Depending on the cheese you are eating, it could be that there is little lactose left in the cheese. Aged cheeses lose their lactose. Lactose free milk have things like carrageenan, xanthan gum and guar gum which don't always set with with the stomach. -

Good! This will help ALOT but it does take time. Do protect your stomach and allow for the mending process. Meantimes take evry step to safeguard yourself from gluten. -

I wonder if you may be lacking some nutrients. Twitches and spasms could benefit from more magnesium and potassium. System sounds very sensative yet and more healing needs to take place. Body is more than likely suffering form lack of nutrients. I too had hair loss. I started taking an extra zinc along with my multi and BioSil drops and my hair stopped falling out. I know someone that used Primrose tabs and that helped her.

If it is neuropathy the symptoms can be relieved by taking in more B12.

Definately sounds like your mom is reacting to something she is eating, or perhaps touching.....plants even. Is she eating spices like cajun salt? I make my cookies without the xanthan gum, stomach does not like it. 3/4 of flour amount I use a multi purpose gluten-free flour, 1/4 of recipe I use almond flour and then I add approx 1/4 c. corn starch, and many times I'll grind gluten-free oats in with it. I find it interested that your endo put you on L-Glutamine. Every doc has a different take and there been debate on glutamine, my doc feels like it is a waste of money and suggested I not take it. Try taking your iron with a meal. Infact all your vits mentioned should be taken with a meal and I think you might have less stomach upset. -
Goodness, does this sound familiar! It was my daughter who convinced me to go gluten-free and I made the same comments and mistakes that your mom did at first. Maybe it takes some of us a little longer for reality to dawn on us. I am glad you trying to help your mother, she probably doesn't fully grasp this yet. That had to be heart-wrenching to witness. Two of my three children are on gluten-free diets. It was an issue and they didn't go thru the testing and do not care to go back on gluten to have the tests done. They know they can't eat gluten no matter the test results. Sorry your daughter had to go thru all that. I do wish her the best on her gluten-free diet... -

Stay on gluten until your tests are done but realize that testing is not accurate. It does sound to me that you have found your answer and that's what's most important. It is possible to be gluten-free in a household with gluten eaters, everyone has to become really of the rules you set.....like, once a knif touches bread it doiesn't go back in the jelly...
