    I agree with you on everything except the training aspect at PF Changs. I have had some in depth conversations with two separate managers, one in LA, and one up here in Emeryville, and the training they get on Gluten Free is really astounding considering that they are a national chain.   3. They took your tuna? Do you open that on the plane? I would think it would be stinky. I carry my Triumph cards with me when I travel. I got a question about my food once (I had a loaf of bread and a box of cereal in my suitcase, among others), handed her the card, and watched her eyes glaze over. They are official looking and explain it rather nicely.

I agree that there food isn't the greatest ever (the fat and calorie content is totally out of control) but it does in a pinch to go to a place that all my friends can afford and that is as safe as it gets without being 100% gluten-free.   5. I had really good luck making Pamela's Mix in a bundt cake pan. Used two mixes, and it came out nice a moist and not.... fluffy exactly, but not brick like either. I used cream cheese icing (my fav) which is basically cream cheese whipped with powdered sugar and food coloring, and everyone loved it, even the non-gluten-free people.
  6. The trick my mom taught me with yeast growing up, is if you stick your finger in the liquid and can just stand it, its perfect. If you want to pull your finger out, its too hot. Or you could use a thermometer....
  7. Gonna add my story and my ARG! to this. It's pretty obvious that I've been having celiac symptoms most of my life, but only got diagnosed a few years ago. I had cavities and enamel problems early on, though I wasn't allowed to eat sugar as a kid and had great dental hygene. This was totally blamed on the fact that we were on catchment and so didn't have fluoridated...
  8. Its not really a "recipe" as such, but its yummy. I use it most with my pumpkin pie, and have learned I have to make two, as all the non-gluten-free people eat it up. I take a box of cookies per pie plate (plain shortbread is best, but the pecan ones will do in a pinch if you pick out the bigger nuts). Crumble them up in a bowl, then add 1/4 tsp or so melted...
  9. On a completely unrelated note.... Turtle Mountain has Gluten Free Cookie Dough Ice Cream!!!!! Back on topic. The Turtle Mountain that you ate seems to be the coconut, and coconut can cause gurglies.
  10. I love them and have never had a problem. I use the shortbread ones to make pie crust... yum. I know some people who reacted to them, but it turned out to be the soy in the chocolate.
  11. AppleGate Farms has gluten-free breakfast sausages. I have only seen them at some Whole Foods.
  12. I'm pretty sure that as long as you're not eating the intestines you're fine. I buy organic free range grass fed non-antibiotics/growth hormone treated well and killed humanely meat because it tastes better and its better for me (and the environment), but the gluten aspect really hasn't come up with this specific issue.

I also just wanted to state, that though I take probiotics because they make me feel better by making my digestive system stronger, and I'm sure enzymes do the same thing, I don't think that I'm protected in any way from CC. CC happens and damage happens, and the probiotics just help me bounce back faster.
  14. I had the palm software for the first year gluten free. It was instrumental in helping me shop. I don't need it anymore cause I've got my stride going with shopping and all that, but in the beginning it helped me a lot and I always had my palm with me while shopping.
  15. Rachel I think that your last post hit upon the issue with GlutenEase. You just presented a rational argument for taking enzymes to better your digestive health to help you deal with anything you might come across, the same way that I take probiotics, for the same reason. "this makes my whole system better, therefore I deal with issues better." Thats a statement...
  16. The cellulose could be wheat derived, I would definitely ask them. I look for supplements that say gluten free these days, as so many do now. I know you probably had these from before though. I sometimes will take L-glutamine to recover from a CC episode faster as well
  17. A better way may be to call the manufacturer, which is what I tend to do with drugs and supplements. Feel free to post the ingredients and I'll give them a gander, but I can't promise I can say for sure.

  19. L-glutamine is an amino acid, and is not related to gluten, so as long as the specific product you are taking is gluten free, ie: any added binders or the capsules themselves, you're just fine.

  25. If it says malted beverage on it, its not safe. I have yet to find a wine cooler that didn't have malt, though I know they do exist. I think its a regional thing.
