  1. Your doctor is a thyroid idiot. Your body converts inactive t4 to the active t3. If you don't have t4 to make t3, or if the process is broken...you have a thyroid problem. If you are interested in testing iodine I'd try something direct - like a bite of seaweed. Or, a bit of iodized salt in a dish. Or, research the salty foods that make you itch and find out...

  16. There are some ready-made, raw corn tortillas in stores, here. Not every store carries them. I bought them once, and we only ate a few (have no idea why...). They were good but we just don't eat them regularly enough in volume to go through the effort. I do think they marked them gluten-free. Next time I see them I'll write down the brand.

  18. It does take time to figure out YOUR reactions. And then they can change... I have a rule that once means watch it, twice is probably gluten, and a third time I don't want to duplicate. But it's difficult to be able to narrow down and isolate one food....especially in the beginning. If you keep reacting to random foods you may benefit from an elimination...

  20. Just try to chop the fresh fruit super-finely and drain it very well. Try increasing baking time and thoroughly cool before eating. Most gluten-free baked goods need to "set" as they cool, I've found.

  22. gluten-free baking is odd, because so much depends on your flour blend. The fresh, juicy mango may be too wet for that flour mix or recipe. Try dried mango, drained (for an hour+) mango, or baking longer or at a higher temperature.
