My understanding is that you can have a false negative, but NOT a false positive. So, yes, you have Celiac. After your trip and testing, there is a gluten-free soy sauce. PF Changs has a gluten-free menu and they use the gluten-free soy sauce on those dishes. Don't forget to take the anti-D stuff on your trip. You don't want to spend all the time in the bathroom instead of enjoying the trip. I would just take it all the time and not wait for the D to hit. -

Welcome to the forum. As far as the testing goes, you can never have a false positive, but you can have a false negative. So, yes you have Celiac. And yes, if you do not stay on the diet, then you can end up with multiple problems. Even tho you do not feel so really terrible you are still doing damage to your small intestine. I understand why you need a firm diagnosis. Has he only been gluten-free for about a week or so. Call the doctor tomorrow and see if they can do an endoscopy on him ASAP. My understanding is that the gluten challenge consists of you feeding your son gluten, to the equivelent of 3 slices of bread a day, for 3 months. And then they do the blood works, which are NOT totally infallable (sp). You can have a false negative, but not a false positive. I would wait the 6 months and keep him totally gluten free and then convince... -

I am allergic to casein. But, I can eat hard cheddar goat cheese, but not the regular goat cheese. I don't remember who posted that the hard cheddar goat cheese does not have casein (Rachel?) But, I find that I can tolerate the hard cheddar. Of course I really have it very seldom, like maybe once a month. -

My family loves the Ora-Ida Fast Food Fries and that is now the only fries I buy. They do have soy. I am allergic to soy and thank goodness that one has stayed mild. Probably because I try not to use anything with soy on a regular basis. I only have these fries about twice a month. We think they taste better then McD's. -
If you are staying at one of the resorts, then talk to the head chef and see what they can provide. Then talk to the concierage (sp) and see if they can do some advance calling for you at the in town restaurants that everyone likes to go to. If no concierage then talk to the mgr. You might try taking him off of dairy. I have read that the small intestine sometimes reacts to dairy, just as it does to gluten. After he is healed, you can then add it back in. I am sure that others will post about this. This is the weekend and the forum activity is not as great as during the week. -
