I think the semi-identical twins ended up with some extra DNA, which can definitely be a problem! And I think they might have ended up with an extra Y chromosone.

ARCHIVED What's A Good Substitute For Soy Sauce?
Nancym replied to Mtndog's topic in Gluten-Free Recipes & Cooking Tips
Is it the wheat in the soy sauce or the soy? If you can have the soy then San-J makes a wheat free Tamari sauce that tastes great. I use Thai fish sauce quite a lot too. I think it tastes totally different than soy sauce though. But it might give the umami flavor you're looking for. I just went to a local oriental market and stocked up on Curry paste... -
ARCHIVED Bag Of Gluten!
Nancym replied to CMCM's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I usually get my chocolate at Trader Joe's. I like the Noir 85% and the chocolate from one source the best. lindt 85% is good too. But I now have a chocolate box where I keep my chocolate bars. Yeah, you really can't eat that much of the really, really dark stuff. I have a square or two and I'm totally satisfied. With more sugar that stuff goes down... -
ARCHIVED Bag Of Gluten!
Nancym replied to CMCM's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Heh! I used to bake with it all the time. -
Yes, I used to make coconut milk yogurt. I just used yogurt starter and treated it like regular milk. Only problem is, it doesn't get solid like yogurt, so I added gelatin to make it set up a bit. FRom what I understand you can use anything to make yogurt, as long as there's some sugars for the bacteria to eat (you could add a teaspoon of sugar or something...

I'm very skeptical of the hygiene hypothesis. We're not really all that sterile, just ask any microbiologist. And the popular media and lay people aren't really understanding what it is, because it is presented in 30 second soundbites on the local news. I found a really good critique of that hypothesis I'll post it if I can find it again. Found it...

Just a FYI, lots of parents of gluten sensitive children think their kids are getting gluten through breast milk, even though doctors say they can't. They just notice stomach/intestinal symptoms getting worse when Mom is eating gluten. If it were me... I'd probably not eat gluten. There's just too much that I think is unknown or known wrongly.

Well, gluten doesn't do anything to relieve arthritis pain, so I think you can get rid of that association right there. Have you seen a rhuematologist? Mine dx'd me with ankylosing spondylitis and the treatment seems to be helping a lot. A paleo diet is helping too. I think there's other things than gluten that can cause arthritis to flare. Now my...

Yeah! I think so. I'll need to reread some things and see if they make more sense now. -
ARCHIVED Genetic Variants
Nancym replied to JerryK's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Clearly they haven't discovered everything there is to know about gluten sensitivity! Jestgar, I'm reading "Genetics for Dummies" and enjoying it, even if I am a little confused at time. Can you explain what the difference is between an allele and a gene? They've done a lousy job explaining that so far. Also, I thought of Jerry when I read this... -
Yes! Horray, found it. Thanks!

You need to plan for these things. Have your own "treats" ready when everyone else is indulging.

It seems that the messages now show up in a tree format, rather than fully expanded. Is there a way to turn that off? I don't care for it at all, makes for too much clicking and I have tendonitis in my clicking hand. I searched through the "board options" under "My controls" and nothing popped out at me.

ARCHIVED Is Sorbitol Bad?
Nancym replied to cdfiance's topic in Parents, Friends and Loved Ones of Celiacs
Sorbitol comes from corn, but it does have a laxative effect if you ingest enough of it. It is called a sugar alcohol, they're notorious for giving people the runs (or horrible gas) that eat a lot of "sugar free" foods. Celiacs, especially newly diagnosed, have very techy intestines a lot of times and just looking at them sideways is enough to set them... -
There's nothing wrong with getting your carbs from legumes, fruits and veggies.... except that we've been brainwashed into believing otherwise. I think your diet is fine, you don't need to eat refined carbohydrates to be healthy. In your case, quite the opposite. You've made a great change, stick with it! Gosh, how do the Inuit and native Americans...

ARCHIVED Newbie-43 With Osteoporosis

You should get the rash biopsied, you might not have any other evidence of the disease. -

ARCHIVED Trying A New Approach Since No Improvement In Sx
Nancym replied to WakeupNurse's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
SCD without dairy is very similar to the Paleo diet I follow. I've never been healthier, even with 2 autoimmune diseases! Grains are recent introductions to the human diet, as is dairy, and I don't think we're fully adapted to them. The same is true of plants in the nightshade family. A bit of ingenuity and cooking skills (and googling recipes... -
ARCHIVED Gluten Free Before Testing Is Complete
Nancym replied to ksgilley's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
*sigh* No, you shouldn't go gluten free before the testing is complete. I can't believe how stupid doctors are about this stuff. -
ARCHIVED Please Help :) Gluten/ocd
Nancym replied to newyorkdave's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
There is a pretty strong link between celiac disease, or gluten sensitivity, and all kinds of mental illnesses and brain illnesses. Unfortunately it doesn't always affect the intestines so it can't be detected by biopsy or typical blood tests. It isn't the sort of thing you're likely to find a doctor who is well educated on though, they're few and far between... -
ARCHIVED How Much Is Gluten-free?

I'm on a perma low carb diet. Basically if it is starchy or sugary I don't eat it. My health has never been better. I eat fruits, veggies, meat, fish, etc. No dairy, no grains. I make muffins from coconut flour and rice bran. I use splenda instead of sugar. Nuts and black olives make great snacks. I do have the ocassional splurge on something starchy...

MING! *pant* Lets not forget Alton Brown, he's such a studly, nerdy cooking guy! I'm telling you, men who cook and/or clean....they light this girl's fire.

ARCHIVED How Involved Do I Get With My Mother's Care?
Nancym replied to missy'smom's topic in Parents, Friends and Loved Ones of Celiacs
My parents were quite eager to have us kids make decisions for them and take over their finances and talk to doctors, etc. I pretty much got that chore. Talk to your Mom about it, if she's competent and willing it is easy. If she isn't willing... well then that's another story. If her doctor has dictated a gluten free diet for her, the NH needs to... -
ARCHIVED Food For Thought
Nancym replied to nama shivaya's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Look into taking vitamin D3 cholecaliferol, I believe they've found quite an astonishing link between MS and Vit. D in the blood. Most of us simply aren't getting enough! Good luck!
