to be very careful. I wouldn't share utensils unless you are sure they are non-porous and cleaned very well. You also cannot share condiments, jelly, butter... -
ARCHIVED Possible Celiac Symptoms?
eatmeat4good replied to showgun's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Your symptoms are consistent with Celiac. Have you been checked for Thyroid conditions? Hair loss and digestive problems are associated with the thyroid. You should consider testing for Hashimoto's and Graves. If you decide to go gluten free without testing, ask for your vitamin levels to be tested. Celiacs are often deficient in A,B,C,D,E,B12,Calcium... -
ARCHIVED Hot Dogs?
eatmeat4good replied to Sam'sMom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Some people with Celiac/Gluten Intolerance only buy products labelled "Gluten Free". Manufacturers have learned that this means they can charge more for it if they want to....and they do. But there are a lot of hot dogs that are safe. And a lot of products not labelled gluten free that really ARE gluten free. -
ARCHIVED Sick And Tired Of Being Sick And Tired
eatmeat4good replied to New Community Member's topic in Coping with Celiac Disease
Oh gosh, I was exhausted the first 3 months. I had been sick many years. In the beginning of the diet I knew it was working. But I still needed 10 hours of sleep at night plus naps. The fatigue leveled off and then went away after 3 months. But if I get glutened...no one will see me for 3 days. I will be sleeping. -
Celiac.com is always going to be First in my book since this site saved my life. But I also love Mark's Daily Apple.com which is Paleo and therefore completely gluten free.
