Hi Moscow - Welcome to the board! The dazed and confused feeling is what we refer to as "brain fog". It can take a while to feel better. Part of it is just the healing process and part of it is gettin used to the diet and avoiding the hidden gluten; gluten appearing where you wouldn't expect. Remember that a lot of personal care products - shampoo, conditioner, other hair products, cosmetics, nail stuff, lotions, etc. have gluten in them. So keep that in mind if you share it. Nancy -

Yea, I've never used it for baking. I use a different mix for that. No bean flour in my cookies, thanks. Blech.. I think that because sauces are a loose mix, it doesn't need the xanthan gum like a baked good would. And because it's savory I think somehow the bean taste melds with those flavors unlike with sweet flavors. Nancy

Yep. She has celiac disease. I can't remember which prominent celiac doctor said this, but he said that a positive celiac blood test is like having a positive pregnancy test. You can't be a little bit pregnant, and you can't be a little bit celiac. I hope she decides to go on the gluten-free diet, AND get a new doctor. Nancy -
Totally small world!!! Who would'a thought huh? I don't know if you've talked to Jacqui, but it turns out she and I live within 1/4 mile of each other. I have two copies of DQ1, subtype 6 (DQ6). When I first found out my genetics, someone here told me that it was associated with hypersensitivity to gluten and neuro/pain/mood issues in addition to GI issues. I just met someone on here who has DQ6 and she has so many of the same symptoms as I did that it's scary. So I guess you could call that a...

I second Bob's Red Mill. I use it as a direct substitute in all my sauces/gravies. Works and tastes great. Even used it for Christmas Eve dinner (we made Beef Stroganoff) and none of my gluten-eating family could tell a difference. Nancy

I had negative blood tests and negative biopsy too. Trying the gluten-free diet is the only completely reliable way to determine if gluten poses a problem for you. Nancy -

I didn't have buttermilk (kept forgetting to buy it) so I used a buttermilk substitute that I read about -- You use milk and for every cup of milk, add a teaspoon of lemon juice. It worked fine, although I'm sure real buttermilk works better. I'm also happy to report that it tastes good cold out of the refrigerator too. I'm SO making coleslaw... -

Angie!!! This is SOOOOOOOOO good. I agree with you that the seasoning is very KFC-ish. My husband thinks so too. I had to use a flour mix rather than just the rice flour, so I can't speak for texture. This is amazing. I'm going to go eat more now. Nancy -

Geez... I didn't mean to start anything. Quinoa isn't common at all in the states unless you're already into health food before you get a celiac diagnosis. Most people have never heard of it. And since celiacs need to stay FAR from anything in the bulk bins, and would have to buy it in some sort of package (bag or box), it would have labels etc... -

Unfortunately, you don't grow out of celiac. It's not an allergy, which some kids will grow out of. Celiac is a genetic condition. Basically the gene is either switched on or switched off. Once it's on, there is no way to turn it back off. I'm sure they'll figure out how to do that someday though. The diet isn't as difficult as you'd expect... -

I had a similar situation. If I tried to eat "healthy" as far as what my health-concious friends and family ate, I felt awful. If I threw in the towel and ate junk all day long, I felt fine.
