My iron levels were okay, but my Ferritin levels (iron stores) were low. Did they test your Ferritin levels? That would show malabsorption and help support a Celiac diagnosis. I'm going to sound like a broken record, but "rotation, rotation, rotation!" If you have food allergies/intolerance or you even suspect them, you need to 1) calm down the inflammation and 2) prevent new allergies from developing. Rotation, rotation, rotation! If you suspect allergies (or already know of some), you'll need to rotate your foods to 1) calm down the "fire" inflammation and 2) prevent other allergies from developing. There are plenty of websites that discuss four day or seven day rotational food diets. Good luck! -
Rotation, rotation, rotation! All good advice from everyone who responded to your question. I'd add that in order 1) calm down your body (inflammation) and 2) prevent you from developing allergies to other foods, you'll need to rotate your foods. Don't just get a new toaster -- HIDE IT!!!! If you leave it in plain sight, someone will accidentally put wheat toast or a waffle in it. Same goes for other kitchen items like a colander, wooden spoons, etc. Take a few hours away from your school books and focus on Celiac Disease. Not sure how you've identified your food allergies/intolerances, but I can tell you that I'm allergic to rice. My best advice is to be sure you're on a four or ten day rotational diet. My GB was functioning at zero percent!!!!! Had my GB removed in Las Vegas while on a business trip. It actually started to rot! Yuck. Contact your Stepdad's Human Resource Department for assistance. Being terminated (involuntary or voluntary) doesn't necessarily stop a person's health insurance for up to 30 days. I purchase most of my meat and fish at Costco. They even have a few luncheon meats (like turkey and Canadian bacon) which are uncured and labeled gluten-free.
