  5. The only followup testing I'm aware of is repeating the antibody tests, looking for very low numbers. If they're not, then it's a sign that he's geting gluten from somewhere - be it malt in a breakfast cereal, oats in the candy bar, playdoh at school, wheat germ oil in a lotion, or wheat in a dog food or whatever. After that, I hope pushing on the doctors...
  6. Yep, it is not a problem. The proteins in the grains are metabolized by the digestive system and not directly 'stuck' into the proteins in the muscle of the animal.

  10. Dark chocolates are often dairy free (always check the label), and TerraCotta and TraderJoes both make milk chocolates with rice milk that are dairy and gluten free.

  21. do you rinse the rice and quinoa before cooking them? quinoa absolutely needs to be *well* rinsed, and the rice may have corn(?) used in the enrichment process. it could be that those grains are bothering you, but the fact that you can eat rice (in volume) in some forms but not others leads me to suspect that, in the case of rice, it's something else. ...
  22. tomato paste isn't "thickened" with something other than removal of water. you can make your own by simmering tomatoes for *a long time* - though doing that without scorching... that takes a delicate touch.
