  1. The nurse just called with my recent celiac panel. She said that it is 6. She says normal is considered 4? We talked about several things and I forgot to ask her more about it. The dr. and I expected it to be slightly higher than last time (no antibodies detected) because I unknowingly took a gluten containing multivitamin for 3 weeks! Yikes! I'm still...
  2. Here is a link to the one my g.i. gave me. Open Original Shared Link It's really not a hard diet to follow. I did it for about six months. I did get a little tired of eating the same vegetables, but just in time the dietician told me to add in summer squash and zucchini. It's very similar to the SCD diet, but I found it to be not as restricting...
  3. I would kill for an eclair!
  4. I had a young student with celiac a couple years ago. I was amazed at how well she knew what she could/couldn't eat. She told me that her diet was her medicine, and she had no problems sticking with it. She was not embarrassed or tempted to cheat in front of her friends. This from a seven year old! Her mom brought in gluten-free snacks to keep at school...
  5. I haven't researched it, but I've been on it three times; most recently for a six week regimen. I didn't have any problems with it, and it was prescribed by a g.i. DON'T take probiotics while you are on it. It can cause diarhea for the first few days.
  6. I agree with the above post. I'm also struggling with weight gain. The Fitness Pal helped me, also, in that I found out quickly that I wasn't eating enough calories. Now that I'm taking in extra calories though, I'm still not gaining enough weight. I actually got yelled out by a dr. last week who informed me that Audrey Hepburn only looks good in movies...
  7. Does she take vitamins? I found out the hard way that my chewable vitamin was made with gluten.
  8. With lactose intolerance, my problems showed up within a half hour. But I went from lactose to total dairy intolerant practically over night. Could that be happening to you, also?
  9. Never! I'm not even tempted for a few reasons: I find over time that I lose desire for foods I used to eat, I want to feel better, and I now know what an accidental glutening feels like and it's not fun!
  10. Centrum Silver is gluten free as is the generic form, Equate, from Walmart. Not sure about the soy. I really want a chewable as they are so big, and I ended up aspirating one into my lung! Yikes!
  11. I made a switch to a chewable multivitamin (pharmacist suggested the brand for me) a couple of weeks ago and have been sick since then. I gave up all supplements and several foods 3 days ago to try to figure out what was going on with me - have felt better each day. Today, I decided to start back on the vitamins and as I was about to pop it in my mouth...
  12. I am in luck this week! Visiting son and his dad are doing the cooking to give me a break. Son is making his famous chili today (minus the added can of beer), and they have a turkey that's been brining. Tomorrow, brother in-law is coming with the nephews, and he's not happy about the chili. He thought we should have the prime rib we had last year. Sorry...
  13. What meat other than processed or something injected with a basting solution has sodium solutions? Pork chops, pork loin, beef roast, etc. shouldn't have anything processed in it. Can you eat nuts? If you can eat chicken, roast a whole one, then make bone broth by simmering the carcass with vegees. Drink the broth throughout the day to help ward off some...
  14. Are Blue Diamond nuts gluten free? I assume they are, but I've read somewhere about being careful with purchasing nuts. I do order from nuts.com, but I need pecans and don't have time to place an order.
  15. I wasn't lactose intolerant until shortly after I was diagnosed. Lactaid tablets worked fine for me, also...and then they didn't. I could only tolerate a small amount of hard cheese if I took the tablets. Overnight (and I'm not exaggerating) I could no longer drink Lactaid milk, and I couldn't handle lactose free products. I became dairy intolerant that...
  16. I was pulling my ancient spritz cookie maker out of the cabinet to dispose of it, when today I found a gluten-free spritz cookie recipe that looks pretty good (and easy). How long would gluten remain on it as an active threat? Mine is about 20 years old and hasn't been used in years. Would a good scrubbing take care of it? It's plastic with interchangeable...
  17. There's a gluten free bakery not too far from me. I was disappointed on my first visit as I was expecting to be able to purchase gluten-free breads, rolls, etc., and that is not the case. They make all sandwiches/burgers with Udi's gluten-free bread and buns. This is not the same Udi's that can be purchased at the store. When I turned up my nose, they...
  18. It's really hard to sub gluten-free flour blend for regular flour in recipes. I think you're better off searching for gluten-free recipes. I've found some very good ones (and some bad ones).
  19. I'd like a pie crust recipe also; one that I could use with lard.
  20. I think I had one of those last year! It was good!! There's a restaurant (mostly carryout) in my area that cooks only healthy food. Most of the business is meals to order that are delivered on a weekly basis. A very cool concept! The owner has celiac and lactose intolerance. When I broke my hip last year, my hubs brought it to the rehab center for a...
  21. I made white pork chili from Danielle Walker's book Meals Made Simple, and a Schar's baguette. Both were really good!
  22. How much urine do they need to collect? I've never had a test that required more than just a few drops. What does a cup look like that has a temperature gauge on it? Just curious...
  23. Thanks! I love the Springs!
  24. Could you be having anxiety attacks?
  25. Please post a review when you return. I'll be there next summer. Enjoy your trip.
