  1. Hmmm, I'm sure this is a typo. How much flour? Is it supposed to be 1-1/2 cups?
  2. I guess this makes me frustrated. (Your friends, not your opinion.) I am gluten intolerant, never officially diagnosed, but went off wheat/gluten because I was told I was "allergic" to it over 10 years ago. When I stumbled across information about Celiac, I hadn't eaten gluten for so long that there was no way I could get a diagnosis. And doing a "challenge...
  3. Welcome to the forum! Yes, you could have Celiac Disease even if the tests come out negative. There is a significant rate of false negatives. You could also have non-Celiac gluten sensitivity, which won't show up on mainstream Celiac tests, but can be just as bad. You don't have to be on gluten for a colonoscopy and I'm sorry I don't know what an EGD...
  4. YES! Absolutely. It's genetic, so it's very reasonable to ask to be tested - even if you weren't having any symptoms. Welcome to the forum!
  5. I think it's good too! I never liked white bread, but I will eat this. It's extra yummy spread with garlic butter and romano cheese and fried on the pancake griddle. I even served it to my teenaged niece last weekend and she thought it was french bread.
  6. I think it's great that there is all this awareness of Celiac Disease all of the sudden. I'm hoping that many of the 97% undiagnosed Celiacs get diagnosed because of all the exposure. But, silly as it sounds, I feel a bit left out. I've never been diagnosed. I found out I don't have the genes for Celiac, so I can't technically have it. So I guess I ...
  7. Any way to uninstall IE7? We installed it and I don't like it. I finally was able to listen to it and see the little 1" x 2" box.
  8. Oh, I l ove the snow! Western Washington doesn't get much. We're expecting a wind and rain storm tomorrow. Maybe the power will go out and we'll have a day off school too.
  9. Yay! How nice of them to be so thoughtful! Happy Birthday!!!
  10. I'm sorry you're having a frustrating time. It can be hard at holidays, especially when you expect family to be supportive. It doesn't seem like it would be hard to be accomodating, but then I'm seeing it from "our" side. If it were me (and believe me, I've been there before) I would go ahead and make the small turkey with delicious stuffing for your...
  11. I make homemade noodles fairly often. We make this dough into Pelmini (just like Pierogi). It's really easy and rolls out just like "regular" dough. For a large batch: 1-1/4 C Brown Rice Flour 1/2 C Potato Starch 1/4 C Tapioca Flour generous 2-1/2 tsp Xanthan Gum 1 Tbs. oil 1/2 tsp. salt 1/2+ C Water Sift dry ingredients 3 times. Add oil...
  12. I cut up gluten-free bread (usually use Ener-G Brown Rice Loaf) and dry it in the oven. For croutons I butter the bread with garlic butter first. I'm sure you could butter the bread and sprinkle on poultry seasoning, then cut it up and dry it out. I make gluten-free stuffing every year and it works well.
  13. I use Spectrum sometimes too. Make sure you add salt to the recipe though or it will taste funny. I always leave the salt out when I'm baking with butter, since it's already salty, and the first cookies I made with Spectrum had a funny taste because I didn't think of it.
  14. Why don't you just try going gluten-free for a while and see if you feel better? My kids all tested negative, but two of them are gluten intolerant and have had great results by going gluten-free. I am also undiagnosed, but fanatically gluten-free. It's okay to take your health care into your own hands for something like this. If you don't get better...
  15. Here's a link to one of the Thanksgiving threads with my no-bake pumpkin pie recipe. I am also dairy free, so you could just use regular milk. Open Original Shared Link
  16. The flour mix makes about 4-1/2 C. Yes, I use it as is in "regular" recipes. The first recipe that gluten-free Betsy gave you is the basically same one, just double and without xanthan gum. I like to mix the xanthan gum in when I mix up the flour so I don't have to think about it when I'm baking. Some things (like pasta) require a bit more xanthan gum...
  17. I'm not officially diagnosed with Celiac, but I am totally gluten intolerant and have had a large number of Celiac symptoms for most of my adult life and even in childhood. I don't have either of the main Celiac genes, something that really surprised me. I think that one of the problems with current Celiac testing, even gene testing, is that people are...
  18. It can be tricky at first, but you'll get the hang of it. I like to make up my own flour mix and use it in "regular" recipes. I mix up 3 C of Brown Rice Flour, 1 C Potato Starch, 1/2 C Tapioca Starch and 2-1/2 tsp. Xanthan Gum. Sift 3 times and store in the refrigerator. This is much cheaper than the pre-packaged mixes. I bake for 4 kids and can't...
  19. I've made the Gluten Free Pantry French Bread several times. It's turned out great every time and my whole family loves it. I made it last year for Thanksgiving and Easter and put it in muffin tins for rolls. I made sure to time it so they came out of the oven just as we were sitting down. Even my gluten-loving guests enjoyed them. They aren't quite...
  20. My kids are a little older, but we still need to pack gluten-free lunches. Some of their favorites include: Deli turkey on rice tortillas or wrapped in lettuce leaves; peanut butter and jelly on gluten-free bread or rice tortillas; leftovers in a thermos bottle; chips and bean dip; chicken caesar salad; carrot sticks, nuts, turkey pepperoni sticks, applesauce...
  21. mflanders- Your son sounds exactly like my son. I thought for sure that he'd test positive and was completely shocked when all his tests were negative. The pediatrician told us to try out the gluten-free diet anyway and we've seen good results. But he wasn't cooperative at first. He kept saying, "But the tests were negative - I'm fine!" And then he'd...
  22. I've never been there, but they have a website. See if this works: Open Original Shared Link
  23. Nini - I'm not trying to start an argument, but in my state (WA) naturopaths have earned the right to be called doctors. My doctor is called an "ND" (Naturopathic Doctor) and graduated from the University of Washington pre-med program, went to a naturopathic college for 4 years (Bastyr), did a residency and then went into private practice. I think there...
  24. Try this link: https://www.celiac.com/st_prod.html?p_prodi...-35106375411.ee You can get a lot of other good information by going to the Site Index (on the menu on the left side) and looking at all the topics covered.
  25. My naturopath (WA state) can prescribe thyroid meds. She can prescrible lots of things - but not narcotics. I think it depends on the licensing for your own state.
