This is what I used to frost my cookies this year: 1/2 cup butter or margerine at room temp. 1/2 cup shortening 4 cups 10x Sugar 1 tsp. vanilla enough milk (reg., rice, soy, whatever) Cream butter and shortening and vanilla. Beat in sugar. Add milk as needed. Delicious, easy and enough to frost 2 lg. batches of cookies.

  12. Renee--Unless I'm missing something, if your blood tests were positive that tells me right there that you should be off gluten. The biopsy being neg. can't rule out Celiac--especially with the pos. blood work. Did you tell the Dr. about the positive response to the gluten-free diet?   16. This morning I had Whole Foods gluten-free Bakeshop Cinnamon Raisin bread w/Smart Balance and orange juice.   20. If all your shouting about Celiac helped even one person--it was beyond worth it. I use any opportunity to get the word out and try to educate as many as I can in my own life. I figure if their eyes don't glaze over midway, I'm on to something. --Shout on!
  21. I know that feeling well--its hard sometimes to get to the culprit! I hope you continue to feel better. I find that after being glutened, it helps if I eat something (safe and familiar in a small amount!). I don't know why, but if my stomach is empty, it's worse.
  22. I would have to say that a lot of my issues are because of my late Dx. For example--there are things that have improved or gone away completely since going gluten-free. I can't remember where I got this blend recipe from--I have so many things jotted down--but I mix 6 cups of rice flour, 2 cups of potato starch and 1 cup of tapioca flour (I use Ener-g flours).
