  1. A year is right at the end of their cutoff - at the end of the range at which they say they can still detect antibodies. It may or may not show up given how long you've been gluten free. Just doing the gene test won't tell you if you have active celiac, but if you could develop it. But that knowledge, in combination with knowing whether or not the diet...
  2. This is a celiac urban legend. The gluten protein will not show up in the muscle tissue of the animal eating a gluten-containing food product. It gets metabolised first. If you are buying sliced deli veal or ground veal, that could be an issue, and would require discussion with the butcher. Again, not an issue with veal cuts, but any...
  3. I agree that you have no need to apologize. It was a natural progression, and if the post hadn't resonated with so many people (and hence, been needed), it wouldn't have grown as it did. And since we're pretty much all adults here, I don't think anyone intends a clique - not like high school. I've certainly never gotten that impression, anyway. But...
  4. What's interesting in all this is how insidious cliques can be. I have felt *slightly* left out of the board because I'm not a part of it. I'm not a part of most PMing things that go on, the friending thing that started when our board got upgraded, and lots of the other clique-y things. But that's because I don't participate in it myself. (Ok, it could...
  5. No, I feel like I'm surrounded by eight year olds - old enough to know better if they take the time to think, but still immature enough to have the really stupid fights and try to get out of doing anything themselves.
  6. The lactase enzyme itself has no offending protein in it, but the formulation of the pill, capsule, powder. liquid, or chewable that you choose could. It can vary from manufacturer to manufacturer, as well as by type. Always check the ingredients and/or call the company. (Can't really say a whole category of something is gluten free... Have to check each...
  7. There are two toothpastes I know of that contain gluten - Sensodyne and one other sensitive tooth toothpaste (not crest or colgate or tom's).
  8. Why does it cost more? Market economics. There is a smaller supply of specialty gluten free ingredients (so you don't get the benefit of discounts of volume), there is a small supply of manufacturers of gluten free products (so you don't get the benefit of competition in the market), and there is difficulty in distribution and advertising (further impeding...
  9. where I live and where I work (east side and Kent) are both sheets of ice. it's not the snow, it's the ice. even cables on the car don't always get traction on our inch thick sheet of ice outside our house. and the fact that - at least east side - is all hills. if it were flat, it wouldn't be as much of a problem, but when *everything* is a hill, and...
  10. Welcome back. I'm sorry that it came back Crohn's but glad you got an answer. And woot for culinary school! That's *so wonderful* you found someone to work with you!
  11. Things I'd think important for training workers at a restaurant on the issue of celiac: Item #1 - we're not making this up, we're not toying with you; this is very serious and no matter how trivial it seems to you, it is painfully important to us (literally so). Item #2 - pretend that anything with gluten is like raw chicken. if a piece of raw...
  12. Ugh! You made me picture finding a long lost, sealed, roll of toilet paper two years after it was bought, crawling with weavils. (Flour being allowed to have so many ppm of bug larvae, after all.) ICK ICK ICK!!
  13. From the Open Original Shared Link. (and then some additional modifications by me): (I know I left beans in... read past the first two dozen entries or so, and you'll be past the beans.) The formatting is: <usda database number> <item description> <weight in grams> <volume> <grams of fiber> Looks like dates, raspberries...
  14. If this was me, and I don't know that but can imagine that it is, I would like to address the point that some people - myself included - aren't great at extended undirected interaction with people we don't know (or even with people we know very well! ). There's no reason to assume that it's a sign of exclusion or cliques unless you assume that people operate...
  15. TTBOMK (to the best of my knowledge) (I think we actually need a new acronym, and I'm the last person in the world to think that the world needs a new acronym), the first two are totally safe. I don't know about the last two at all.
  16. While some chemicals can denature protein - and as a base like bleach can - glutens are tough beasts, chemically, so I don't know whether or not it works on the part we need it to or even if it's been tested. At the least, wiping out areas with damp cloths will help to physically remove gluten.
  17. yes, irritable in a very impatient way. like I'm impatient about more than just my bowel.
  18. Glutamine is one of the 20 amino acids - many of which are vital. They group together in long chains to form proteins - such as gliadin (one of the glutens), casein (dairy protein), albumin (egg protein), and so on. A particular portion of gliadin (and the similar barley, rye, and - to a lesser degree - oat) protein has a 33 amino acid long sequence that...
  19. The caseins in different animals milk are often different. Cow milk is primarily made up of one subtype of casein, which is found at much lower levels in sheep and goat (and buffalo) milk, so for those who are sensitive to only one type of casein, and have at least a small tolerance, moderate levels of milk from other animals may be just fine for them. ...
  20. Welcome to another transplant! I'm in the Seattle area myself, and don't know exactly what Vancouver has to offer, but I know that Portland is relatively close and has quite a lot of useful stuff.
  21. I would avoid it due to the grasses. In theory, at some point, the grasses mature enough such that all gluten protein in the grain are used up, and the blade can be harvested before going to seed such that no gluten in obtained, but that's a lot of theory for a factory application where grains grow at different rates and harvesting is less than perfect and...
  22. yep, it's fine. a good replacement for soy sauce.
  23. Part of the reason they suggest not taking them daily is because any substance you take like that can be psychologically addictive. I don't recall it having many other interactions, but you might want to check google just to be sure. Additionally, making a regular bedtime routine, if you don't already have one, may help as well.
  24. A little more oil may help, but I think the main problem is that you've eliminated most of the protein. Protein acts as a binding agent, and there just isn't much with all the substitutions. Adding the egg back will help, but I know that depends on how your son reacts to it. If you can use xantham or guar gum, that may help as well.
  25. I also thought you should make homemade chili. Do you know how long it takes? You can make it in 15 minutes. Really. There's lots of other things that you can make quickly as well. Being a full time worker is no excuse - I'm quite familiar with 40, 50, 60 hour weeks, and you still have to eat.
