  1. So far no other food issues so that helps. I don't bake, hubs does I don't know what he will do when he gets the urge to bake again. He will drop dead of a heart attack if he sees flour is $13 LOL. He is kind of a by the book baker so if it says 10 minutes, it's 10 minutes--except for the things he cooks most often--so we will see....
  2. I don't know if it's a "fact" or just seems to happen kind of thing but autoimmune disorders tend to come in 3's....

    I would say that if your symptoms are getting worse and not better after 2 weeks that something else might be going on. It could still be from gluten but I would call today and let your primary or GI know you are having all of these symptoms. It might be worth finding a GI that is a Celiac specialist as well.

  5. Cooking gluten-free is certainly all about learning to cook all over again. It's going to be a lot of trail and error I'm sure.
  6. I agree, eat gluten for now and get the blood work done as soon as possible. If you are in that much distress and it is NOT Celiac, I would want to investigate further what it might be! If your doctor won't order the tests, go to a private lab and have them done so you know one way or another.
  7. I guess if it were me and I was not having any symptoms, I would want the endoscope for a baseline just in case there are problems down the road. They put you under light sedation and it's a fairly quick procedure. Other than fasting, you do not have to do any prep work for the procedure like you would for a endoscopy. I'm curious what prompted the testing...
  8. I had to fast for my bloodwork, not just for the Celiac testing, but for other tests they were doing. If they are checking cholesterol, you need to fast for that, and if they check glucose levels, you need to fast for that. Fasting allows them to run more tests at one time so I would too.

  11. Ronzoni brand. The box said 7-9 minutes and I cooked it for 8. I generally cooked my gluten stuff for the middle time like that and it was fine .
  12. Ok, the gluten-free spaghetti was edible. It's a little sticky but tasted ok. The Schar baguettes were ok, not wow but I'd eat it again. Way better than their sandwich bread!
  13. I have hypothyroid but it's not Hashi's. A TSH of 4.65 really isn't that high, sorry to disagree with Gemini . In many labs, that is still in the normal range, which could be .5-5, but more endocrinologists use the the .3-3 scale. When my TSH was first tested 19 years ago, it was at 95 (yes, ninety-five). Everyone has a sweetspot for their TSH. Mine...
  14. I was hoping to find some bread. They did have some "scotcharoos" which I call Special K bars, but they were made with rice chex . That was the only gluten-free item they had left today.
  15. Does he have the capability to do an endoscope in his office? If so, might not hurt to fast just in case?
  16. I stopped at our local bakery today, kept my hands in my pockets just in case , and the owner told me about a local resource for gluten-free mixes for breads, cakes, and such.   18. Stopped by our Bakery and asked how a bakery does gluten-free. They have a separate kitchen that they make their gluten-free stuff in. She said they do that at the end of the day, after their main kitchen has been cleaned. She said they don't "certify" the gluten-free and if you are allergic or super sensitive, it might not work but she said they haven...
  19. I'll keep an eye out for those brands. So far I've only seen the Schar and Udi's here. There is a bakery in town that advertises "gluten friendly" so I will have to stop by and see what they have. I also saw a Facebook post for a woman that sells gluten-free baked goods at our little farmer's market in town so I'm going to stop by on Saturday for those...
  20. Neither test is a conclusive positive though so I don't know that the "negative" test is incorrect really.
  21. That is a long time to have to wait to get into a dr!!! Will they be able to do the scope right away? I would call and find out what the procedure is for that. If they can get you in that same day or the next day or if you are going to have to go back later. Maybe they will put you on the schedule for that same day and just cancel if they don't think...

  23. What do you normally make for meals now. Maybe post a few of those and people can give you suggestions on how to adapt meals. Last night I made BLT's and corn on the cob. The only adjustment I had to make was to use gluten-free bread. Our house is now gluten-free so I don't have to worry about cross contamination but if it was not, I would have had to...
  24. There are 300 symptoms associated with Celiac, if you have all 300 of them, I would be suspect. The problem is, there are other conditions that can cause the major symptoms as well, thus the testing.
  25. I was told no oats for a year. I'm going to miss my oatmeal in the mornings when winter comes!! I'm not sure if millet is close enough to oats/wheat that I should avoid that as well.
