People should take that into consideration when consuming processed foods. But seriously, how many times in a row does this same conversation about...
  5. If you stick to a gluten-free diet you should greatly lessen your risk of facing those complications. It sounds like you're well on your way to becoming 100% better...just give it a little more time. It takes some people several months. Don't worry about every accidental glutening setting you back. Just do the best you can to avoid getting contaminated...

  7. Thanks for the info. I think it's gets pretty "goopy" and gross when mixed with any type of liquid. Thats all I meant. I guess I'll risk it and use this really old bag of xanthan gum, instead of buying a new batch

  10. In all fairness, I don't think it's possible for a non-celiac to truly understand the importance of a cake in this type of situation. Most gluten-eating people would assume that everyone would get over something like this soon enough. It's unfortunate that happened though. I like paperdoll's idea. Maybe you can bake yourself a really awesome gluten...
  11. I think it makes really tasty muffins, but I also really really really love the pancakes it makes. If you make muffins with it and add in some extra ingredients (carrots, apples, chocolate chips...whatever) you could probably find a way to make it good.

  13. I've had a bag of it in the pantry for...I don't even know months...maybe years? Is it supposed to be kept in the fridge? Should I toss it and buy a new bag...or is its shelf life pretty indefinite? A quick google search provided no answers . Thanks.
  14. You could always contact the caterer to see if anything they're serving might happen to be safe. Sometimes it's just not hard for them to prepare your chicken without sauce at the last minute (for example). Bring your own food too (just small things) and eat before you go.   16. Yeah, I like hemp milk, but it probably woudn't be as good to someone who can have dairy. It's a good alternative to milk...it's much creamier and a bit more nutritious than rice milk.   18. It seems like a lot of people on this board believe that all forms of gluten intolerance will eventually result in villi damage. I'm curious about why people think that. I always thought there were many forms of gluten intolerance and some gluten intolerant people won't ever have villi damage, even if gluten severely damages the body in other ways. ...
  19. Thanks for sharing your story. I wonder if your son had an entirely different condition as a baby and the symptoms of that condition were exacerbated by gluten? I think many conditions besides celiac disease can cause a person to react negatively to gluten. Just speculating... I guess reitroducing oats would give you somewhat of an answer though....
  20. Raw vegan food is pretty much always gluten-free. I guess it's good to double check when you're there, but I've been to raw vegan restaurants that had 100% gluten-free menus.
  21. Cool, I'll try that one. The other day I made fudge with 1/2 cup almond butter, 1/2 cup cocoa powder 1/2 cup agave and 1/2 cup coconut butter. (Then I mixed it all together on the stove and added more of each ingredient until I liked the way it tasted ) I'll have to try it with peanut butter and honey next time. Yum.
